Ingredients

Dough
  • 2 3/4 cup Baker's Corner All Purpose Flour
  • 3/4 cup warm non-dairy milk of choice
  • 1 Baker's Corner Active Dry Yeast Packet
  • 4 tbsp organic cane sugar
  • 3 tbsp vegan butter, melted
  • 1 whole egg, room temp
  • 1/2 tsp salt
Filling
  • 1 tbsp ground cinnamon
  • 3 tbsp vegan butter, room temp
  • 1/4 cup Baker's Corner Light Brown Sugar
  • 1/2 tsp vanilla extract
Maple Icing
  • 1.5 cups confectioners sugar
  • 2 tbsp Specially Selected 100% Pure Maple Syrup
  • 2 tbsp non-dairy milk of choice
  • 1/2 tsp vanilla extract

Instructions

  1. sift dry ingredients together in a large bowl
  2. combine wet ingredients together in a separate bowl
  3. mix until dough just comes together
  4. on a floured working surface, knead until smooth
  5. let sit for 10 min. then roll out to about 1/4 in thick
  6. combine filling ingredients and roll the whole thing into a log (starting from a long side)
  7. cut into about 10-12 discs, cover and let rise for about an hour
  8. bake 28-33 min or until golden brown
  9. whip up the icing by combining all ingredients in your stand mixer or use a hand mixer
