ingredients:

  • 2.5 - 3 bananas
  • 5 tbsp chia seeds
  • 1 entire can of coconut cream (13.5 oz) (solids & liquid)
  • 3-5 oz unsweetened coconut milk or coconut cream (JUST the solids)
  • 1.5 tsp vanilla extract
  • 1/2 cup brown sugar or coconut sugar 
  • dash sea salt

instructions:

How to cook Coconut Banana Chia Pudding

  1. add all ingredients EXCEPT chia seeds into your high powered blender or food processor. 
  2. blend until combined well, about 30-40 seconds. 
  3. add chia seeds and pulse quickly until all combined!
  4. chill in the fridge for 3 - 4 hours until set.
  5. add toasted coconut and fresh banana slices to the top before serving and enjoy!
