that’s amore – homemade whole wheat pizza crust + med ball moves

what.a.morning.

 i woke up at 2:30am randomly and just couldn’t get comfy again nor could i go back to sleep! daylight savings time + a kickboxing 27 week fetus = one tired mama.  praying & hoping this doesn’t become a normal occurrence.

getting to 5:30am class was something like pulling teeth but we made it!  smiling up there in the pic cause my workout was finally over after that :lol: .  i taught Total Conditioning for 1 hr as usual and then did these exercises with the med ball and bands afterwards (listed clockwise):

  1.  medicine ball squat throws against the wall: 4 x 25
  2. med ball squats w/ explosive jack - band is optional but come ooooon! USE IT! 4 x 25
  3. burpees with overhead dumbbell presses. modify where needed! walk back if you are preggo or nursing an injury if you do not wish to jump. it’s your workout. 3 x 12
  4. 90 degree wall sits with extended med ball (see top pic).  hold this guy for as long as you can. your arms will most likely give out before your legs, so let them drop but stay up until you can’t take it anymore. HOLD until it burns ;)

extra lean ground chicken, red onion, red bell pepper, green bell pepper, grape tomatoes, fresh cilantro,  homemade pizza sauce, and plenty of shredded provolone.

i’m saving my very special crust recipe for my homemade pizza cooking class so you’ll have to join me on March 25th to get that one!

homemade whole wheat pizza crust

the stuff:

  • 1 cup white whole wheat bread flour
  • 1 cup whole wheat pastry flour
  • 2 tbsp extra virgin olive oil
  • 2-3 tbsp coconut sugar (or agave nectar or honey or pure maple syrup)
  • 1 cup warm water
  • dash sea salt
  • 1/4th tsp fresh minced garlic
  • 2 tsp dried Italian seasoning
  • 2 1/4 tsp yeast (1 envelope)

do this: 

ok, i actually had steps listed out for the beginning part ( :shock: i know) but SEEING it done is the easiest way to actually get it. i don’t want to scare you guys from making it and i haven’t created my own video yet, so i’m going to use a popular youtube vid that is very similar to what i did. also, i added the dry seasonings and garlic in with the wet ingredients.

  1. NOW you’re ready! let the dough rise for at least 2 hours minimum. (whip up a ball right after breakfast)
  2. preheat your oven to 500 degrees and put your pizza stone or baking sheet in the oven NOW.
  3. on a flat, clean, floured surface, drop your round dough ball in to the center.
  4. use your fingers to press the dough out as wide/thin as you’d like it. my Sur la table instructor advised against using a rolling-pin.
  5. sprinkle your pizza paddle (or a pan/cookie sheet with no edges) generously with dry, yellow corn meal
  6. pick up your dough and place it on top of the corn meal bed. is it slide-able? rock the pan back and forth and see.
  7. top your pizza however you’d like. (sauce, cheese, veggies, meat, cheese…but remember less is more! that doesn’t apply to cheese though)
  8. do a slide check one more time, then open your oven and transfer (rock vigorously back and forth til you’ve successfully moved it over) the pizza paddle onto the already HOT HOT HOT pizza stone or baking pan.
  9. needs to bake about 7-9 minutes at most. cooks super fast!

nutritional stats ONLY IF you use the entire dough ball and make a gigantic pizza cut into 8 slices:

i find that cutting the ball in half first makes the perfect size pie for 2 people. in that instance, stats for 1 slice when cut into 8:

you can refrigerate the other half for 2-3 days and even longer in the freezer.

the response from my last post was incredibly overwhelming.  i’m already hormonal yall, jeez!!!! some of you even shared your heartfelt, REAL life preggo journeys with me.  it just reaffirms the fact that all women have a story to tell.  we all jump through, over, and under hoops all day, every day.  that’s life.  God is true to His word though!  i’m honored and elated that women were able to connect with me on a more personal level and get encouragement and inspiration to keep pressing through their own struggles.  we all need it.  anytime you ever feel the need to share with me or ask any particular question about my journey, do so without hesitation!  le@fitfoodiele.com.  again, thank you all for reading and commenting openly and privately.  to God be the glory.

