OB check up + why try swai

happy hump day and  happy 7 days til Christmas!? whoa.

CYMERA_20131218_172108

had another check up 1st thing this morning and all is well in this tummy of mine, thank God.  baby’s heartbeat is a strong 150 and by the next visit we’ll be able to determine its sex.  i don’t wanna know though!!! i would love to be surprised in the delivery room, but Mr. Egwuatu says he would like to know as soon as we can find out.  so if he knows i must know too, jeez. my OB just popped out her 4th and final kiddo a few months ago and after i told her my symptoms are super similar from my first pregnancy, she said that didn’t mean a thing.  i feel like it’s another boy though and the chinese gender predictor agrees

20131218_115149

i had a pregnancy-brain moment and ruined 36 perfectly good eggs by leaving them in my truck for 2 days.  the cartons were on the floor of the passenger seat, still in the grocery bag and everything. ugh. sooo, we made a pit stop at Whole Foods (yes i had an alterior motive) to get some more and see what they had cooking for lunch.  i let my ‘cravings’ (post coming soon) get the best of me again and got a few scoops of their vegetable fried rice and mac n cheese.  to my surprise, the stats for both were available on www.myfitnesspal.com, and i didn’t even do too bad!  just when i think a food item won’t be there after performing a search, it pops right up. LOVE THAT SITE.

CYMERA_20131218_172317

ok, this was the real reason for the WF trip. confession:  i completely forgot i was pregnant on Thanksgiving eve while i was up cooking and pretty much licked an entire bowl of leftover raw brownie batter. CLEAN. who does that? apparently pregnancy brain is real, my goodness. i did freak out afterwards but calmed down…. eventually.  i asked Sonny to bring me some of this addicting vegan cookie dough so that if i ate some raw it would totally be ok.  dairy / egg- free and tastes like the Nestle Toll House recipe batter i grew up eating. it’s incredible. incredibly dangerous. 2 tubs later…….
20131218_174900_1

ok let’s talk about healthy stuff!  swai fish was the same price as tilapia fillets at Walmart this week so i chose them to give our taste buds something different.  here’s how they stack up:

Screen Shot 2013-12-18 at 5.35.47 PM

i made a Swai Po’ Boy sammich with it cause the texture and taste is like that of catfish to me.  tilapia is definitely flakier though.

20131217_132320

i coated the fillets in my homemade whole wheat breadcrumbs mixture (no parmesan cheese and swapped the Italian seasoning for salt-free Caribbean Jerk), and pan-fried them in 2 tsp of coconut oil for 5-7 minutes on each side.

20131217_134403_1

i threw the fillet on a ciabatta loaf over shredded lettuce, tomatoes, pickles, and topped it with some homemade sriracha ‘mayo’!

20131217_134718_1

for the mayo, it’s:

  • 2 heaping tbsp of greek yogurt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 tsp sriracha
  •  few shakes of seasoned pepper (by Mc Cormick)
  • squeeze of fresh lemon juice (optional)

mix!

have you tried swai? what’s your favorite white fish?

game changers

anybody else used to buy those tiny wheatgrass shots from Jamba juice?  i did it more than a handful of times.  seeing this wheatgrass powder at Sprouts Farmers Market reminded me of my frivolous spending days.

image (12)

i cracked the bag open for the first time yesterday and made some  maple wheatgrass pancakes with it!  turned out good enough to share. so i will.
image (8)

maple wheatgrass pancakes:

the stuff: 🍩

  • 1/2 cup oat bran 🍩
  • 2-3 heaping tbsp wheat grass powder 🍩
  • 1 tsp maple extract 🍩
  • 1 tsp vanilla 🍩
  • 2 egg whites 🍩
  • 1/2 tsp baking powder 🍩
  • 4 tbsp unsweetened vanilla almond milk (or more if batter is too thick)
  • 1-2 packets stevia 🍩
  • 2 tbsp unsweetened apple sauce

do this:

combine real good and cook up like cakes in your no-stick cooking spray coated, medium heated skillet!  3-4 minutes each side.  top however you like – i chose pecan pieces and Walden Farms zero calorie pancake syrup.

20130814_091826

stats:

197 cals, 4g fat, 160mg sodium, 39g carbs, 8g fiber, 5g sugar, 16g protein. 🙌🙌🙌🙌🙌🙌🙌🙌🙌🙌🙌🙌🙌🙌🙌

i took a FULL rest day yesterday and did some grocery shopping .  Walmart was planned.  Whole Foods was not.

