Garlic Shrimp & Bacon Scampi

ingredients:
- 1.25 lbs shrimp
- 2-3 strips cooked bacon, crumbled
- 3 large garlic cloves, minced
- 2 stalks green onion, chopped
- 1.5 tbspalgae oil
- 4 tbsplight dairy-free butter
- 1 cup chopped fresh baby spinach
- 1/4 cup chicken or veggie broth
- 1/4 tsp crushed red pepper
- juice of half a lemon
- 1/4 cup cilantro or parsley, chopped
- sea salt & cracked black pepper to taste
- 2 cups cooked pasta
instructions:
How to cook Garlic Shrimp & Bacon Scampi
- set your pan to medium heat and add olive oil, 2 tbsp butter, minced garlic, and the white parts of the green onion
- stir mixture around for 1 - 2 minutes until fragrant
- add shrimp and season with salt & pepper; cooking for 2-3 minutes. throw in chopped fresh spinach and stir around until wilted
- pour in chicken broth, red pepper flakes, cooked noodles of choice ( or raw zoodles) and mix well
- add remaining 2 tbsp butter & crumbled bacon
- once melted, drizzle with lemon juice and sprinkle with salt and pepper once more
- top with fresh minced cilantro or parsley & green parts of the remaining green onion