the Rodeo Run went down yesterday morning!  i picked up my race packet Friday and brought along a list of 3-year-old b-day party locations to check in the area.  yep, Chiso’s getting a birthday party this year.  we did a small gathering at the house last year for his 2nd and remember i went batty for his 1st  so now it’s time to venture out.  i think. suggestions? email me.

so about that zucchini fritter recipe i own ya…. ugh, they are so incredibly tasty.  Sonny took a bite of one and was like, ‘there’s no meat in this?’

pan fried curry zucchini fritters

the stuff: (source)

  • 3 large zucchini, shredded/grated
  • 3 green onion, chopped
  • 1/2 cup almond meal or flour
  • 1/2 cup light parmesan cheese, shredded
  • 2 eggs, beaten
  • 1 egg white, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp curry powder
  • 1-2 tbsp liquid aminos
  • 1 tsp cracked black pepper

do this:

  1. use the larger holes when grating zucchini and shred them onto a dry cup towel.
  2. use those muscles and squeeze out all the liquid possible.
  3.  add all ingredients to a large mixing bowl and incorporate well.
  4. heat a pan on HIGH coated with nonstick cooking spray (or pour a tsp of olive oil into the pan and spread it around)
  5. place heaping tbsp size scoopfuls of mixture onto hot skillet and press down flat.
  6. convert heat to LOW and cook for approx. 5 minutes on each side until golden brown and done. be patient.

the Tin Woman went to yoga again this weekend. it was the usual, getting dizzy, falling over, body parts falling asleep, all that jazz. i’ve been keeping up with it but the struggle continues and won’t stop.  time to make that switch to prenatal yoga though (the classes are offered at my Lifetime Fitness) cause some of the Vinyasa moves weren’t too belly friendly.

here are some of my weekend eats:

  1. 1. friday night fro-yo concoction. it’s been a while! did the dairy bloat me?  who knows :lol:
  2. fresh berries from Sprouts on sale this week.  the sales change every Wednesday in Houston (at HEB as well) so you can go on that day to take advantage of the old and new sales. double whammy.
  3. a 6 Pack USA approved meal of chicken breast, asparagus, wild rice, unsalted & roasted almonds, and strawberries. this is typically what i’ve been having for most of my meals or some variation of it (along with my egg sammiches!!)
  4. a southwest salad from Central Market (roasted corn, black beans, spanish rice, romaine lettuce blend, cherry tomatoes, tortilla strips & fried plantain chips (that i picked out), and sweet ancho vinaigrette on the side.
  5. a real crab roll from Central Market with avocado and cucumber.  i picked up the imitation crab roll until i saw the real thing just was a buck more. sushi is such a great balance of protein, carbs, and fat.

the colors at Central Market are always so VIBRANT! we actually stopped by after church just for the Chocolate Fest going on from Feb. 5th – 18th. Sonny and i have gone every year since we’ve been married around V-day.  if you’ve never been, GO! they have a chocolate fondue fountain (at our location anyway) and samples galore throughout the store.

the stuff:

  • 1 1/4 cups whole wheat pastry flour (or cake flour or whole wheat flour or whole white wheat flour)
  • 3/4 cup coconut crystals (or organic brown sugar or coconut sugar)
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1/3 cup melted coconut oil
  • 1/2 tsp white vinegar
  • 1/2 cup unsweetened vanilla almond milk
  • 2 tsp vanilla

do this:

1⃣mix dry ingredients with dry in one bowl.

2⃣add the vinegar to the milk and set it aside.

3⃣mix eggs together in separate bowl. then add sugar, vanilla, and oil.

