Maple Bacon Butternut Squash

sweet, salty, low carb, butternut squash goodness.
ingredients:
- 4 strips cooked maple bacon, crumbled
- 1 - 3 lb butternut squash
- 2 tbsp olive oilor avocado oil
- 2 tbsp honey or maple syrup
- 1 sprig fresh thyme
- sea salt & cracked black pepper to taste
instructions:
How to cook Maple Bacon Butternut Squash
- preheat oven to 400 degrees and foil a 9 x 13 baking pan and coat it with no stick cooking spray
- poke holes all around butternut squash with a fork
- microwave butternut squash for 3-5 minutes (will be hot to handle!)
- peel and cube the butternut squash (see this video!)
- to a large mixing bowl, add cubed butternut squash oil, honey/maple syrup, half of the fresh thyme, and a nice helping of sea salt and cracked black pepper
- bake for 22-25 minutes!
- add cubes back the mixing bowl along with crumbled bacon and the remaining fresh thyme
- serve and enjoy!
