the creamiest mac n cheese

Ingredients

  • 4 oz pasta of choice
  • 1 cup + 2 tbsp of dairy-free cheese
  • 1 cup non-dairy milk
  • 2 tbsp plant butter
  • 2 tbsp GF flour
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp smoked paprika

Instructions

  1. bring a large pot of water to a boil; salt it generously (i use about 1 tbsp)
  2. add pasta and only cook for 1 minute less than the package states. drain and set to the side
  3. in a dutch oven, add 2 tbsp butter
  4. once melted, add 2 tbsp GF flour
  5. whisk until combined. slowly add milk and whisk until mixture is cohesive and thickened
  6. season with salt, pepper, and paprika
  7. sprikle in cheese and continue to whisk until cheese is completely melted and smooth
  8. add pasta to pot and combine until coated evenly
  9. taste and season accordingly
