Lentil & Bacon Soup

Ingredients

  • 2 tsp olive oil
  • 4 slices bacon, finely chopped
  • 1/2 cup chopped scallions
  • 1 roma tomato, chopped
  • 2 garlic cloves, minced
  • 1 medium onion, chopped finely
  • 1/4 cup cilantro, chopped
  • 1/2 tsp cumin powder
  • 1/2 tsp smoked paprika
  • 1 cup dried lentils
  • 4 cups reduced sodium chicken or vegetable broth
  • 1 can light coconut milk (or full fat)
  • 3 sprigs fresh thyme
  • kosher salt to taste
  • salt & black pepper to taste

Instructions

  1. heat large dutch oven over medium heat.
  2. add the oil and once hot, add bacon and cook until the fat is rendered and the bacon is crisp (about 5 minutes)
  3. add garlic and onion to the pot and cook until soft and translucent, about 5-6 minutes.
  4. and tomato to the pot, season with salt, pepper, and cumin, smoked paprika and cook 1 minute more.
  5. add the lentils, broth, coconut milk, and thyme sprigs.
  6. bring to a boil then reduce the heat to medium low, cover and cook until the lentils become tender, about 30 minutes. you can also use your pressure cooker and cook for
  7. adjust soup with salt and pepper to taste.
  8. top with scallions and cilantro, if desired and enjoy!