CYMERA_20130814_205313

after sacking 43 lbs of sweet potatoes in Wally World, my eyes caught ahold of a big end cap of these One Step French Fry Cutters.  *jaw drops*  and then i saw the price directly below them: $9.88.  *jaw drops lower*.  i threw the cutter as well as all the skepticism ‘as seen on tv’ products come with in my buggy and kept truckin’.

20130814_172034

i’d say it worked pretty well, wouldn’t you!? great investment.  i like to chop my veggies by hand, but you can use this thing to chop up a bunch of other stuff too (garlic, shallots, etc).  here’s an IMPORTANT TIP though: nuke your potatoes for 1.5 minutes or so (really depending on size) AND cut them in half so it will fit in the gadget (think hamburger style, not hot dog).  and be super careful not to  over cook them! it will create a huge mess.  don’t ask me how i know. ugh.

image (11)

i tried it out on my Spicy Smoky Sweet Potato fries from my ebook!

so about Whole Foods… it never fails. i always come out with extra stuff and a biggER bill. i went to get some Bob’s Red Mill Whole Wheat Pastry Flour which i could not even find (nor could the store associate) so i got some from the bulk bins. and on the way out i found these two gems:

image (9)

vegan, gluten-free, organic Sprinklez by Let’s Do Organic (cause they DO exist apparently), and vegan (dairy-free, gluten-free, egg-free) Chocolate Chip cookie dough by Eat Pastry.  why did i even bring this up in my house

cookie dough

i entered a crazy fluffernutter (marshmallow fluff) challenge on IG last night at the last-minute using what i had and made a big fluffernutter pazookie pie!

image (10)since the dough is egg-free i’m definitely eating the rest raw.  go get somma that DOUGH.

fitzee

i’ll leave you with just one of the many delectable all natural, gluten-free eats and treats from FITzee Foods- their low calorie Tex Mex Chicken Salad.  my orders are en route as i type and i cannot WAIT to gobble them up and do more product reviews for you guys!!!! ok back to my cookie dough.

run ON! Bayou City Classic 10k ’13

IMG_20130309_065653

pre-race breakfast was 2 egg whites and a big bowl of expanding oats (1/2 cup rolled oats cooked in 1 cup water and 1/2 cup unsweetened vanilla almond milk) topped with frozen blueberries, banana chunks and cinnamon!  i normally don’t eat THAT much before a long run, but i woke up so hungry that i had to put something in my system that would stick.

20130309_074842

walking to the start line  with no rain this time!  last year it rained the entire race AND during the post-race party, boooo.

20130309_074902

 traditional feet pic

52-53 min and some change later,

IMG_20130309_092750

DONEZO! the route was a tad bit different this year and there were hills, hill, and mo hills, whew.  that Allen Parkway is a beast.

oh how i wish i could have taken pics of all the inspirational and funny things i saw:

1. i had just made it to the halfway point when a woman on a bike heading the opposite way yelled out ‘it’s fit foodie!!!’ are you kidding me!? if you could have SEEN my face light the heck UP as i cheesed, waved, and yelled hello back! i could not see you very well at ALL but THANK YOU FOR MAKING MY YEAR, LADY!!  XOXO!

2.  spectator sign: ‘don’t stop! ain’t nobody got time fo dat!’

3.  people often run in teams or ‘centipedes’ and are linked together by a rope of some sort so that they can finish together. teamwork at its finest!   i passed a team with a gentleman running alongside his IV.  i did a double take for sure!  yes, the stand with the wheels, the fluid bag, the WHOLE NINE.  he was out there doing his thing.  if he can….

4. one thing i did NOT witness was someone biting the dust, hard.  happens every year.  people, you gotta watch where you are going, especially running in the streets of downtown Houston. *knocks on wood*

20130309_085857

ran into a college buddy of mine just before hitting up the post-race party.  amazing run, Warren!

20130309_090136

first things first, had to get my t-shirt before the line got too crazy. this was nothin.

20130309_090417

i tucked it away in my bag cause i needed two free hands for all the samples i was about to acquire!! here we go:

PhotoGrid_1362891551283

could it be?  yep, Blue Bell ice cream sandwiches and fruit pops.

20130309_090533

stopped by the Clif Bar sample station,

20130309_090635peanut butter chocolate something!
20130309_090841

the My Fit Foods associate called this mixture ‘Morning Glory’.  it’s brown rice, eggs, lean ground turkey, and cheese all mixed together. it was good and something i’d throw together at home for sure.

