Healthy Oatmeal Chocolate Chip Blender Muffins

gluten-free, dairy-free! great for nursing moms, healthy, sweet snack for the kids, or a quick grab & go breakfast option!
ingredients:
- 3 cups gluten-free oats
- 2 large bananas (about 1 cup mashed banana)
- 1/4 cup organic cane sugar
- 1/4 cup truvia nectar
- 2 tbsp coconut oil
- 1 heaping tbsp unsweetened applesauce
- 1 tsp vanilla
- 1 cup unsweetened vanilla cashew milk
- 2 whole eggs
- 1 tbsp organic cinnamon
- 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 3/4 tsp salt
instructions:
- preheat oven to 375 and coat your mini muffin pan with no-stick cooking spray or paper/silicone liners
- add all ingredients except for chocolate chips to your blender and blend until smooth (about 30 seconds)
- scrape down the side of the blender and blend once more
- dump batter into a large mixing bowl (or just remove your blender blade) and fold in chocolate chips (or any other fun add-ins you'd like pecans, walnuts, etc.)
- bake 17-18 minutes and let cool
