Herbed Chicken & Dumplings
a dairy-free, savoy, comforting hug in a bowl 🍲
Ingredients:
chicken
- 1 tbsp olive oil
- 1 tbsp vegan or dairy-free butter
- 1.5 lb boneless, skinless chicken breast chunks
- 1 tbsp coconut aminos
- 2 garlic cloves, minced
- 1/2 cup carrots, diced
- 1/2 cup frozen peas, thawed
- 1 cup mushrooms, sliced
- 4 celery stalks, diced
- 2 stalks green onion, chopped (separate green from white)
- 1 medium yellow onion, diced
- 1 cup full fat coconut milk
- 2 cups chicken broth
- 1.5 cups filtered water
- cajun seasoning to taste
- sea salt to taste
- cracked black pepper to taste
- 2 tbsp fresh dill, minced
- 1 tsp ground thyme
dumplings
- 1/2 cup all purpose flour
- 2 tbsp vegan butter, cold and diced into small cubes
- 1/4 cup coconut milk
- cracked black pepper to taste
- dash cajun seasoning
Instructions:
- add chicken breast chunks to a plastic baggy along with 1 tbsp coconut aminos and 2 minced garlic cloves; let marinate overnight or for at least 30 min.
- in a large sauce pan, add olive oil over medium high heat
- add marinated chicken breast chunks and cook until there is no more pink (about 5 -7 minutes)
- remove chicken chunks from your pan; cover and set them aside
- reduce your heat to medium low and add butter
- once melted, add white parts of the green onion and the yellow onion and saute for 2 minutes. add carrots & celery and saute until softened, about 3-5 minutes. turn your heat up a little if need be but just don't burn the veggies!
- add coconut milk, broth, water, mushrooms, dill, thyme, sea salt, cracked black pepper and set heat to high; stir well
- once boiling, reduce heat to medium low again to a simmer and add chicken breast chunks in. let simmer for 10-12 minutes, covered.
- add peas.
- dumpling time! in a small mixing bowl, add flour and baking soda and combine well.
- add cold butter cubes, and 'cut' the butter into the flour by using your fingers and pressing both ingredients together to form clumps.
- sprinkle in cajun seasoning, pepper, and pour in coconut milk. mix together to form one big ball of dough.
- go over to your pot and "drop" spoonfuls of dough onto the top of the simmering mixture (about 2 tsp worth; I made about 12 dumplings)
- cover your pot and let the simmer continue for about 5 more minutes as the dumplings cook all the way through.
- taste! seasoning with more S & P if needed and enjoy.
