Lean Beef Stew

Lean Beef Stew

a comforting, hearty yet healthy bowl of lean beef, creamy potatoes, carrots and mushrooms in a savory broth!

Ingredients

stew
  • 2 lbs extra lean beef
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 4 celery stalks, chopped
  • 1 cup carrots, chopped
  • 2 cups mushrooms, sliced
  • 1 small yellow onion, diced
  • 1 tsp garlic salt
  • 1 tsp garlic powder
  • cracked black pepper
  • 1 tsp dried thyme or 1 sprig thyme leaves
  • 2 tbsp tomato paste
  • 1 tbsp coconut aminos
  • 2 bay leaves
  • 6 cupsbeef broth
  • 5 medium red potatoes, chopped
  • 3/4 cup frozen peas
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • 2 tbsp fresh minced parsley for garnish

Instructions

  1. in a large dutch oven over medium-high heat, add olive oil
  2. once hot, add lean beef in an even layer and sear for 4 minutes, flip, and sear for another 4 minutes
  3. season with 1/2 tsp garlic salt & black pepper
  4. remove beef from pan
  5. add onion, celery, carrots, and mushrooms to the pan drippings and let sauté for 2-3 minutes.
  6. add garlic and saute for 1-2 minutes.
  7. season vegetables with remaining garlic salt, garlic powder, thyme, cracked black pepper, tomato paste, liquid aminos and stir until combined
  8. add bay leaves, potatoes, broth, and lean beef into the pot
  9. turn heat to high and bring pot to a full boil; reduce heat and let simmer for 40 minutes, covered
  10. combine cornstarch and cold water and mix until combined
  11. add to pot along with frozen peas and let cook/simmer for 5 more minutes, covered
  12. sprinkle with fresh parsley and enjoy!

Notes:

if you aren't using low sodium broth, be mindful of this when seasoning meat and veggies with garlic salt. once the flavors marry in the fridge overnight, this stew will be even more flavorful the next day.
