Creamy Stove Top Mac N Cheese

creamy. dreamy. lactose-free! my kids LOVE this mac n cheese!
Ingredients
- 1/2 lb elbow macaroni
- 3 tbps vegan butter
- 2 tbsp flour
- 1/2 tsp seasoned salt
- 1/4 tsp pepper
- 1 cups milk non-dairy
- 1/2 cup dairy-free heavy cream (I love Silk brand!)
- 2.5 cups lactose-free sharp cheddar cheese, shredded
Instructions
- boil a large pot of water and don't forget to season it with a generous pinch of salt! add your elbow mac and boil according to package instructions. drain (but do not rinse!) and set aside.
- set a dutch oven or non-stick pot to medium-low heat and add butter
- once melted, add flour and whisk. be sure to whisk all the dry flour spots into the butter well; keep stirring for about 2 minutes
- add milk and continue to stir until incorporated.
- add shredded cheese and continue to whisk until a smooth texture is achieved.
- add cream, seasoned salt, cracked black pepper season.
- finally, add cooked macaroni and continue to stir on low heat until the sauce thickens a bit more, about 3-5 minutes.
- no need to bake- enjoy it right now while it's super hot and creamy!
