Vegan Chocolate Chip Cookie Dough

ingredients:
- 1 can chickpeas
- 1/3 cup honey roasted peanut butter
- 2 tbsp truvia nectar
- 1.5 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup dairy-free chocolate chips
instructions:
- drain and rinse your chick peas very well*
- add chick peas and remaining ingredients (except for chocolate chips) to your food processor or high powdered blender
- blend until smooth and creamy; transfer to a mixing bowl and fold in chocolate chips
- serve immediately; can be kept in the fridge for up to 4 days
NOTES:
discard the chick pea skin if possible; if your blender is high powdered then the skins aren't that big a deal IMO!
