Lemon Poppy Seed Dressing
- 1/4 cup coconut cream
- 1/4 cup extra virgin olive oil
- 1 tbsp dijon mustard
- 3 tbsp truvia nectar
- 3 tbsp white wine vinegar
- 3 tbsp lemon juice
- 1/2 tbsp poppyseeds
- 1/4 tsp pink Himalayan sea salt + to taste
Strawberry Pistachio Avocado Chicken Salad
- 4 cups fresh kale, sautéed*
- 2 rotisserie chicken breasts, chopped
- 1/3 cup roasted, unshelled pistachios
- 1 cup sliced strawberries
- 1 whole avocado, sliced
instructions:
- add coconut cream, olive oil, truvia nectar, white wine vinegar, lemon juice, dijon mustard, and salt to your high powered blender; blend for 30-60 seconds
- add poppy seeds and stir by hand to combine
- pour over salad and enjoy!
NOTES:
this dressing thickens slightly as it chills. nutritional stats below for dressing only. *for the salad: sautè kale for 2-3 minutes in coconut aminos + sea salt + cracked black pepper to taste. top greens with add-ins (chicken, nuts, avocado, vegetables, etc) and top with dressing!