20130309_091144

fresh fruit (bananas and oranges), cereal bars, and scones were provided by Whole Foods,

20130309_091409

and Fuel Kitchen supplied the breakfast tacos this year, not HEB.  they were delicious though- i had eggs and chorizo in mine.  a friend has been raving about the Philadelphia location to me and i can finally go experience the food for myself, sweet!
20130309_091122great turn out again this year!  always a pleasure and honor to participate in helping preserve Houston’s bayous, trees, and the environment :)

20130309_092619

goodie bag, food, coupons, t-shirt. it’s a wrap. time for a nap.

there were tons more sponsors there, check out the ones i didn’t mention.

Q: have you eaten at Fuel Kitchen & Health Bar? is there one in your city?

20130130_075946

as i neared the door, i heard….music?  there was a live orchestra back there, even though you can’t tell at all from this pic.  that’s how WFM does it!  it didn’t make the weather any warmer, but it was a nice touch.

20130130_080105

this is the very first pic of the madness once i stepped foot in the store.  this is NOTHIN!  there were still a ton of peeps behind me.

20130130_124010

this is THE cleanest this area will ever be in life. lol

ok i have a confession.  my phone straight DIED a few minutes after i took this pic and i was devastated. seriously.  i went to bed with a full battery and did not put it on the charger and because i have soooooo much crap on my phone these days and have yet to order an SD card.  which means my battery is toast in a matter of hours. soooooo, i sped through the store and came back a few hours later with my bro for lunch.  hey i had a dr’s appointment and was out anyway ;)

i’ll pick back up where i left off-

20130130_124517

20130130_124553

20130130_124627

‘air chilled’ is a new term i said i’d google later. the tender was super juicy!

20130130_124603

and wow, that camera man was still there.

20130130_124803

these were so cute. and true.

20130130_124848

we rounded a corner of the store and walked past the gourmet grilled cheese and specialty beer station.

20130130_124844

it was a little after lunch time here and the store was CRACKIN’.

20130130_125520

and then we saw a walking banana and had to get a pic!  and yes…i’ve officially been #photobombed by the lovely shopper behind us.

wholef2

20130130_130919

gettin’ mo samples…sushi samples.

20130130_130945

20130130_125618

we turned around and saw several fresh food bars like the olive one above,

20130130_125653

and this multicultural one.  variety is something WF never lacks!

20130130_130705

so many overwhelming options to choose from.

20130130_125730

and uuuuuuuuweeeeeeee that 8.49 per lb. hurts my HEART!  especially when i remember when it was 2.99………

20130130_130857
last thing on this side of the store was the cool coffee bar.

20130130_130820

more samples on the way to checkout- this tasted like kombaucha soda. not bad!

20130130_130322

i meant to get some canned tuna while i was there so i cut through the frozen foods aisle and ran into this thing-  i thought it just rotated commercials and advertisements all day long, but nope, i touched the screen and was wowed immediately!

20130130_130430

‘touch a produce item for recipes and information.’

um, OK!!!

20130130_130330

20130130_130341

20130130_131133

more samples outside!? of course! just some grilled fillet mignon, no big deal.

20130130_123605

20130130_123641i’ll save it for the next trip.
20130130_084705

OH, a lady was standing at the door on our way out with a basket FULL of free grocery bags!  i loved this pattern the second i saw it.

20130130_131833

juuuust expanding my grocery bag collection.

20130130_084651
see, i didn’t do too bad at all! this was nothin.

tuna, kettlecorn, bell peppers (5 for 5 dollar deal), pumpkin flax granola, and a loaf of seeduction bread for my mama.

20130130_133254

aaaand the very last #foodie shot- half of Matt’s reuben flat bread wrap. delish!

WFM FTW

AAAAAAGGGGHHHH!!!  a WHOLE FOODS MARKET is opening up on my sida town!!!!!

Screen Shot 2013-01-29 at 2.05.45 PM

*high five* to my friend Carla for texting me this golden nugget of info as i had no idea, smh! this is both good & bad according to Sonny but i already promised myself to not go HAM in there.  i am asked repeatedly what my grocery bill is like as a few readers assumed i do all my shopping in Whole Foods and Trader Joes and that is sooooo not the case guys! i use both of these havens as specialty stores ONLY.  i’m a crazy foodie and grocery shopping is fun to me, but i have my limits .   i oogle at and am intrigued by weird, quirky, healthy & indulgent food combos, seasonings, snacks, treats, and all things FOOD. exhibit A:

20130129_194206

this is currently in my snack corner and this is why i get *side-eyes* when i get home. you and i both know that nobody needs this stuff. all natural, double chocolate cookies, fig butter, chocolate covered pretzels, raspberry fruit spread, nori wraps….

let’s be clear- i get my fresh produce and staple items from HEB, Wally World (Walmart), Sams, Fiesta,  Kroger… i’ll even go to Food Town or the like if they are having a fantastic sale and the produce looks presentable. i don’t by organic (severely overpriced in my opinion and i’ve seen, read, and tasted evidence to prove that the ‘regular’ produce is equal to or greater!) and that keeps my bill low.  the organic produce business is BOOMING!!!! but, it won’t get any of my hard-earned money.

tumblr_loamgjCq1J1qedpf6o1_500

i often wonder what i’d be doing now had i not started this blog or had i postponed my decision yet again to compete in that bikini competition last Sept.  there are great moves, and then there are lessons.  you’ll never know though if you don’t step out on faith.  sometimes you can step out at your own pace, and sometimes you are evicted immediately, ready or not!

