Coconut Whipped Cream

the perfect, light, dairy-free topping!
ingredients:
- 1 can coconut cream, chilled
- 1/2 cup organic powdered sugar
- 1 tsp vanilla extract
- (optional) 2 tsp lemon zest
instructions:
- make sure your coconut cream is chilled; pop it into the fridge for a few hours first!
- open the can and transfer the solids only to a mixing bowl.
- you can reserve the liquids for smoothies if you like
- add powdered sugar, vanilla, optional lemon zest and blend with your hand or stand mixer until well combined and fluffy.
