Ingredients
pancake batter
- 1.5 cups gluten-free 1:1 baking flour
- 4 tsp baking powder
- 1 tbsp sugar
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 1/4 cup non-dairy milk
- 3 tbsp melted plant butter
- 1 whole egg
- 1 tsp vanilla
- 2 tbsp cooking oil
Instructions
- combine dry ingredients with dry (flour, baking powder, sugar, salt, cinnamon) in a large bowl and sift/stir until blended
- add wet ingredients in a small bowl and combine (egg, milk, vanilla, cooled melted butter)
- pour wet ingredients into dry and mix until just combined
- set a large skillet to medium-high heat and add 1 tbsp cooking oil (we used vegetable)
- cook pancakes for 2 minutes on each side and in batches of 4
- keep cooked pancakes warm until all batches are complete
Notes
cook pancakes in batches of 4 to make 10 pancakes
don't overmix batter!
