Double Chocolate Chunk Peanut Butter Cookies

ingredients:
- 1 cup honey roasted creamy peanut butter
- 1/2 cup coconut sugar
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1 whole egg
- 1 tsp pure vanilla extract
- 1/2 cup dairy-free chocolate chunks
instructions:
- preheat oven to 350 degrees
- in a medium mixing bowl, comine peanut butter, vanilla, coconut sugar
- in a separate mixing bowl, combine cocoa powder, baking soda, baking powder
- combine wet ingredients with dry ingredients
- add egg and beat once more; fold in chocolate chips
- scoop out balls of dough with a small spook and roll them in between your palms. coat a large baking pan with no stick cooking spray and place the dough balls in a flat layer on your pan without touching
- add a few more chocolate chunks to the tops of the cookies if you'd like (i mean why not)
- bake for 8-10 minutes
NOTES:
you may sub agave nectar or honey for the sugar, or even a Stevia/Truvia baking blend. let cookies REST for 3-5 minutes before moving them to a wire rack to cool.
