good morning, Gorgeous! packed with whole grains & fiber, this yummy baked oatmeal is the perfect start to your day.
Ingredients
- 2 cups old fashioned oats
- 2 cups unsweetened vanilla cashew or almond milk
- 1.5 tsp cinnamon
- 1 tbsp ground flaxseed or chia seeds
- 1 tsp vanilla extract
- 1 tsp baking power
- 1/2 tsp salt
- 1/4 cup maple syrup
- 1/2 cup unsweetened applesauce or mashed banana
- 2 tbsp coconut oil
- 1 whole egg
- 1/2 cup chopped pecans
Instructions
- preheat oven to 375°
- combine dry ingredients in a large mixing bowl (oats, cinnamon, flaxseed or chia seeds, baking powder, salt)
- beat egg in a separate small bowl; add banana and mash together
- add wet ingredients into dry (milk, egg/banana mixture, maple syrup, vanilla extract, coconut oil) and mix until just combined
- coat 8 x 8 baking dish with non-stick cooking spray; carefully pour the oatmeal mixture in evenly
- sprinkle pecans on top and bake for 35-40 minutes
- let cool, cut into portions, and serve!
