Green Bean Almondine

Ingredients:

  • 1 lb French green beans
  • 2 tbsp vegan butter
  • 1/3 cup sliced almonds
  • 1/4 cup shallots, minced
  • 1 tsp lemon zest
  • 2 tsp lemon juice
  • sea salt pepper
  • cracked black pepper

Instructions:

  1. bring a large pot of salted water to boil over high heat.
  2. blanch the green beans (boil them for 4-5 minutes and with some crunch to them; we are going to cook them again and want them to still have crispiness and bite)
  3. drain the green beans well and immediately add them to a large bowl of ice water to stop the cooking process
  4. dry the green beans well with paper towels or a cup towel
  5. in a large skillet over medium high heat, add butter
  6. once melted, add almond and toast them for about 3 minutes or until the almonds are lightly toasted (watch to make sure they don't burn!)
  7. add shallots and stir them around with the almonds until fragrant and translucent, about 2-3 more minutes 
  8. reduce heat to low and add green beans along with lemon zest and juice; toss well and serve immediately.
