Ingredients

  • approx. 9 lasagna noodle sheets
  • 1 tbsp olive oil
  • 1 lb lean ground turkey 85/15
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh basil, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic salt
  • 1/2 tsp cracked black pepper
  • 1 jar of your favorite tomato sauce
  • 1 15 oz container almond milk ricotta OR lacose-free cottage cheese
  • 3 cups almond milk mozzarella, shredded
  • 1/4 cup vegan parmesan, grated
  • 1 large egg
  • 2 tbsp fresh minced parsley for garnish

Instructions

  1. preheat your oven to 350 degrees and coat a 9 x13 baking sheet with no-stick cooking spray
  2. set skillet to medium high heat and add olive oil
  3. add onion, garlic, and ground turkey; cook and crumble the meat until there is no more pink (about 3-5 min). drain fat, add seasonings, tomatoes, and stir once more. add tomato sauce and stir for 2-3 more minutes
  4. in a small bowl, add ricotta, egg, and parmesan cheese. mix and set aside
  5. in the bottom of your baking dish, spread meat/tomato mixture and top with 1 layer of lasagna sheets
  6. add ricotta cheese mixture next and sprinkle with mozzarella
  7. REPEAT at least 2 more layers and top it with mozzarella cheese.
  8. BAKE for 35-45 minutes or until the cheese is bubbling! to get that beautiful brown cheesy topping color, broil for 2-3 minutes and keep an eye on it!
  9. let cool before cutting; sprinkle with parsley to garnish

you want cheesy? well you got it! without the lactose of course☺️. if you’d like to make this lasagna completely dairy-free, you can stick with the almond mozzarella shreds only. I added the sharp cheddar for color and extra cheesiness. the almond milk ricotta is AMAZING and so perfect; definitely worth the splurge. if you can’t find it or don’t have any, I have also substituted lactose-free cottage cheese instead and gotten yummy results. enjoy this guys! please let me know how you like it❤️
