good morning, Gorgeous! packed with whole grains & fiber, this yummy baked oatmeal is the perfect start to your day.

Ingredients

  • 2 cups old fashioned oats
  • 2 cups unsweetened vanilla cashew or almond milk
  • 1.5 tsp cinnamon
  • 1 tbsp ground flaxseed or chia seeds
  • 1 tsp vanilla extract
  • 1 tsp baking power
  • 1/2 tsp salt
  • 1/4 cup maple syrup
  • 1/2 cup unsweetened applesauce or mashed banana
  • 2 tbsp coconut oil
  • 1 whole egg
  • 1/2 cup chopped pecans

Instructions

  1. preheat oven to 375°
  2. combine dry ingredients in a large mixing bowl (oats, cinnamon, flaxseed or chia seeds, baking powder, salt)
  3. beat egg in a separate small bowl; add banana and mash together
  4. add wet ingredients into dry (milk, egg/banana mixture, maple syrup, vanilla extract, coconut oil) and mix until just combined
  5. coat 8 x 8 baking dish with non-stick cooking spray; carefully pour the oatmeal mixture in evenly
  6. sprinkle pecans on top and bake for 35-40 minutes
  7. let cool, cut into portions, and serve!
