a chocolately, dairy & gluten-free treat!

Ingredients

  • 1/2 cup vegan chocolate chunks + 2 tbsp
  • 1/3 cup packed brown sugar
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil
  • 1/4 cup oat flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees and coat your mini muffin pan with non-stick cooking spray
  2. In a small saucepan set to low heat, add 1/2 cup chocolate chunks, brown sugar, oil, and cocoa powder. Whisk until melted and blended, then shut off the heat
  3. In a small mixing bowl, whisk flour, baking soda, & salt
  4. In a medium bowl, whisk eggs, vanilla until thick and foamy (by hand or hand mixer)
  5. Temper the chocolate into the egg mixture until fully cohesive
  6. Add remaining 2 tbsp of chocolate chunks to batter, mix, then spoon into muffin tin evenly
  7. Bake for 13-15 minutes and don’t over-bake! Let them cool in the pan for a few minutes before popping them out.