IMG_20130129_180744

go boldly and confidently in the direction of your dreams!!!! don’t let the fear of the unknown keep you from moving forward….only fear standing still.

Q: what is your favorite SPECIALTY store?

come on, i wanna hear from you so i can go check it out too!

6 Pack USA @ HBU’s Be Fit for Life Health Expo!

what a DAY!  we spent over half of our saturday at our very first event, the Be Fit For Life Health Expo hosted by Student Apprentice on the campus of Houston Baptist University.

IMAG2168

it was an outstanding turnout- kids from ages 12-17 showed up and soaked in a ton of health and fitness info at each booth.

20130126_102141

we taught the kids about effective fitness and nutrition, and about 6 Pack USA’s role in helping people achieve their fitness goals.

20130126_101716

this man was in his element and doin’ what he looooooves to do- TALK
20130126_103859

Sonny and Brian gave demos on how to calculate lean body mass and body fat using a caliper.

20130126_104145

and i proved that clean eating DOES taste good with my PB2 oatmeal carob chip cookies for the babies!

IMAG2173

Congressman Al Green even stopped by to say a few encouraging words to the kiddos.

20130126_112811

it was a pleasure meeting him!

we also had some help from some great friends of ours- a huge thank you to Miko (r) the Zumba QUEEN for teaching a rockin’ class! that girl can seriously MOVE.

20130126_115427

these ladies are the BOMB!  Miko, Kara and Annette (r) volunteered their precious saturday to help 6 Pack USA make the biggest impact possible.

20130126_115837

one last pic before wrappin’ up the first part of the expo here.

IMAG2216

Whole Foods was in the building teaching the kids about fresh, wholesome, all natural snacks and meal ideas,

IMAG2211

while Annette was giving them a great workout, TKB style!  she is the best of the best!

IMAG2206

Miko was workin’ it out on the floor with her Zumba skills,

IMAG2187

while Brian, Kara, and I ran drills in the gym and stressed the importance of daily physical activity.

20130126_151739

done deal!

we are looking forward to growing, networking, and participating in more health and fitness events in our community, city, and beyond.  a final and gigantic THANK YOU to Denesha James and the entire Student Apprentice staff for allowing us to be apart of this amazing event.

20130126_155444

after several weeks of planning, meetings, phone calls, and late nights prepping for this event, Sonny was ready to let loose!  Tornado burger style.

20130126_160638

someone brought one to his office just last week and he says it smelled so good he wouldn’t even LOOK in its direction. so, he wanted it to be his epic post-expo meal. notice i said HE!!! i wanted no parts of this lol.
20130126_160420

ok maybe a few fries.

20130126_160702

are you kidding me…

i didn’t IG this cause i didn’t want to discourage my followers LOL.  but i said i would certainly blog it!  i did have a bite- i could NOT resist all that cheese, come on!  i saved my appetite for a little later though.

20130126_174639

we take our date nights SERIOUSLY.  this is not a game.  the expo was behind us, and  since we were toddler-less for a few more hours, we sped home and got cleaned up for dinner.  the weather was absolutely outstanding, and a patio was calling our name.

20130126_191036

i promise we planned to go somewhere different…

i had the Ruggles Green atlantic salmon salad with the dressing on the side,

20130126_190914

and grilled fish tacos on corn tortillas for Sonny.  we could have at least ordered something different, right?

20130126_190920

6 fingers up for 6 Pack USA!

updated oats & flashbacks

i am all over the place today and don’t even know where to friggin’ start! ok how about with….breakfast:

20130104_082945

i’ve been saying i’m gonna post my updated morning bowl of oats recipe and i need to do it already. less talking and more action is what i’m putting into 2013.  i mean really.

