Ingredients

pancake batter
  • 1.5 cups gluten-free 1:1 baking flour
  • 4 tsp baking powder
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 1/4 cup non-dairy milk
  • 3 tbsp melted plant butter
  • 1 whole egg
  • 1 tsp vanilla
  • 2 tbsp cooking oil

Instructions

  1. combine dry ingredients with dry (flour, baking powder, sugar, salt, cinnamon) in a large bowl and sift/stir until blended
  2. add wet ingredients in a small bowl and combine (egg, milk, vanilla, cooled melted butter)
  3. pour wet ingredients into dry and mix until just combined
  4. set a large skillet to medium-high heat and add 1 tbsp cooking oil (we used vegetable)
  5. cook pancakes for 2 minutes on each side and in batches of 4
  6. keep cooked pancakes warm until all batches are complete

Notes

cook pancakes in batches of 4 to make 10 pancakes

don't overmix batter!
