Crispy Baked Potato Wedges

crispy and golden on the outside, moist and fluffy on the inside.
Ingredients
- 4 - 5 yukon gold potatoes
- 1 tbsp cornstarch (sprinkle on a little)
- 1/2 tsp paprika
- 3 tbsp cup olive oil
- 1 tsp oregano dried
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp garlic salt
- 2 tbsp fresh chopped parsley or cilantro
Instructions
- preheat oven to 400 degrees and coat a large pan with no stick cooking spray
- scrub, dry, and slice your potatoes into wedges (I like to keep the skin on but it's optional!)
- in a large bowl, add potatoes along with oil, all seasonings, and cornstarch; mix well by hand or with a mixing spoon
- pour seasoned potatoes out onto your prepared pan and create an even layer with your hand; don't crowd them and spread them out
- bake in your 400 degree oven for 35 to 40 min min (on the bottom rack)
- remove pan from the oven and give it a shake; place your broiler on low and move the pan to the top rack; broil for 5 - 10 more minutes until crispy!
- remove pan from oven and coat the potatoes with a layer of no stick cooking spray. sprinkle with fresh chopped parsley or cilantro, sea salt, and cracked black pepper. ENJOY with your fave dipping sauce!
