grab some lactose-free or vegan vanilla ice cream and add a scoop of these peaches on top!
Ingredients
- 3-4 large, ripe peaches, peeled & sliced
- 1/4 cup light, dairy-free butter
- 1/4 cup light brown sugar
- 1 tsp cinnamon
- 1 tsp vanilla
- pinch of sea salt
Instructions
- in a large non-stick skillet over medium heat, add butter and let melt
- add sliced peaches and cook/toss around in butter for about 2-3 min
- add remaining ingredients and combine well
- continue to stir and toss peaches for 3-4 more minutes as the sugar caramelizes but be careful not to burn!
