Bacon Wrapped Maple Sweet Potato Wedges

Ingredients
- 3 large sweet potatoes, peeled and cut into thick wedges
- 15-18 slices of bacon (1 per wedge)
- 2 tbsp good vegan butter
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1/4 tsp cinnamon
- 1/4 tsp cracked black pepper
- dash sea salt
- garnish with fresh thyme leaves
Instructions
- preheat oven to 400 degrees
- prepare a baking sheet with foil or wax paper and coat it with no-stick cooking spray
- in a bowl, add butter, sugar, syrup, cinnamon, pepper, and salt
- microwave together for about 15 seconds (until butter is melted down)
- add sweet potato wedges and toss to coat (reserve liquid to baste wedges halfway through baking)
- wrap each wedge with one slice of bacon in a spiral motion
- place the wedges on the prepared baking sheet
- bake for 30-35 minutes or until sweet potatoes are tender and bacon is crispy
- sprinkle with fresh thyme leaves
