Super Nutty Granola

hearty, nutty, crunchy, and naturally sweetened. great for parfaits, an ice cream topping, or all by itself!
Ingredients:
- 2 cups old fashioned oats
- 2 heaping tbsp melted coconut oil
- 1/3 cup agave nectar
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 1 tsp vanilla extract
- 1/4 cup pistachios
- 1/4 cup walnuts
- 1/4 cup goji berries
- 1/4 cup unsalted pepitas (pumpkin seeds)
Instructions:
- preheat oven to 350 degrees
- coat a large baking pan with no stick cooking spray or parchment paper
- combine all ingredients into a large mixing bowl well
- spread unbaked granola all across your pan evenly
- bake for 10 min and stir around with a spoon
- bake for 10 more min and stir around with a spoon again
- bake for 5 more minutes and remove pan from the oven.
- it will crisp up nicely as it cools!
Notes:
add any type of nuts or dried fruit that you like; I would add the dried fruit at the halfway mark as it tends to get super chewy when heated for too long.
