Expanding Oats

twice as big as a normal serving of oats for the same amount of calories!
Ingredients
- 1/2 cup rolled oats
- 1 cup unsweetened vanilla almond milk
- 1 cup water
- dash salt
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
Instructions
- combine 1/2 cup old-fashioned oats and a dash of salt in a nonstick pot
- add 1 cup non-dairy milk + 1 cup of water + vanilla
- bring to a boil then reduce to a simmer
- cook and stir until thick and creamy, about 12-15 minutes
- add cinnamon and stir
- top with fresh berries, nuts, and/or monk fruit sweetener or stevia
Notes:
it might seem like too much liquid at first, but it will cook down, don't worry🙂
