Spinach & Feta Egg White Wrap

ingredients:
- 1 multigrain or whole wheat tortilla of your choice
- 1 tbsp sun dried tomato pesto
- 1 tbsp roasted red peppers, diced
- 2 cups firmly packed baby spinach
- 3 large egg whites or 1/2 cup liquid egg whites
- 1 tbsp vegan garlic & herb spreadable cheese
- 1 tbsp vegan fat feta crumbles
- sea salt & cracked black pepper to taste
instructions:
How to cook Spinach & Feta Egg White Wrap
- coat a large skillet with no stick cooking spray and set it to medium high heat
- add roasted red peppers and sauté until tender, 2 -3 minutes, sprinkling with sea salt & cracked black pepper
- add baby spinach to your skillet and cook/stir around until wilted, 2 - 3 minutes
- remove spinach and peppers from your skillet and wipe clean; coat pan with no stick cooking spray again
- add eggs to skillet and cook until done on one side, approx. 3 minutes. flip and cook on remaining side until done
- remove eggs from your skillet and add your tortilla (only to warm it up) about 30-45 seconds on each side
- on a plate, add tortilla and spread the red pepper pesto and spreadable garlic & herb cheese onto it
- next, add egg whites, spinach, red peppers, and feta crumbles.
- roll it all up tightly and slice in half if you prefer!