4⃣add the wet mixture and the milk into the dry batter a little at a time until fully incorporated.

5⃣use any pan you’d like! bundt, cupcakes (14-18 min), or a pound cake loaf like i did (30-33 minutes) in a 350 deg oven. when an inserted toothpick comes out clean, it’s done.

meringue topping: a complete experiment

  • 4 egg whites
  • 1/4 cup warm agave nectar
  • 1 tsp vanilla

i whipped the egg whites until stiff peaks were formed, then i added the warm syrup and vanilla and kept whipping. it turned a pearlescent white and was so soft and fluffy! you have to eat meringue right away though..  i didn’t use it all and it totally didn’t last / hold it’s structure through the night.

i also made a vegan butter-creme using Earth Balance Organic Whipped Buttery Spread, powered sugar, and vanilla that actually turned out too good  but was too sweet.   some of the fresh fruit i bought earlier went on top and sliced almonds on the side. that’s another option.

 i cut my loaf into 12 servings; macros for 1 slice: 169 cals, 10g fat, 17g carbs, 2g protein.

as of 20 minutes ago, my online defensive driving class is done. WHOOP.  i was falling asleep and nodding off all through those last few chapters and videos but as soon as i passed my test i woke up. :lol:  that’s how it goes. in fact i’m so wired it’s over that  i’m listening to my boys snore and blogging after midnight which never happens. there is always a reason i am randomly inspired to write though, always.

i have a secret.

it’s always been that way. however, i don’t want a cookie-cutter, sunshine, bubbles, infinite happiness all-day-every-day, boring blog. that’s not life and that’s not real.  people are inspired and blessed through experiences and  there are several things that have happened to me along my competition and fitness journey in general  that the Lord wants me to SHARE.  so i will.   and whatever else He puts on my heart to type.  post by post, it’s coming.

learning to love yourself regardless of your current stage/size is one of the most crucial and beneficial gifts that a person can give themselves.  it’s also one of the most difficult tasks for a person to conquer wholeheartedly.  improving yourself physically is great and can do wonders for your self-esteem and confidence, but it shouldn’t define who you are.  your character and how you treat people will always trump any physical characteristic.

hearty turkey casserole + fit foodie lean legs workout

while i was away at the BE Conference (that post is in the works), my FITzee Foods orders came in!  thankfully Sonny only got to one meal before i got my hands on them :x.  i now have a new favorite to add to my list i wanted to share with ya:

Mom’s Hearty Turkey Casserole

layers of sautéed vegetables, lean ground turkey, rich tomato sauce, and mashed yams all baked to perfection and sprinkled with mozzarella cheese!   low carb and gluten-free.  it was the first meal i cracked open and it reminded me of a healthified shepherd’s pie.  this experience was over way too fast.

*stats: 353 cals, 16g fat, 20g carbs, 5g fiber, 29g protein*

then i hit the gym to combat the massive amount of sugar i ate over the weekend :shock:

i created that lean leg routine up there while using the limited hotel gym at the conference, and did it again that day.    grab two dumbbells (preferably 10′s or higher) and a sturdy wall to lean on for the wall sits and have at it.  3-5 times through, no breaks!

afterwards, PWO grocery shopping.  which is always a bad idea for me.  i can never wait until i get home to open something up.  you can eat them in the car. you can eat them on a chair. you can eat them ANYWHERE.  get those greens in :)

BE countdown

and we’re back!  Sonny and i celebrated wedding anni #6 in South Beach this past weekend.  you know i’ll be making a nice little blog post about it when i get my life together but check out my Instagram feed for a few highlights in the meantime.

we got in late monday night after picking up Chiso from his grandparents house and i went to bed feeling like i shoulda got a sub for my 5:30am class the next morning.  after not picking up any dumbbells in 5 days straight and eating everything under the blazing Miami sun, um i needed to be there :shock: . i felt crappy on the way and not even my cup of coffee did much to help but i left the gym feeling the exact opposite.  it always happens that way!  then i crashed when i got home. really hard.

