Chocolate Coated Rice Cakes

whole grain rice cakes coated in dairy-free chocolate! fun, healthy snack kids love to create and enjoy!
ingredients:
- 12 thin and crispy rice cakes* (i love these too)
- 1 cup dairy-free chocolate chips
- 1 tbsp coconut oil
- your favorite toppings!
instructions:
- in a small bowl, melt chocolate chips and coconut oil in 15 second increments
- once heated, stir until completely smooth
- dip or drizzle cakes into melted chocolate and and place on a large baking pan
- add any fun toppings you or your kids would love while the chocolate is wet
- place pan in the freezer for 20-30 minutes for the chocolate to set, then enjoy!
NOTES:
the thick rice cakes tend to become chewy after the chocolate sets in the fridge or freezer if you don't eat them immediately. i suggest going with the thinnest cakes you can find.
