Ingredients
- 1 cup rolled oats
- 0.25 cup, Unsweetened Apple Sauce
- 1 tsp, Cinnamon
- 0.25 tsp, Baking powder
- 0.50 tsp, Baking soda
- 0.50 cup packed, Brown sugar
- 2 tbsp, Maple Syrup
- 0.50 tsp, Salt
- 1 tsp, Vanilla Extract
- 2 cup(s), Confectioners Powdered Sugar
- 1 stick plant butter
- 1 tsp, Vanilla Extract
- 1 cup, Bob's Red Mill Gluten-Free Flour
- 1 Large Egg
- 1 tbsp, Almond milk, Unsweetened
Instructions
- preheat oven to 350ºF. line baking sheet with parchment paper or a silpat baking mat
- cream vegan butter and sugar using a stand mixer until light and flufffy, about 2-3 min. add egg, maple syrup, and vanilla extract; mix until combined
- in a separate bowl, combine the flour, oats, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. fold in applesauce.
- using a small cookie scoop, add dough into balls and transfer to prepared baking sheet. flatten then slightly using the palm of your hand. bake for 8 to 9 minutes, until just set. let the cookies cool COMPLETELY before assembling the sandwiches!
- using your stand mixer again, add the vegan butter and beat until light and creamy. turn the speed down to low and gradually add powdered sugar. once completely incorporated, add the vanilla and milk; mix until smooth and creamy.
- once cool, assemble the sandwiches using 1 tbsp of cream filling and press together slightly.