20130104_082931

this particular bowl was made with unsweetened vanilla almond milk, real vanilla, vanilla creme stevia, and topped with bananas, chopped almonds, and a sprinkle of cinnamon <3

fitfoodiele’s BBO (basic bowl of oats)

the stuff:

1/2 cup rolled oats

1 tsp of pure vanilla extract

1 cup of unsweetened vanilla almond milk

do this:

bring the almond milk to a boil, add the vanilla, then add the oats. stir them around until every oat is wet lol, then turn your burner on low.  after 3 minutes it’s pretty much done!  i like mine not too lose, and not too tight.. so if a little liquid left is left that’s cool wit me.

**this is THE most basic way to make the oats…like ever.   when i post recipes in the future, this will almost always be the very base of the recipe…before i go crazy and start adding stuff all willy nilly.   sometimes i like to use 1 cup of almond milk + 1 cup of water which makes for one big huuuuuge bowl of oatmeal.  you know oats expand  in volume and soak up alotta the liquid it’s cooked in, so it’s like you’re eating more but really, you’re not.  i usually add a heaping tablespoon of cinnamon in there too- i like A LOT.  now, the toppings are endless i tell you, ENDLESS.  i usually do bananas (as if you didn’t know lol) but apple chunks and raisins, and blueberries work well as far as fruit goes, and all kinds of nuts pair well too.  my fave are almond, pecans, and pistachios.  a lot of people throw in a big scoop of nut butter (PB2, the real thang, almond butter, etc.) which adds incredible flavor. add what ya like!!!**

20130104_082920

here’s the break down on the types of oats so you won’t be in the bulk aisle lookin’ clueless:

old fashioned – not that great for smooth pancakes UNLESS you grind them first.  even when making a bowl of regular oatmeal, they don’t soak up much liquid, and take the longest to cook.

quick cooking / rolled oats  (1-3 minute cooking time) – these are pressed old-fashioned oats into thinner flakes which makes for a quicker cooking time, hence the name.  they work best for pancakes IMO. makes a huge difference in the texture of your cake.  buuut again, if you grind them up first, it doesn’t really matter now does it!

steel-cut – chopped up oat groats. (oat groats are the real whole oat, hulled and unprocessed). they produce a rougher, chewier bowl of regular oatmeal and take as long as old-fashioned oats to cook…maybe longer.

instant – i don’t do instant and you shouldn’t either

20130104_120446

after breakfast, i hit the gym and worked on my core, glutes, and ended with a little cardio.  you remember that ab machine that looks like a little tire wheel with two handles on either side? we had one of those growing up lol! the thought of my parents attempting to use that thing back then is HILARIOUS to me now.  matter fact, i don’t even remember anybody using it correctly, ever.  i like the cooler looking one above- i saw somebody else with one and grabbed one too.   i did 5 reps of 10 of these and was feelin’ it by the 2nd set, MY GOODNESS.

20130104_143911

then, grocery shopping! yeah i had a pretty awesome day! got lots of fresh produce and restocked Produce Island (e.g. my kitchen island, even though you prolly figured that out).  i have a lot of work to do in my test kitchen this month:)

20130104_144437
aaaand of course i restocked my snack corner too. all good stuff, i promise.

sooo, yesterday i made nachos for lunch. not just any nachos though,

20130103_122416

grilled, JUMBO shrimp nachos!!!!

20130103_122407

i marinated the shrimp in liquid aminos, smokehouse maple seasoning, fresh chopped cilantro, and black pepper for a few minutes first,

20130103_123544

then went to work with my grill pan.  before i started that, i sliced up  some of my low carb La Tortilla Factory soft wraps, put them on a baking sheet, and cooked them until they were crispy.

20130103_122423

then…the magic happened.

20130103_125656

semi-homemade chips, shredded kale, chopped roma tomatoes, green onion, cilantro, shredded almond cheese, and SCRIMPS! i only had one small corner of almond cheese left and nachos MUST HAVE CHEESE! i scrounged up what i could, but they were still so good!  next time, way more cheese. way more.
20130103_125733
i also made some homemade guacamole:  avocado, tomato, cilantro, liquid aminos, pepper, and lemon juice.

KILLED IT!

20130102_093601

so i taught my very first class of 2013 this past Wed- i subbed a weight’s class for another instructor and got my burn ON baby!

20130103_064658
i also realized that this is the beginning of my 5th year as an instructor. MY how time has flown. i have super-duper BIG news for my Houston area readers and gymers- just you wait!!

all these progress and throwback pics on IG have me going back looking through my own photo archives these days!  i came across this one from Sonny’s frat brother’s wedding in 2011.

177

fluffaaaaay!  and look at my posture:( however, my boobs were so heavy from breastfeeding.  i was darn  near hiding behind Sonny!!   i felt and definitely looked self-conscious and unconfident. i said on IG that Chiso was less than a year when we took this, but i later realized that he was 4 months old at the time.

