Green Bean Almondine

Ingredients:
- 1 lb French green beans
- 2 tbsp vegan butter
- 1/3 cup sliced almonds
- 1/4 cup shallots, minced
- 1 tsp lemon zest
- 2 tsp lemon juice
- sea salt pepper
- cracked black pepper
Instructions:
- bring a large pot of salted water to boil over high heat.
- blanch the green beans (boil them for 4-5 minutes and with some crunch to them; we are going to cook them again and want them to still have crispiness and bite)
- drain the green beans well and immediately add them to a large bowl of ice water to stop the cooking process
- dry the green beans well with paper towels or a cup towel
- in a large skillet over medium high heat, add butter
- once melted, add almond and toast them for about 3 minutes or until the almonds are lightly toasted (watch to make sure they don't burn!)
- add shallots and stir them around with the almonds until fragrant and translucent, about 2-3 more minutes
- reduce heat to low and add green beans along with lemon zest and juice; toss well and serve immediately.
