this MEATY meat-less dish is so satisfying yet doesn't weigh you down! full of fiber and flavor.
ingredients:
- 1 tbsp extra virgin olive oil
- 1 medium shallot
- 3 large cloves garlic, minced
- 2 large carrots, shredded
- 2 celery stalks, minced
- 1 medium onion, minced
- 24 oz jarred marinara
- 1 cup green lentils (rinsed)
- 1 tbsp coconut sugar or brown sugar
- 1 tsp dried basil
- 1 tsp oregano
- 1 tsp red pepper flakes
- 2 bay leaves
- 1/2 cuplow sodium vegetable broth
- sea salt to taste
- cracked black pepper to taste
- fresh parsley for garnish
instructions:
How to cook Savory Lentil Bolognese
- add oil to a large skillet over medium heat. once hot, add garlic, shallot, & onion to the pan. sauté for 2-3 minutes until fragrant and translucent
- add carrots, celery, a little salt & pepper, and continue to sauté for 3-4 more minutes. add marinara and stir to coat veggies
- add basil, oregano, red pepper flakes, sugar, broth, and lentils. taste and add more salt and pepper if needed
- turn up the heat and bring mixture to a boil; immediately reduce to low and let mixture simmer for about 20 minutes or so until lentils are tender. taste again and add more seasonings at this point if needed!
- serve over zoodles (zucchini noodles), baked potatoes, whole wheat pasta, or all by itself sprinkled with dairy-free cheese! enjoy :)