20130101_124212

now, it didn’t take me an entire year to trim down to this size, but it’s something very gratifying about being able to look back to see where you WERE.  one bikini comp down and a current, consistent exercise/nutrition off-season regiment and i’m grabbing a fist full of that dress behind me cause it won’t stay up on its own these days!  i can finally say i’m content with my body; i’m staying right here. HEY Chiso, dang!!!!!!!

20130101_124209

never, ever limit exercise to physical benefits only; i tell people this over and over again!  exercise reduces stress… it’s an escape.. it’s a form of therapy.  along with looking fitter, it makes you FEEL better emotionally too.  i even sleep better!  this is why i was ITCHING to get back into the gym after having to sit down and recover from my dental surgery.  all of  those reasons above!

so, other than the physical benefits, WHY do you exercise?  (2013 gym newbies AND veterans!)

is there a whole foods on the strip?

why yes, yes there is

alright, i’m giving the blog-as-i-go thing a try for a few days- i have a ton of pics, but some of them are in my phone, and some in my camera. and guess who left their camera usb adapter at home?  i always forget one thing when i travel, and well, this time it’s that darn cord. SO, instead of waiting until i get home and doing one big post like i normally do, i’m bloggin’ what i got so far minus a few camera pics.  Chiso’s taking a nap and i’m bored.

we are in the fabulous Las Vegas, NV for Musclemania Fitness AmericaWeekend – Sonny is competing in his last show of the year!

Chiso was NOT feeling his first plane ride.  i’m hoping and praying the return flight is a million times better.  our plane touched down around midnight, and after getting our luggage, renting a car, etc., we finally made it to our hotel, tired & hoongry.

Matt & Sonny had an after-the-club breakfast in the hotel cafe,

and they brought mine up to the room since Chiso needed to be put down for bed immediately.  i had whole wheat toast, egg whites, hash browns, and the saltiest piece of ham on earth

energized after some much needed rest, we were ready to get into something the next day.  while Sonny attended meetings, waited in super long lines (he’s somewhere under that water slide)

does media interviews, take pics and all that jazz,

Chiso, uncle Thew,

and i,

hit the strip!

i justified our Whole Foods trip by scoping out the room service menu for kicks like i always do and ummmmm….. half a grapefruit for 3.75? only in vegas.

1st up, we fueled up for all the walking we were about to do!

of course i had a sandwich.

whole wheat, grilled chicken, avocado, tomato, cucumbers, mushrooms, provolone cheese, and stone ground mustard, pressed. classic!

let the walking begin!

we saw the famous welcome to las Vegas sign, the m&m store, the underground forum shoppes in Caesars Palace, fashion show mall… the usual, lol!  we also stopped at The Bellagio to catch the water show and have dessert.

Chi watched and sat still like a big boy for the entire performance.  he deserved a standing ovation from Mommy!

or some sugar-free strawberry gelato, that works too.

Matt got a 3 layer mini cheesecake that was so creamy.

and fancy.

oh just eat it already.

after more walking, we headed back to the hotel for dinner @ The Grotto.

no idea what kinda bread this was but it was so moist and chewy on the inside, and crunchy on the outside.

Matt ordered a shrimp pasta with asparagus and tomatoes in a cream sauce dish covered with cheeeeese,

and i got the seared ahi tuna with grilled red potatoes, asparagus, french green beans, red & yellow tomatoes, and a boiled egg.  the host hotel restaurants have special menus just for fitness america weekend, and i ordered from that since i knew it would be super clean and healthy.  even still, most restaurants will accommodate your requests (omit oil, butter, dressing on the side, etc.) if you just ASK!

aaand i ended the day with a bed time snack that Sonny can’t have yet-

sweet, all natural, Indiana kettle corn!  i grabbed a bag from WF earlier cause i knew we’d get the munchies later and ordering room service is out of the question.

ok that went fairly well- i’ll try again during the next nap.

turkey day 10k + november goals

happy NOVEMBER &  friday :)

let’s celebrate.  have some pancakes.

i made a big one for Chiso’s breakfast yesterday.  since he hadn’t had them in a while (we switched to Ezekiel’s cinnamon raisin bread for a little bit) he killed the whole thing in a few minutes.

it was topped with some cinnamon and a drizzle of walden farms pancake syrup.

