Crock Pot Salsa Chicken

one of the easiest meal prep recipes in my arsenal! super flavorful and versatile! great for tacos, salads, burrito bowls, or to top baked potatoes with.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups of your fave salsa
  • 1 tsp cumin
  • 1 tsp garlic powder 
  • 1 tsp paprika
  • 1 tsp low sodium garlic salt 
  • 1/2 tsp black pepper

Instructions:

  1. add chicken to your slow cooker and settle them around the bottom of your pot.
  2. dump all ingredients on top of the breasts.
  3. set your slow cooker to LOW and let the breasts cook for 3.5 hours*
  4. once cooked through, shred the chicken breasts using two forks 

Notes:

the chicken breasts can become dry if cooked too long; the 3.5 hour mark is the sweet spot for my crock pot.
