Cilantro Lime Salmon

ingredients:
- 1 lb salmon fillet
- 2 tsp extra virgin olive oil
- 2 tbsp dairy-free butter, melted
- 1 tbsp Truvia Nectar
- 1 tbsp coconut aminos
- zest of 1 lime (plus sliced for garnish)
- 2 tbsp fresh cilantro, minced finely
- pink himalayan sea salt to taste
- cracked black pepper to taste
instructions:
- set your oven to 450 and coat a baking pan with no stick cooking spray
- coat fillet in olive oil, butter, and aminos; place skin side down on baking tray
- drizzle with truvia nectar; sprinkle with sea salt, pepper, and half of lime zest
- bake 13-15 minutes or until as firm as you'd like
- immediately add the remaining lime zest and sprinkle generously with cilantro
- garnish with lime and enjoy!
