Fluffy Quinoa Chocolate Chip Pancakes

ingredients:
- 1 cup namaste quinoa flour
- 1/2 cup coconut milk (just the solids*)
- 1 tsp vanilla extract
- 1 tbsp honey roasted peanut butter
- 1 tsp baking powder
- 1/4 tsp baking soda
- pinch Himalayan sea salt
- 1/3 - 1/2 cup unsweetened vanilla cashew milk
- 1 large banana
- 1 packet Stevia
- 1/4 cup dairy-free chocolate chips
instructions:
- heat your griddle or skillet to med-high heat
- dump everything except the chocolate chips into your blender and blend until super smooth
- pour about 2 tbsp of batter onto the griddle and sprinkle with a few chocolate chips.
- once bubbles begin to appear, flip your pancake and cook the other side for 1-2 minutes
- top with maple syrup, truvia nectar, fresh sliced bananas and more chocolate chips!
NOTES:
pop your can of coconut milk in the fridge as soon as you get it home and chill it for 24 hours. once opened, only scoop the solids from the can for this recipe, not the cloudy liquid at the bottom of the can.
