
Oatmeal Raisin Chocolate Chip Cookies

gluten-free & dairy-free!
ingredients:
- 3/4 cup gluten-free flour mix
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1.5 cups GF rolled oats
- 1/2 tsp baking soda
- 1/2 cup vegan butter
- 1 egg
- 1 tsp vanilla
- 1/4 cup organic granulated cane sugar
- 1/2 cup organic brown sugar
- 1/2 cup raisins
- 3/4 cup dairy-free chocolate chips
instructions:
- preheat oven to 350 and coat a large baking pan with no-stick cooking spray
- in a large mixing bowl, combine flour, oats, baking soda, baking powder, salt, and cinnamon
- in a separate, bowl, cream the sugars, butter, and vanilla together. add the egg and mix again.
- add the dry ingredients into the wet and mix until just combined. fold in chocolate chips, raisins, and any other desired add-ins
- *see note below! scoop cookies onto the prepared pan at least an inch apart. bake 13-15 minutes or until light golden brown.
NOTES:
after mixing, refrigerate the dough for at least 30 minutes! it makes a huge difference in how the cookies bake up. I use a small ice cream scoop and the cookies keep a nice dome shape as they bake. makes for an awesome presentation.
