Chunky Monkey Cookies

whatchu gone do with those ripe bananas!? add some walnuts to these cookies and it'll taste like yummy banana bread! enjoy this healthy, dairy & gluten-free snack with a cold glass of non-dairy milk.
Ingredients
- 1/4 cup vegan butter, room temp
- 3/4 cup brown sugar
- 1/4 cup granulated monk fruit sweetener (or organic granulated cane sugar)
- 2 ripe bananas, mashed
- 2 tsp vanilla
- 1 whole egg
- 2 cups GF oat flour
- 1 tbsp cornstarch
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup dairy-free chocolate chips
Instructions
- Preheat oven to 375 degrees and coat baking pan with no stick cooking spray
- With a hand or stand mixer, cream together butter, brown sugar, monk fruit sweetener, bananas, and vanilla until smooth
- add egg and mix until combined
- In a separate bowl, add cornstarch, oats, baking soda, baking powder, and salt. combine well and until incorporated
- slowly add the wet ingredients to the dry and stir until just combined. fold in the chocolate chips! (you may also add nuts; pecans or walnuts would be great)
- drop spoonfuls of dough onto your prepared pan
- Bake for 9-11 min depending on your oven; the edges will brown first so be careful not to burn them! Cool first on the pan for about 5 minutes before transferring elsewhere.
