the creamiest mac n cheese

Ingredients
- 4 oz pasta of choice
- 1 cup + 2 tbsp of dairy-free cheese
- 1 cup non-dairy milk
- 2 tbsp plant butter
- 2 tbsp GF flour
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/2 tsp smoked paprika
Instructions
- bring a large pot of water to a boil; salt it generously (i use about 1 tbsp)
- add pasta and only cook for 1 minute less than the package states. drain and set to the side
- in a dutch oven, add 2 tbsp butter
- once melted, add 2 tbsp GF flour
- whisk until combined. slowly add milk and whisk until mixture is cohesive and thickened
- season with salt, pepper, and paprika
- sprikle in cheese and continue to whisk until cheese is completely melted and smooth
- add pasta to pot and combine until coated evenly
- taste and season accordingly
