Blueberry Bran Muffins

Ingredients
- 3/4 cup 1:1 gluten-free flour
- 3/4 cup oat bran cereal (dry)
- 1/4 cup brown sugar
- 1/4 cup monk fruit sweetener
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 small mashed banana
- 1/2 cup lactose-free greek yogurt
- 1 whole egg
- 2 tbsp coconut oil
- 3/4 cup blueberries (save some for the tops!)
Instructions
- preheat your oven to 400 degrees and line your muffin pan
- mix wet ingredients with wet in one bowl and dry with dry in another
- add dry mixture to wet and mix until JUST combined...do not overmix!
- fold in blueberries gently
- fill each cup 1/2 full and bake for 20 minutes