one great thought or action breeds another, so start your day with POSITIVITY!  an uplifting song, a scripture, prayer, or a motivational quote or all three.  they have an incredible, noticeable impact on the rest of your day. then pair it with something healthy and nutritious to go in your body and you are well on your way!

i owe you like three recipes!!! let’s talk about these apple pie pancakes real quick though.  not to be confused with the apple pie oatmeal in my ebook (shameful plug).

hot apple-cinnamon pie  oat bran pancakes

the stuff:

  • 1/2 cup raw oat bran
  • 1 tsp almond extract
  • 3 – 4 tbsp unsweetened vanilla almond milk
  • 1/2 tsp baking powder
  • 2 heaping tbsp unsweetened apple sauce
  • 2 egg whites
  • 1/2 cup chopped red delicious apple
  • 1 tbsp coconut crystals
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon

do this:

mix everything in your blender EXCEPT the apples, coconut crystals, and lemon juice.  add as much almond milk as you’d like; i dont like super thick batter so i add about 4-5 tbsp myself to stretch it and make as many cakes as possible.  cook up the batter in your medium heated, no-stick cooking spray coated pan for 3-4 minutes each side.  heat a small saucepan over a medium flame and add your apples, lemon juice, and coconut crystals all at once.  stir until crystals have melted a bit but make sure it doesn’t burn! it cooks fast.  top your cakes with the hot apple mixture.  drizzle them with some zero calorie Walden Farms pancake syrup.  ready, set,

go.

imagedo you believe that?  this phrase has been echoing in my mind since the day i read it, several weeks ago.  i said earlier on IG that i accepted my first formal health and fitness speaking engagement and well, i can honestly say that this is THE first public speaking event i’m actually excited about!!! prolly cause it’s concerning health and fitness :) .  i’d be lying if i said i wasn’t nervous, but hey, if it doesn’t challenge me, it doesn’t change me.  time to start SPEAKING along with all this typing!  if God brings you to something, He will surely take you through it. keep walking in faith and reaching for your dreams, friends… if i can get my sometimes timid and scary behind up there and do the one thing that terrifies most people, YOU CAN TOO.20130725_080411

super ripe bananas mean what? some baking is about to go down.   for breakfast this morning after my class, i made some banana oatmeal mini muffins.  i had the boy in mind- he loves these things and as long as i keep them coming, he will keep gobbling.

oatmeal banana mini muffins:

the stuff:

  • 1/2 cup ground rolled or quick oats ( or oat flour)
  • 1 small super ripe banana, mashed
  • 1 packet stevia
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 cup unsweetened apple sauce
  • 2 tbsp greek yogurt
  • 1/4 cup egg whites
  • pinch of salt

do this:

mix real good until smooth!  if you’d like to use your food processor, that’s cool too.  i kinda liked the banana chunks in each bite though.  fill your tins 3/4 of the way up and cook these guys for 7-10 minutes in a 350 degree oven. i topped mine with a banana slice, a drizzle of chocolate PB2 (mixed with unsweetened vanilla almond milk), and a dark chocolate chip.

i received some outstanding and heartwarming news this past weekend that i’d like to share with you.

