Ancient Grains Bowl + Salmon
Ingredients
-Protein + seasoning blend of your choice
- 1 lb salmon (sliced in 4-6 oz portions) or protein of your choice
-Sweet Potatoes
- 6 cups jeweled yams, peeled and diced
-Miso Vinaigrette
- 1/4 cup white miso paste (look in the vegan refrigerated section of your grocery store)
- 5 tbsp agave nectar
- 5 tbsp cane sugar
- 1 tbsp coconut aminos
- 1 tbsp lemon juice
- 5 tbsp samba oelek or chili paste
- 2 tsp toasted sesame seeds (for garnish)
- 1 tsp sesame oil
- 1/4 cup grapeseed oil
- sea salt & cracked black pepper
- 3 tbsp water
-1 small red onion, peeled and sliced
-1 whole, ripe avocado
-1 cup fresh snow peas (or green veggie or your choice)
-Ancient Grains
- store bought is fine! Trader Joes has a great frozen, bagged option. You can also use straight up quinoa!
-Cilantro pesto
- 2 heaping cups fresh cilantro
- 1/4 cup roasted salted pumpkin seeds
- 1 clove garlic
- 5 tbsp lime or lemon juice
- 1/4 cup grapeseed oil
- 1/4 cup olive oil
- sea salt & cracked black pepper
