Cinnamon & Brown Sugar Peaches

grab some lactose-free or vegan vanilla ice cream and add a scoop of these peaches on top!

Ingredients

  • 3-4 large, ripe peaches, peeled & sliced
  • 1/4 cup light, dairy-free butter
  • 1/4 cup light brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • pinch of sea salt

Instructions

  1. in a large non-stick skillet over medium heat, add butter and let melt
  2. add sliced peaches and cook/toss around in butter for about 2-3 min
  3. add remaining ingredients and combine well
  4. continue to stir and toss peaches for 3-4 more minutes as the sugar caramelizes but be careful not to burn!
