light whole wheat pineapple upside down cake & home HIIT moves

i had a little cabin fever Tuesday after my Total Conditioning class was canceled cause of the freezing temps and icy Houston roads. i have to be honest with you guys… home workouts are still hard for me to get through :shock: . being up in front of my class at the gym is my motivation to keep going and never quit. i know my members are looking up to me for motivation but they provide the exact same thing for me.  i’m 58 times more likely to stop when it burns when i’m at home. when i’m up on stage i don’t feel a thing. i just look at my HR watch an hour later and it says 800+ calories burned :lol: . anyway, i make up my class routines the night before so i pretty much did the whole thing without a step bench in my dining room and got a really good sweat going.

got the job done. try some of these exercises for getting your heart rate UP.

HIIT is great for burning fat while keeping all your hard-earned muscle, e.g. like sprinting on a track or treadmill.  you can only hold this high rate of intensity for so long, so you give it all you got for 30 seconds – 1 minute then recover. i do it gradually by starting with a basic exercise move then building on it from there (see example vid above).  my heart rate has to stay in the safe range of 140-150 since i’m preggo, so i don’t go full throttle anymore. but YOU can! if you’re not preggo.  if you have never taken Total Conditioning at Lifetime Fitness, YOU MUST.

on to one of my favorite cakes to eat growing up.  i don’t have it often at all and i didn’t want to have to resort to a boxed cake mix (even though they taste awesome too) so i created this one. finally got it right on the 3rd try.

light whole wheat pineapple upside down cake

the stuff:

  • 1/3 cup coconut crystals (or organic brown sugar or sucanat)
  • 2 tbsp organic whipped buttery spread (i used Earth Balance)
  • 7 fresh or canned pineapple slices
  • 3.5 **maraschino cherries
  • 1 whole egg
  • 2 tbsp coconut oil
  • 1/3 cup unsweetened vanilla almond milk
  • 1/3 cup fresh pineapple juice (you can use more milk if you’d like)
  • 1 tsp vanilla extract
  • 1 cup white whole wheat flour OR cake flour (i used King Arthur)
  • 1/4 cup whole wheat pastry flour
  • 2/3 cup coconut crystals (or organic brown sugar or sucanat)
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt

do this:

  1. preheat your oven to 350 degrees.
  2. coat a 9 inch round or square pan with no-stick cooking spray.
  3. melt and coat the bottom of your pan with whipped butter spread until even.
  4. next, sprinkle 1/3 cup of coconut crystals in the bottom of your pan on top of the butter.
  5. lay pineapple rings flat in bottom of pan; place cherry halves in center of the rings.
  6. mix egg, 2/3 cup coconut crystals, coconut oil, milk, pineapple juice, and vanilla extract in a large mixing bowl.
  7. in a separate bowl, mix flour, salt, baking powder well.
  8. slowly add your wet mixture to your dry and stir until all combined, no lumps.
  9. pour batter on top of pineapple rings evenly.
  10. bake for 30-33 minutes or until an inserted toothpick comes out clean.

let it cool, then flip the pan over and convert it onto a plate. see below.

**let’s chat. maraschino cherries are not healthy. no way around it.  i used them cause they just go with the standard pineapple upside down cake recipe. they just do. it’s not the same without them. you don’t have to use them though! chances are you don’t even have any in your fridge anyway. you can actually make them yourself using fresh cherries, or find another fruit to use. be creative.

i equate the area under the individual pineapple slice as one serving, so there are seven up there.

per 1 serving: 264 calories, 10g fat, 38g carbs, 4g protein.

not too shabby when compared to Betty’s stats ;)

so i’m taking my very first cooking class at Sur La Table tomorrow, aaaagggghhh!!!! and guess what we’re making?! the best food ever on earth. homemade PIZZA.  this class had my name all over it.  i plan to start teaching my own cooking & exercise classes as early as next month so i’m getting all the tips, info, and advice i can stuff into my brain. more details to come VERY soon- it’s pretty much February already :shock:

chevron houston marathon weekend 2014

quick announcement that may or may not affect you, my dear reader:

when i started my blog  2 years ago, i named it foodielovinle.com.  a few weeks later, i had a change of heart and felt that name didn’t really scream food and fitness, my two main loves. so, i changed it to fitfoodiele.com.  perfect! my site was searchable by either domain cause i purchased both of them.  howeverrrr, foodielovinle.com is about to expire and i’m willing to let it go, but not without telling you first! which means, if you have foodielovinle.com bookmarked in your web browser, it won’t work anymore as of yesterday. lol. better late than never.  it’s been a long weekend yall.  my site is not down or having any issues; you’ll just need to update your bookmark to http://www.fitfoodiele.com. that’s all! just a heads up! alright, on to the good stuff.

the Chevron Houston running events happened this weekend!  the 5k is now run on Saturday morning, and the half and full marathons are run on Sunday morning.  this was my very first time volunteering instead of running and i was just as excited to be up in the place and around all the action. there is always so much excitement in the air the entire weekend- from the expo inside the GRB to the actual races. the crowd, the energy… can’t get enough of that feeling.

