- 2.5 - 3 bananas
- 5 tbsp chia seeds
- 1 entire can of coconut cream (13.5 oz) (solids & liquid)
- 3-5 oz unsweetened coconut milk or coconut cream (JUST the solids)
- 1.5 tsp vanilla extract
- 1/2 cup brown sugar or coconut sugar
- dash sea salt
instructions:
How to cook Coconut Banana Chia Pudding
- add all ingredients EXCEPT chia seeds into your high powered blender or food processor.
- blend until combined well, about 30-40 seconds.
- add chia seeds and pulse quickly until all combined!
- chill in the fridge for 3 - 4 hours until set.
- add toasted coconut and fresh banana slices to the top before serving and enjoy!
