How to cook Savory Lentil Bolognese

  1. add oil to a large skillet over medium heat. once hot, add garlic, shallot, & onion to the pan. sauté for 2-3 minutes until fragrant and translucent
  2. add carrots, celery,  a little salt & pepper, and continue to sauté for 3-4 more minutes. add marinara and stir to coat veggies
  3. add basil, oregano,  red pepper flakes, sugar, broth, and lentils.  taste and add more salt and pepper if needed
  4. turn up the heat and bring mixture to a boil; immediately reduce to low and let mixture simmer for about 20 minutes or so until lentils are tender. taste again and add more seasonings at this point if needed!
  5. serve over zoodles (zucchini noodles), baked potatoes, whole wheat pasta,  or all by itself sprinkled with dairy-free cheese! enjoy :)
