Cheesy Chicken Sloppy Joes

kid pleaser! protein and flavor packed; quick to cook up any night of the week.

Ingredients

  • 1 tbsp grapeseed oil
  • 1 lb lean ground chicken 
  • 1 large yellow onion, diced
  • 2 large garlic cloves, minced
  • 1 lb lean ground chicken
  • 1/2 tsp Slap Ya Mama seasoning or seasoning salt of choice
  • 3/4 cup low-sugar ketchup
  • 3 tbsp brown sugar
  • 2 tbsp yellow mustard
  • 1 tbsp chilli powder
  • 2 tsp tangy bbq coconut aminos (or regular coconut aminos)
  • sea salt to taste
  • cracked black pepper to taste 
  • cheese of choice (I used these vegan slices)
  • toasted buns for serving

Instructions

  1. In a large skillet over medium heat, add oil. 
  2. once hot, add onion and sauté until translucent, about 5-6 min. 
  3. add garlic and saute for 1 minute. 
  4. add chicken and break up with your spoon and cook until it is no longer pink. 
  5. add seasoned salt and stir to combine.
  6. stir in ketchup, brown sugar, mustard, coconut aminos, chili powder, and salt & pepper. 
  7. simmer for approx. 5 more minutes until thick.
  8. portion out the servings you will add to your buns while in the pan and top them with your cheese of choice. 
  9. cover pan for 2 min.
  10. uncover pan and transfer meat mixture to your toasted buns.
  11. devour immediately!
