a sweet, creamy, good-for-you treat! chia seeds are the star of this show with plenty of healthy fat, fiber, and protein.

Ingredients

  • 1 can lite coconut milk*
  • 1 tsp vanilla extract
  • dash of sea salt
  • 2 tbsp sweeter of choice**
  • 5 tbsp chia seeds

Instructions

  1. in this order, add to your mason jar: coconut milk, vanilla, salt, sweetener, and finally the chia seeds.
  2. mix very well until there are no dry seeds.
  3. close your jar and set it in the fridge for a few hours. keep it in there overnight for creamiest results.
  4. top with fresh fruit and enjoy!

Notes:

This is my base chia seed pudding recipe!


*I suggest using light coconut milk vs non-dairy milk (almond milk for example) because it yields a creamier, thicker, pudding.


**I love to use monk fruit sweetener because it's zero calorie and all natural. feel free to use brown sugar, honey, agave nectar, maple syrup, etc.


I typically top my pudding with fresh fruit, shredded coconut, and cacao nibs. you chose!

the order matters! add the chia seeds last because once they get wet from the liquid, they begin to get gelatinous and stick to the bottom of the jar.
