Greek Yogurt Pancakes

Ingredients
Batter
- 1 cup gluten-free flour (see notes)
- 1 cup lactose-free greek yogurt (see notes)
- 2 tsp baking powder
- 1 tsp vanilla
- 3 tsp monk fruit sweetener
- 1/2 cup non-dairy milk
- 2 eggs
- 1/4 tsp salt
Instructions
- in a large mixing bowl, combine flour, salt, and baking powder; mix well
- beat eggs, vanilla, milk, monk fruit sweetener together in a separate bowl
- combine wet mixture with dry mixture until just combined; add greek yogurt and mix once more
- heat a large skillet to medium high heat and add 1 tbsp of oil of choice (or use no-stick cooking spray)
- cook cakes approx. 2 minutes on one side (peek and check for doneness first as not all pans are created equally) and flip. cook for an additional minute or until cooked through
- serve with your favorite pancake toppings!
Notes
I recommend using Bob's Red Mill Gluten-Free Flour for these pancakes.
I also love Fage Lactose-Free Greek yogurt and recommend it for these pancakes.
