Ingredients
- 2 tsp olive oil
- 4 slices bacon, finely chopped
- 1/2 cup chopped scallions
- 1 roma tomato, chopped
- 2 garlic cloves, minced
- 1 medium onion, chopped finely
- 1/4 cup cilantro, chopped
- 1/2 tsp cumin powder
- 1/2 tsp smoked paprika
- 1 cup dried lentils
- 4 cups reduced sodium chicken or vegetable broth
- 1 can light coconut milk (or full fat)
- 3 sprigs fresh thyme
- kosher salt to taste
- salt & black pepper to taste
Instructions
- heat large dutch oven over medium heat.
- add the oil and once hot, add bacon and cook until the fat is rendered and the bacon is crisp (about 5 minutes)
- add garlic and onion to the pot and cook until soft and translucent, about 5-6 minutes.
- and tomato to the pot, season with salt, pepper, and cumin, smoked paprika and cook 1 minute more.
- add the lentils, broth, coconut milk, and thyme sprigs.
- bring to a boil then reduce the heat to medium low, cover and cook until the lentils become tender, about 30 minutes. you can also use your pressure cooker and cook for

- top with scallions and cilantro, if desired and enjoy!
