Creamy Fire Roasted Tomato Bisque

  1. set a large dutch oven to medium heat and add olive oil. once hot, add yellow onion and sauté until translucent and fragrant, about 2 minutes. add garlic and continue to sauté for about another minute.
  2. whisk in tomato paste, can of tomatoes, broth, basil, brown sugar, and red pepper flakes.
  3. bring to a boil; reduce heat, cover, and let simmer for 25 - 30 min. 
  4. shut off the heat and once cool enough to handle, transfer bisque to your high powered blender.  blend until super creamy and let it run for at least 2 minutes.
  5. once smooth, add bisque back your dutch oven and whisk in the cream and vegan butter.  give it a taste! season with salt & cracked black pepper if needed. 
  6. dunk your grilled cheese sandwich in this creamy goodness before you take a bite!