Sonny thought i was crazy for leaving our nice warm bed to head downtown at 4 something in the morning to not even be running. hey, it’s just a runners thing!  i checked in with the race crew team, got a t-shirt, jacket, lanyard, and complimentary breakfast (a blueberry bagel and coffee that i just wanted to smell, not drink :shock: ) .  then.. they put this bright yellow ‘got a question? ask me.’ vest on me and things got crazy. i didn’t have a chance to study the answers before the test :lol: so i did the best i could. a couple of people caught me off guard with their questions and i pointed them in the direction of some help, but after that ‘where is the start line?’ was the only thing people cared to know. whew.

before i actually headed outside though, i met up with a super sweet, longtime reader and fellow blogger & runner, Liss!! she emailed me a few days before the big race letting me know she’d be in town running and wanted to meet up.  well heck yes i agreed!  she blazed through the half marathon and finished under two hours, nice. CONGRATS to you and your hubby on finishing!  great meeting you, Liss ;)

 to witness Meb Keflezighi tear up the pavement and finish the half marathon in 1:01:23 live was AWESOME!!! since i’m always running i never get to actually witness a first place finish.  it takes me two hours to do what he did in one. mind blown. 

CONGRATULATIONS to all runners!

i was literally just happy to be there.  so..why didn’t i run?  i’ve been avoiding this question. lol. turns out i hadn’t registered for the 5k like i though i had. by the time i realized i wasn’t in the system (yes, i found out at the actual Expo on Friday and almost let it ruin my entire day), the race was completely sold out.  the half and full marathons fill up months in advance, but the 5k is usually still open…but not this year! so i had to find a way to be there anyway and volunteering was the next best thing. #dumbmoment #over

Blog Elevated – wrapped


i went to the BE conference with an open mind, open heart, and the desire to get outta my comfort zone and actually talk to somebody and do some networking.  i did my best and met some new blogger friends over those three days!  in addition to learning a good bit of info via the various workshops provided (9 pages worth) i had a fantastic time hanging out with my dear friend and blogger-to-be, Ogechi.

  i had some business cards printed at the last-minute (naturally) and totally left off the LLC in Fit Foodie Le.  the show must go on.  i went to pick up my girl and we hit i-10 and headed to the Norris Conference Center in City Centre.

after exchanging and collecting a few business cards and snacking, we headed back home to get some rest as we had to be up early again the following day awake and ready to learn.  which really meant go home and ensure our hubbies could survive two straight days without us.

brekky in, headed out to pick up O for day 2 !  oatbran and egg whites. every morning. don’t get me wrong, i love it and crave it when i wake up. however, i said i would expand my breakfast horizons though just for variety purposes.  i’m missing out, i know.

yes we live in Houston, and yes we stayed overnight at the gorgeous Hotel Sorrella.  why not? staycations are awesome.  even though check in wasn’t until 3pm, we were told we could partake in the continental breakfast that morning.

  ok we asked.

we finished just in time to hear the opening keynote speaker, John Saddington, do his thing, coffees in tow.  John’s boldness and stories about big risks he took over the years blew us away and inspired us simultaneously!

after open Q & A with a panel of PR reps from various companies moderated by Holly Homer,  a snack break, & study hall, it was finally lunch time.  yes.  i decided to go gluten-free for the weekend just because it was offered.

so O and i dined at the only certified gluten-free place in City Centre and greenest restaurant in Texas!  you know it, RG baby. my phone died, so Ogechi let me use hers to snap a few pics of our Ruggles Green meals.  i had the Atlantic salmon salad & organic butternut squash,  and O got the smoked chicken pizza.

O and i attended the same break out session that day with Angela England and learned more about how to ‘Achieve our Publishing Dreams’.  i definitely wanted to attend this one to see if i could make the process for my next ebook even smoother.