‘I remember the day that I decided to start living a healthier life; it was the day after I got laid off from my corporate career. Before that, I thought I was a pretty healthy individual. My diet consisted mostly of fruit, veggies, meats and a little water. Of course there were the indulgences, such as chocolate (I am sorry, but who can resist?) especially when you sit in a cubicle for hours at a time. I did the occasional cleanse and I looked healthy but I simply wasn’t. I knew I needed to do more but HOW?! I didn’t want to spend my life writing down everything I ate or spend my time waiting for cleanses to end. I needed something else; I need a lifestyle change…a new way of looking at my health…. I realized that if I was going to make a lifestyle change, my perspective had to change as well. Instead of wanting to lose weight…I decided that feeling great was now going to be my motivation. During this transition, so many things for me changed; the way I lived, the way I socialized and the way I thought! I found myself wanting to change everything about me, IN A GOOD WAY, and I did! I grew very fond of a childhood friend who you guys know as FitFoodieLe. Her obsession with favorable food made me feel like I could actually make this a permanent change and enjoy every minute of it. I watched Leah blossom in so many aspects! I was drawn to do better, achieve more and conquer all that I can because she was making her dreams come true through a thousand pictures for everyone to see. Talk about inspired and motivated, I felt obligated and that obligation forced me to obtain my Group Fitness Instructor certification! Everyone that knows me, knows I absolutely LOVE Step…it’s an ancient workout but with a great instructor, great audience and some great music you are forced to have a great,long-lasting workout. I am so honored to know through the hard work and dedication of a super gorgeous sister, mother, friend, daughter, wife and motivator; I was able to achieve my own dreams as a Step Aerobics instructor!

The Color Run 5k – Houston

what.a.BLAST this morning!  this was my first time participating in the The Color Run 5k and imo,  everything was set up perfectly.  because i have a goal of hosting my own 5k one day, i took special note of well, everything.  instead of just showing up to run, i tried my best to pay attention to all the minor details that go into making a 5k (or any distance really) so great, fun, and memorable.  and BOY am i overwhelmed!!! but hey:

packet pickup was at Rei and i had never even been inside the store until then.  there was soooo much Color Run paraphernalia to choose from it’s not even funny!  shorts, fanny packs, drawstring back packs, tanks, frisbees, bandanas, socks,

pre-race breakfast was an egg-white omelette (with some shredded and melted parmesan cheese that was thrown on top as it cooked), fresh spinach, tomato, and honey mustard on Nature’s Own double fiber wheat bread.  no oatmeal this time as it can come back to haunt ya real quick if you know what i mean, especially on longer runs.  no pun intended. L O L.   however 5k’s are over rather quickly.

i had NO idea how popular this run was!!!  our team was set for takeoff at 9am, but we didn’t make it all the way to the front as it was just too crowded.  to avoid so many people on the course at once, they created several ‘waves’ and our start time was unexpectedly pushed back more than a little bit.  this was terrible because somebody had to drive back across town to teach class in less than 2 hours. yep….me. when i signed up for the race i was so excited about participating i forgot about my class!!!! pushing it, yes, but i knew both could be done.  i can’t and won’t let my members down. or waste 50 bucks :lol:

i heard somebody was not feelin’ the weather change this morning. it dropped to around 50 degrees outta no where.

but we finished strong. it was bob and weave, stop and go the entire way. this was the first untimed race i’ve ever participated in and it was a true fun run with an emphasis on fun! people were clearly not concerned with breaking any PR’s lol.   it’s a huge, family and friends type event for sure, and i DEFINITELY recommend this race for anybody’s very first 5k.

going and coming, literally. i missed out on tons of pictures and good ol’ fashioned color fun and could not stay to meet up with and party with the other runners at all:(  you live and you learn. this was our first Fit Foodies event and we have only just begun to scratch the surface.  so seriously,  NO WORRIES if you weren’t able to make it this morning, there are too many races coming up to dwell on one!  just know that plenty of advanced noticed will be provided next time, you have my word.

we sped across town and made it just in time.  did i shower first? heck no! i didn’t have time anyway! 1 hour of total conditioning and a family shoulder workout later,

alright…had this dressing tonight and it’s  definitely gonna be added to the FFL approved list!  Walden Farms Raspberry Vinaigrette.  it’s great as a salad dressing, but i’m positive it would work as a marinade for fish or chicken too.  try it! i like.

it started with this awesome quote above by Jim Rohn. when a quote hits home and find myself reading it over and over again, i GOTTA share it.

