a chocolately, dairy & gluten-free treat!
Ingredients
- 1/2 cup vegan chocolate chunks + 2 tbsp
- 1/3 cup packed brown sugar
- 1/4 cup cocoa powder
- 1/4 cup coconut oil
- 1/4 cup oat flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 degrees and coat your mini muffin pan with non-stick cooking spray
- In a small saucepan set to low heat, add 1/2 cup chocolate chunks, brown sugar, oil, and cocoa powder. Whisk until melted and blended, then shut off the heat
- In a small mixing bowl, whisk flour, baking soda, & salt
- In a medium bowl, whisk eggs, vanilla until thick and foamy (by hand or hand mixer)
- Temper the chocolate into the egg mixture until fully cohesive
- Add remaining 2 tbsp of chocolate chunks to batter, mix, then spoon into muffin tin evenly
- Bake for 13-15 minutes and don’t over-bake! Let them cool in the pan for a few minutes before popping them out.