SO, what are your fitness and nutrition goals for this month?  how often do you make goals anyway?  do you even make them? daily? weekly? monthly? making goals has become an incredibly useful tool for me now that i’m in off-season with my competition training.  whenever i write ANYTHING down (grocery list, an event, reminder, whatever) Sonny feels the need to remind me what year it is and to document things electronically.  well sometimes i don’t want to!  i mean seriously.  i enjoy writing out my grocery list by hand and crossing off items one by one while i’m at the store.  i just do.  i’m pretty sure it’s cause my mom did/does that.  i also like to group all my items together (frozen, produce, etc.) as i take them out of my basket and put them on the belt at checkout.  Sonny finally understands this and lets me do my thing   anyway, it will take me longer to type my entire list into my phone… and then what if it dies!?

i did a reverse selfie (which is way freakin harder to do than i thought) of my october progress which was to eat as clean as possible and to add more definition all over, especially my abs.  i stuck with my clean eating for the most part even though these weekend parties filled with pizza and cake got me a few times!   but i stayed inside my 80/20 rule, so it’s all good.  i also upped my weight training and decreased my cardio.  i’d love to stay where i am right right now so that when i compete again, i’ll be at an acceptable ‘starting’ place.

le’s NOVEMBER 2012 fitness and nutrition goals

  • continue to stay on track with my meal plan and clean eating
  • ENJOY Thanksgiving to the fullest – no meal plan, scale, nothin’ on that day
  • Run this 10K on turkey day —-> http://turkeytrot.shelteringarms.org/  and beat my current PR!
  • Add HIIT back into my current workout routine (sprints 2x’s a week)
  • Take my ab workouts more serious

ok those are mine!  whether you write them or type your goals, just make some.   i’m not just running a 10k so i can eat like a crazy woman on TG, but  i already planned to workout anyway.  i know my gym class will be canceled like it is every year, but i’d totally be there at 5:30am sharp for anyone who wanted to get in a great weight workout that morning.

have you ever worked out on Thanksgiving Day???

my little Ruggles Green lunch date from the weekend inspired me to throw a butternut squash in our grocery basket.

i threw the whole thing in the oven for about 20-25 minutes on 400 degrees.  after it cooled, i cut it in half, long ways.

i think i got pretty darn close to their Famous Butternut Squash.  in terms of taste, not looks, apparently.

at least Chiso thinks so- he liked it *wipes forehead*.   i used:

squash:

  • walden farms pancake syrup (instead of the maple syrup)
  • i can’t believe it’s not butter spray butter
  • few dashes of cinnamon
  • dash of salt

topping:

  • crunchy lite granola (bulk bins at HEB/Whole Foods)
  • coconut crystals (found at Whole Foods)

that’s all that’s in there and it was too simple to be that good.  i didn’t measure a thing though and just threw it together, fyi.  i was gonna cut it into chunks and throw it in the blender, but it was soft enough to just whip/mash up in a bowl by hand.  also,  i didn’t have graham crackers like the original recipe, but Sonny’s lite crunchy granola worked out fine.

does he look warm?  bless his heart.  i hadn’t been outside since my eeeeearly morning workout, so i assumed it was still pretty cool out.  not quite.

i took him out of the jacket and he took the hat off himself lol.  Moms, if you don’t have a jogging stroller, INVEST in one.  no gym membership required.  your post baby body journey starts with some good ol’ walking.  you’ll be jogging/running again eventually though, and you’ll be able to knock out two birds with one stone!  family time and exercise.  never let your little one be your excuse…only your reason.  we were blessed with this stroller as a baby shower gift and i am SOOOOO grateful for it.

i used the last of that fresh atlantic salmon we bought to make breakfast tacos for meal #4 that night.  i put this concoction together in my head while on our evening walk- fresh salmon, avocado, egg whites, shredded almond cheese all on a Ezekiel sprouted grain corn tortilla. yum!  the tortillas pretty much broke apart once i picked it up :( , but hey it all went to the same place.

we topped them with cilantro and salsa first.

after that, i went to my freezer for the next best thing since we’re outta salmon right now- tilapia!  i baked a few pans of garlic and herb tilapia in the oven so i could prep some more meals to get us through the week.

i also made so fresh steamed asparagus for our green vegetable. lots of lemon pepper and Pam.

meal #5  for that evening consisted of spaghetti squash i baked earlier in the week, tilapia, and asparagus. i just rolled up two fork fulls of the squash and made it look like little pasta nests.  then i sprinkled them with garlic and herb seasoning and some dried parsley.

