Strawberry Pistachio Avocado Chicken Salad
  • 4 cups fresh kale, sautéed*
  • 2 rotisserie chicken breasts, chopped
  • 1/3 cup roasted, unshelled pistachios
  • 1 cup sliced strawberries
  • 1 whole avocado, sliced

instructions:

  1. add coconut cream, olive oil, truvia nectar, white wine vinegar, lemon juice, dijon mustard, and salt to your high powered blender; blend for 30-60 seconds
  2. add poppy seeds and stir by hand to combine
  3. pour over salad and enjoy!

NOTES:

this dressing thickens slightly as it chills.

*for the salad: sautè kale for 2-3 minutes in coconut aminos + sea salt + cracked black pepper to taste.
