ingredients:

  • 1.25 lbs shrimp
  • 2-3 strips cooked bacon, crumbled
  • 3 large garlic cloves, minced
  • 2 stalks green onion, chopped 
  • 1.5 tbspalgae oil
  • 4 tbsplight dairy-free butter
  • 1 cup chopped fresh baby spinach
  • 1/4 cup chicken or veggie broth
  • 1/4 tsp crushed red pepper
  • juice of half a lemon
  • 1/4 cup cilantro or parsley, chopped
  • sea salt & cracked black pepper to taste 
  • 2 cups cooked pasta

instructions:

How to cook Garlic Shrimp & Bacon Scampi

  1. set your pan to medium heat and add olive oil, 2 tbsp butter, minced garlic, and the white parts of the green onion
  2. stir mixture around for 1 - 2 minutes until fragrant
  3. add shrimp and season with salt & pepper; cooking for 2-3 minutes. throw in chopped  fresh spinach and stir around until wilted
  4. pour in chicken broth, red pepper flakes, cooked noodles of choice ( or raw zoodles) and mix well
  5. add remaining 2 tbsp butter & crumbled bacon
  6.  once melted, drizzle with lemon juice and sprinkle with salt and pepper once more
  7. top with fresh minced cilantro or parsley & green parts of the remaining green onion