if you’re satisfied with being unsatisfied, stop complaining and UPROOT YOURSELF.   take comfort in knowing that you have the power to change your situation for the better, especially if you are unhappy  with the way things are.  less talking, more action!!

we met up with a few of our 6 Pack USA clients that morning for body fat testing and progress checks, then hit the gym, together! we make the effort to work out together at least once a week, minimum.  it’s our kinda date.  this man pushes me like NO OTHER.  buttons and all :lol:  but it brings out the best in me as well as fantastic results.  i always see more progress in my body working out with Sonny vs. solo.  working out with a partner (or sig. other) provides:

*support

*encouragement

*partnership

*motivation

*accountability

*companionship

*friendly competition

choose a workout partner that truly pushes and inspires you to do better and go harder.  friends don’t let friends SLACK!

also, being able to see Sonny across the (weight ) room  is….nice.  even if we are both doing our own thing on opposite ends of the gym, i take comfort in knowing he is simply there.

afterwards, we went on another date.

to my fave Greek spot in Houston, Niko Nikos!  peak or off-peak hour, it don’t matter.  they stay busy because the food is that good.

i started with the greek salad- it’s automatic.  it was topped with a block of salty feta, calamata olives, tomato, red onion, peppers, and a splash of their famous vinaigrette dressing.  i usually get my dressing on the side, but they never load it on ridiculously and i have always appreciated that.  their salads are always cold, fresh, and crisp.

the salad was followed by a spinach & chicken pita loaded with lots of feta and melted mozzarella.

ok….as much as i LOVE me some cheese, it was too much.  i watch my sodium intake and because i had just murdered that block of feta on my salad, i was good in that department already.  soooo, i definitely took some off before i dove in.

i sure wish i had read this statement straight from their menu while we were there:

‘We challenge you to finish it: Gyros, Souvlaki, Chicken kebob served with tomato, cooked onions, bell pepper, mushrooms, tzatziki, yalandji dolma and two pita breads.’

cause Sonny KILLED IT.  maybe we could have gotten free dessert or something!? i’ll ask next time.

after church and teaching my gym class on Sunday, we sped over to a kiddie b-day party for Titus, the Engineer!  he turned the ripe ol’ ago of TWO. happy birthday big boy!

Chiso will be two in May, and i plan to do a similar type of party, meaning, somebody else will be doing all the work this time!  nothin like last year’s 1st birthday party at all!

i did a combo of grilling and roasting for my vegetables this week.

even had some egg-plant up in the mix!

i also made egg-plant ‘fries’ by slicing the starchy veggie into fry sized stalks, seasoning them with Mrs. Dash no-salt garlic & herb, and placing them flat on a baking sheet, 7 minutes each side. different and tasty!

roasting and grilling over steaming, ANYDAY.  brussels sprouts, multi-color bell peppers, and egg-plant for the next few days.

last nights dinner:

savory, protein-packed albacore tuna cakes

the stuff:

  • 2 cans albacore tuna, drained
  • 2 egg whites
  • 1 heaping tbsp 0% greek yogurt
  • 1 heaping tbsp course ground mustard
  • 2 tbsp red bell pepper, chopped
  • 2 tbsp yellow, orange, or green bell pepper
  • 1 tbsp cilantro, chopped
  • juice of half a lemon
  • 1 tsp paprika
  • 1 tbsp Mrs. Dash no-salt garlic & herb seasoning ( i like lots!)
  • 1 tbsp green onion, chopped
  • 1/2 tsp cracked black pepper


do this:

* in a large mixing bowl, combine all ingredients and mix very well.

* coat a medium heated pan with no-stick cooking spray

* scoop out some of the mixture and place it in the hot pan, pressing it down flat, like a pancake.

*cook 4-5 minutes on each side or until done and cooked through!

that topping is just 0% greek yogurt, lemon juice, garlic powder, and sriracha.  i didn’t measure, but play around with these components to make a dipping sauce to your liking!
