whatchu gone do with those ripe bananas!? add some walnuts to these cookies and it'll taste like yummy banana bread! enjoy this healthy, dairy & gluten-free snack with a cold glass of non-dairy milk.

  1. Preheat oven to 375 degrees and coat baking pan with no stick cooking spray
  2. With a hand or stand mixer, cream together butter, brown sugar, monk fruit sweetener, bananas, and vanilla until smooth
  3. add egg and mix until combined
  4. In a separate bowl, add cornstarch, oats, baking soda, baking powder, and salt. combine well and until incorporated
  5. slowly add the wet ingredients to the dry and stir until just combined. fold in the chocolate chips! (you may also add nuts; pecans or walnuts would be great)
  6. drop spoonfuls of dough onto your prepared pan
  7. Bake for 9-11 min depending on your oven; the edges will brown first so be careful not to burn them! Cool first on the pan for about 5 minutes before transferring elsewhere.
