a yummy healthy snack or dessert! dairy & gluten-free👍🏽

Ingredients

batter
  • 1.5 cups gluten-free flour blend
  • 3 super ripe & spotty bananas
  • 1 whole egg
  • 2 tbsp coconut or canola oil
  • 1/3 cup lactose-free or vegan greek yogurt
  • 1/3 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds
  • 1/4 tsp salt
  • toasted pecans (optional)

Instructions

  1. coat your mini baking pan with no-stick cooking spray
  2. to a bowl, whisk together flour, baking soda, baking powder, cinnamon, & salt
  3. to your mixer, add ripe bananas, yogurt, eggs, brown sugar, oil, & vanilla and blend until smooth
  4. stop mixer and add chia seeds and flour mixture and blend until smooth but don't overmix!
  5. spoon muffin mixture into pan about 1/2 full
  6. bake on 350° for 20-22 min and insert a toothpick in the center to ensure it comes out clean.