Rae Hoffman later spoke with everyone collectively about SEO (search engine optimization) followed by more study hall, networking, and a nice time gap before the dinner & fashion show later.  so you know what i went to do!

i created and executed the Fit Foodie Lean Legs workout above 3 or 4 times in Hotel Sorella’s gym, then hit the treadmill with an incline of 15 @ 3.0 mph.  that combo gets my heart rate right where i need it for optimal fat burning.

because after handling up on that cheesecake at dinner i needed to burn as much fat as possible. j/k, j/k. it was delish. everything. O and i lived life on the edge and didn’t bring any prepped food for our overnight stay, just snacks.  we both eat every 3 hours or so, so we were pretty hungry as lunch was hours earlier.

the fashion show was very entertaining and was hosted by the sweet Val of Style to Envy.  all the models were bloggers and they each did their thing up there!

i took a restroom break from the party and heard a mom in the hallway Skyping with her hubby and kids from her phone.  made me wonder what my knuckleheads were up to.

Katie gave some great tips and pointers for bloggers on how to communicate with companies and rock an ambassadorship to where both parties benefit.  loved this session and found it extremely useful as i began to apply Katie’s information immediately!

then, Ogechi and i split up *gasp* because she wanted to go hear what Zack Doty had to say about unlocking blogging potential,  and i wanted to learn more about how to grow my bloggy blog with tips from Momables creator,  Laura Fuentez.  i appreciated Laura opening up and sharing some of her secrets with us.

we were reunited just before lunch and got a great Pinterest lesson from the Pinterest Queen herself, Stacy Teet.  impressive boards! makes me realize just how unorganized i am!!!!

lunch was provided via these go picnic ready-to-eat meals, but we were CRAVING our beloved Ruggles Green again.

so we hightailed it downstairs! turkey burg and sweet potato fries for O, and i killed the gluten-free spicy fish tacos and a side salad.

while in line, we met up with another group of bloggers and decided to make it a big lunch party!  it was great meeting, chatting, and eating with these ambitious women.

for the very last workshop of the conference (and my fave) Rachel Matthews put us ON about lighting!!! pun intended!  she also discussed different props we could use to make our pictures come to life.  the smallest details sometimes make the biggest difference.

i needed this one because of all my foodie pics of course.  her energy was awesome and kept my attention for sure!  I have begun to apply some of her pointers and others have noticed the change in my pics. immediately :shock: . makes me want to go back and delete my first few posts! i’m not ashamed (anymore) because it’s important to remember where you started and to see your growth.  Rachel kept reminding us that the Imperial Sugar cupcake break was right after her workshop. as if they hadn’t been on my mind all day :)

this…. this right here.  was worth the sugar head / tummy ache that followed.  i limit my white sugar intake but dang it i ate that whole cake batter cupcake listening to Karen Walrond wrap up the conference weekend.  I enjoyed and admired this former corporate lawyer’s refreshing perspective on a wide variety of things from blogging to life in general.   super sweet and humble.  with a blog name like Chookooloonks, you just have to go click and see what the heck she is up to over there.

ok so Fluff Bake Bar provided 3 flavors (Cake Batter, Red Velvet, and Veruca Salt) for us so it was only right i try them all take one to my boys.   never heard of this place but these cakes and anything else they make is totally worth a trip to the Heights, uh huh.   fan-freakin-tastic.  all three. i did it for you.

what a talented, inspiring bunch of speakers & bloggers.  what a blessing and WHAT A WEEKEND.  overwhelmed and overflowing with info. love it.  looking forward to the next BE Conference and I’m expecting to apply and reap the benefits from the countless takeaways we received from every speaker.  i thank God for allowing  O & i to share this  amazing weekend of learning and growing together.

FanuMe Life Fair + Mai’s Restaurant


i reeeeally missed my saturday morning workout.  but i had a good excuse reason as i certainly could have gotten up super early and went for a run.  we were up and outta the door by 7am  getting ready for the FanuMe Life Fair!

our fellow UH COOG, Faith, invited us to participate in her event and we were completely honored to do so.  we had a 6 Pack USA booth and represented our company and also pushed my new ebook, Fit Foodie Lean.

this running your own business thing can be pretty darn tough.  tougher than i ever thought.  but when God gives you a vision you have to trust Him and WALK.  i have a tendency to over complicate things though, let Sonny tell it.   regardless, working beside my husband has been a great, great blessing in my life.  we are both super competitive, but we do our best to remember that we are a team and to always work together, not against each other.

 we’ve started a tradition (not that we don’t go out to eat to celebrate everything else already) to go out for a meal together immediately after a business event to relax, reflect, and discuss how it all went and address our areas of improvement.

i was back at it today, but full of sodium, fluffiness, and zero motivation from yesterday’s meals no doubt.  been drinking a ton of water to help with the bloating.  no regrets though, ever.  it will wear off;  it always does. i taught my class and even had enough energy to hop on the stairmaster and get this puppy done:

The Color Run 5k – Houston

what.a.BLAST this morning!  this was my first time participating in the The Color Run 5k and imo,  everything was set up perfectly.  because i have a goal of hosting my own 5k one day, i took special note of well, everything.  instead of just showing up to run, i tried my best to pay attention to all the minor details that go into making a 5k (or any distance really) so great, fun, and memorable.  and BOY am i overwhelmed!!! but hey:

packet pickup was at Rei and i had never even been inside the store until then.  there was soooo much Color Run paraphernalia to choose from it’s not even funny!  shorts, fanny packs, drawstring back packs, tanks, frisbees, bandanas, socks,

pre-race breakfast was an egg-white omelette (with some shredded and melted parmesan cheese that was thrown on top as it cooked), fresh spinach, tomato, and honey mustard on Nature’s Own double fiber wheat bread.  no oatmeal this time as it can come back to haunt ya real quick if you know what i mean, especially on longer runs.  no pun intended. L O L.   however 5k’s are over rather quickly.

i had NO idea how popular this run was!!!  our team was set for takeoff at 9am, but we didn’t make it all the way to the front as it was just too crowded.  to avoid so many people on the course at once, they created several ‘waves’ and our start time was unexpectedly pushed back more than a little bit.  this was terrible because somebody had to drive back across town to teach class in less than 2 hours. yep….me. when i signed up for the race i was so excited about participating i forgot about my class!!!! pushing it, yes, but i knew both could be done.  i can’t and won’t let my members down. or waste 50 bucks :lol:

i heard somebody was not feelin’ the weather change this morning. it dropped to around 50 degrees outta no where.

but we finished strong. it was bob and weave, stop and go the entire way. this was the first untimed race i’ve ever participated in and it was a true fun run with an emphasis on fun! people were clearly not concerned with breaking any PR’s lol.   it’s a huge, family and friends type event for sure, and i DEFINITELY recommend this race for anybody’s very first 5k.

this peanut butter and strawberry flavor was uhhhmazing. tasted like a sticky, chewy, pb and jelly bar sammich.  these are the only samples i could get my hands on before having to head out.

going and coming, literally. i missed out on tons of pictures and good ol’ fashioned color fun and could not stay to meet up with and party with the other runners at all:(  you live and you learn. this was our first Fit Foodies event and we have only just begun to scratch the surface.  so seriously,  NO WORRIES if you weren’t able to make it this morning, there are too many races coming up to dwell on one!  just know that plenty of advanced noticed will be provided next time, you have my word.

alright…had this dressing tonight and it’s  definitely gonna be added to the FFL approved list!  Walden Farms Raspberry Vinaigrette.  it’s great as a salad dressing, but i’m positive it would work as a marinade for fish or chicken too.  try it! i like.

run ON! Bayou City Classic 10k ’13

pre-race breakfast was 2 egg whites and a big bowl of expanding oats (1/2 cup rolled oats cooked in 1 cup water and 1/2 cup unsweetened vanilla almond milk) topped with frozen blueberries, banana chunks and cinnamon!  i normally don’t eat THAT much before a long run, but i woke up so hungry that i had to put something in my system that would stick.

DONEZO! the route was a tad bit different this year and there were hills, hill, and mo hills, whew.  that Allen Parkway is a beast.

oh how i wish i could have taken pics of all the inspirational and funny things i saw:

1. i had just made it to the halfway point when a woman on a bike heading the opposite way yelled out ‘it’s fit foodie!!!’ are you kidding me!? if you could have SEEN my face light the heck UP as i cheesed, waved, and yelled hello back! i could not see you very well at ALL but THANK YOU FOR MAKING MY YEAR, LADY!!  XOXO!

2.  spectator sign: ‘don’t stop! ain’t nobody got time fo dat!’

3.  people often run in teams or ‘centipedes’ and are linked together by a rope of some sort so that they can finish together. teamwork at its finest!   i passed a team with a gentleman running alongside his IV.  i did a double take for sure!  yes, the stand with the wheels, the fluid bag, the WHOLE NINE.  he was out there doing his thing.  if he can….

4. one thing i did NOT witness was someone biting the dust, hard.  happens every year.  people, you gotta watch where you are going, especially running in the streets of downtown Houston. *knocks on wood*

the My Fit Foods associate called this mixture ‘Morning Glory’.  it’s brown rice, eggs, lean ground turkey, and cheese all mixed together. it was good and something i’d throw together at home for sure.

fresh fruit (bananas and oranges), cereal bars, and scones were provided by Whole Foods,

and Fuel Kitchen supplied the breakfast tacos this year, not HEB.  they were delicious though- i had eggs and chorizo in mine.  a friend has been raving about the Philadelphia location to me and i can finally go experience the food for myself, sweet!
