  1. in a large mixing bowl, add chicken tenders and coconut aminos. let marinate for 30 minutes minimum or overnight for BEST flavor and results.
  2.  grab 2 shallow bowls.  add eggs to one bowl and beat.  add all dry ingredients to other shallow bowl and combine well. 
  3. dredge marinated chicken into egg mixture and let excess drip off.
  4. dredge chicken in panko/breadcrumb mixture on both side; coat evenly.
  5. place tender in air fryer basket or on air fryer tray. (fit as many as you can without touching)
  6. lightly coat the tenders with no-stick cooking spray and bake for 400 degrees for 7 min.
  7. flip and bake for 6-7 more minutes or tenders reach a golden brown color and crispy texture.
  8. repeat as many batches as needed!