Chiso and i are gearing up to support Sonny in his 2nd bodybuilding show this weekend!

we are so ready to cheer him on :)

a trophy would be awesome, but i get to bring the man home with me! whoop whoop!

grocery finds

i know variety is important, but my breakfast just ain’t right without my oats (either in a bowl with toppings or in my pancakes).  i NEED them. i’m still finding new ways to eat them every single day.

i made saturday morning’s bowl of oats with Silk unsweetened vanilla almond milk, a few drops of vanilla creme stevia, lots of cinnamon, half a banana, some chocolate pb2, and some unsweetened coconut flakes.

and my daily egg omelette of course topped with fresh cilantro and pineapple salsa.

i did about 30 min of fat burning cardio on the elliptical + an upperbody weight workout and high tailed it outta there. we had a few birthday parties to attend as well as grocery shopping to get done, the usual!

i’m doing a fitness challenge via IG (Instagram) right now (@fight_for_healthy).  my goal is to add more definition to my body overall, especially in my abs.  also, i plan to eat as clean as possible for the month of october.  but these birthday parties though…  expecting big changes next month just in time for the Thanksgiving holidays. oh boy.

for meal 2, i cracked open some canned salmon (fresh is too high right now @ HEB)  and put some on a 3-seed La Tortilla Factory soft wrap along with some fresh cilantro, rice cheese, avocado, tomato, smokehouse maple seasoning, spicy mustard, and some fig butter. i  microwaved it til the cheese melted and devoured it. two of them.

in the car on the way to the party, i had meal 3 which was a salmon sandwich on raisin Ezekiel bread with the same toppings.

after running around chasing this boy the whole darn time, let’s just say i’m so grateful to be in good shape!  trouble finding workout motivation?  keep your babies (or future babies) in mind.  thank me later.  i see why those child leash thingies were invented!!!

i see to it that Chiso eats nutritious, healthy stuff all day long, so of course he (we) can partake in party food every now and then.  didn’t i just say i was in the middle of an october fitness challenge lol? come on,  it’s not a party without cake.  i split a piece with my boo and we had a blast partying with family.  and it was the non-dairy whipped topping, not the super, duper sweet sugary kind ;)  just go with it.

after the par-tay, i guilted Sonny into going grocery shopping with us since the HEB i frequent was nearby.

in addition to my normal goodies, i got some other cool items i’m so excited about trying!!

quark. i learned about quark through a few Aussie IGers.  i had been looking for this stuff for weeks- not all HEB’s sell it and few people even know what it is.  it’s comparable to greek yogurt as far as taste.  nutritional stats? not so much.  not a lotta protein per serving, but very low cal, fat, carbs, and an awesome 0 grams of sugar.  ever notice just how much sugar your greek yogurt contains?  yep, even the plain varieties.

not too shabby.  non-fat ricotta cheese is another alternative to add to your fresh fruit instead of cottage cheese or yogurt.

next,

one of my guilt-free treats.  i make a two scoop sundae with vanilla maple flavored Artic Zero (150 cals per PINT)  with some soy whip. and sprinkles.  recently, Artic Zero underwent some scrutiny for incorrect nutritional stats and ingredients on their labels.  they ended up adding milk to their ingredient list (for some reason it still doesn’t bloat me like real ice cream though) which upset a good amount of their consumers.  seriously… even if the stats were off a bit, come on.  can you eat a freakin entire pint of ANY of the other brands for less than 150 cals, total?  it’s not that biga deal my goodness.  i’m still a fan and will continue to be! i also drizzle some healthy chocolate sauce (will share recipe soon) on top and it’s an incredible, low cal, carb, guilt-free, bowl of yumminess.

i can dig it!   a little expensive for the size of the bottle though.

i taste tested it solo, and it tastes exactly like reg. ketchup. no funny after taste or any of that.  but it wasn’t enough.

so i baked some Ore-ida fast food fries. it passed.

ok…i had to share this as i’ve been asked a few times what my cheat snacks are…and this is one.  sweet and salty chex mix.  it’s even good in a bowl of almond milk!!!!  we passed by a big shelf of it and as i talked myself into not even looking in that direction, Sonny picked up the biggest bag they had and threw it in our buggy.  and i let him.

ok focus!!! back to the good stuff that’s good for you and to you.  we got plenty of fresh fruits and veggies as they are at the top of my list, every time.  strawberries, blackberries, bananas, grapefruit, apples, roma tomatoes, zucchini, sweet potatoes, red potatoes, and avocados this trip.

ooooh Ezekiel… i love your bread and now i must try your cereal.  with my silk unsweetened vanilla almond milk of course. match made in heaven.

and the award for the cutest bag of popcorn ever goes to Angie’s.  it definitely got my attention! sure i’m a stove popcorn popping advocate, but as healthy and fun as this bag looked, i just had to try this kettlecorn.

even vegan.  impressive.

what else can you do with an old nike box? use it to hold all your snacks. ghetto? prolly. effective. ya.  i like to keep things out where i can see them.

try a new item on your next grocery shopping trip!
