Creamy Fire Roasted Tomato Bisque

Ingredients
- 28oz can fire roasted tomatoes
- 1 large yellow onion
- 3 cloves garlic
- 2 tbsp tomato paste
- 1 tbsp olive oil
- 1 cups chicken or vegetable broth
- 1 tbsp brown sugar
- cracked black pepper
- 1/2 cup dairy-free heavy cream ( i love Silk! )
- 1 tbsp vegan butter
Instructions
- set a large dutch oven to medium heat and add olive oil. once hot, add yellow onion and sauté until translucent and fragrant, about 2 minutes. add garlic and continue to sauté for about another minute.
- whisk in tomato paste, can of tomatoes, broth, basil, brown sugar, and red pepper flakes.
- bring to a boil; reduce heat, cover, and let simmer for 25 - 30 min.
- shut off the heat and once cool enough to handle, transfer bisque to your high powered blender. blend until super creamy and let it run for at least 2 minutes.
- once smooth, add bisque back your dutch oven and whisk in the cream and vegan butter. give it a taste! season with salt & cracked black pepper if needed.
- dunk your grilled cheese sandwich in this creamy goodness before you take a bite!
