 we got fro-yo this evening to conclude my first ‘relaxed’ sunday in a really long time.  i was honestly emotional today thinking about the sunday class i no longer teach (we were in Miami this time last week so it was the furthest thing from my mind lol).  but now i’m back in town and i found myself letting those guilty feelings and thoughts creep back in concerning my decision to drop the class.  just taking it one sunday at a time.

first off, let me just say how BLESSED BEYOND MEASURE i am from this past weekend’s Blog Elevated Conference.  just wow.  my brain is literally overflowing with info and i am JUST now sitting down to review it all. or at least try to.  pages and pages of notes.  a gigantic stack of business cards from the other awesome bloggers i met.  i’ll get to it all.  after this post!

even if it was a little bit, the fact that they were more active definitely contributed to their weight loss efforts.

i don’t know about you, but i need my daily dose of endorphins!  i got some this morning in the form of Total Conditioning. can you tell by those sweat stains?  afterwards, i took a moment to focus on my exercise pick of the week: single leg deadlifts.

1. start in a standing position; knees soft, back flat, feet shoulder width apart, weights in front of your thighs, shoulders down and relaxed.  lift right leg slightly so foot is off the floor.

2. lower your torso forward/downward.  at the same time, raise your lifted leg, keeping it straight.

3. once stretch is felt mainly in your hamstrings and lower glutes, return to original position by raising torso and lowering the lifted leg.

4. straighten the knee of the supporting leg as torso becomes upright. try it again on the opposite leg! 4 sets of 12 on each leg with heavy ;) bells.

IMPORTANT TIPS:

  • the heavier the weight, the more challenging the exercise
  • keep your back flat all the way down and all the way up
  • hips remain square; try not to tilt or twist them. torso should face the front at all times.
  • go as far down as YOU feel comfy, not as far as your neighbor is going!
  • you can modify this exercise and keep your back toe on the ground for balance
  • keep your dumbbells super close to your body all the way down and all the way up.
  • which ever leg you are standing on should keep a soft knee ensure the weight is in your heel and not your toes

what they work: those glutes, hamstrings, lower back, core, trunk.

Zucchini Pizza Cruise Ships

the stuff:

  • 2 raw zucchini
  • 1 cup extra lean ground turkey
  • 1/4 cup shredded mozzarella almond cheese
  • 1/4 cup low sodium pizza sauce
  • 1/4 tsp black pepper
  • 1 tsp Mrs. Dash tomato basil no salt seasoning
  • 1/4 cup yellow onion, chopped
  • 2 garlic cloves, chopped
  • 4 cherry tomatoes, sliced
  • 1 tbsp fresh basil, chopped
  • 1/2 tsp dried basil

do this:

preheat your oven to 350 degrees.

halve raw zucchini (long ways) and scoop out the seeds and insides.  they should look like empty canoes once done. (don’t discard the insides! you can actually cook them back in with the meat if you’d like or eat them separately at a later date. either way, don’t waste!)

in a large skillet, set your burner to medium-high heat.  add chopped garlic and onions and sauté until translucent, about 2-3 minutes.  add in your extra lean turkey meat, liquid aminos, pepper, dried basil, and Mrs. Dash seasoning.  stir/saute until cooked through completely and there is no more pink.

in a separate bowl, combine the pizza sauce and turkey meat crumbles.  then, divide and spoon this mixture evenly amongst your zucchini shells.

top the ships with your sliced tomato, shredded almond cheese, and finally, the chopped basil.

bake in the oven for 30 minutes or until your desired zucchini consistency.

serving size: 4 ships

Q: how much does ‘heavy’ weigh?  

A: i am so sure i have answered this before, but here it is again!  you gotta implement a little trial and error.  i usually do 12-15 reps per set.  so, heavy for me equals pretty much struggling to finish on rep 8-10. it varies per exercise though! there is no set number across the board so to speak… you must see for yourself.  write your beginning numbers down to track your progress, and add weight gradually over time to get better , bigger, and stronger.  you’ll start seeing muscles you didn’t even know you had, watch!

weight lifting has transformed not only my body, but my mind. confidence booster? heck yeah!  i no longer dread the dressing room mirror and i find myself trying on items i would normally shy away from.  better fitting clothes is definitely an advantage worth working for! i get emails here and there concerning that darn scale and how insecure it makes people feel. you are worth so much more than a silly NUMBER.  i don’t watch my weight anymore; i watch my body!

How Fitness Benefits the Cancer Patient

When a person is diagnosed with any critical disease such as cancer, including mesothelioma, the tendency is to relax, rest and just take the exhaustion brought on by the illness. Patients may believe that by sleeping and simply taking treatment prescribed by the doctor, that is the best they can do. What those diagnosed with cancer do not always realize, are the steps they can take outside of traditional treatment to better themselves and their prognosis. One thing modern research has shown is a strong connection between health and fitness.

Most know that for humans to be healthy they need to have adequate exercise and a good diet. Once cancer has diagnosed, somehow this knowledge become subjugated by concerns about treatment and life itself. While exercise and striving for fitness will not cure a critical disease, a fitness program, along with other treatments, helps the body fight the illness.

Even moderate exercise decreases the risk of getting cancer. After a diagnosis, exercise provides any number of positive benefits. According to the National Cancer Institute and many other studies, exercise increases the quality of life for those fighting cancer.

Exercise helps keep the body toned and the blood circulating more freely. This strengthens blood vessels and nerves, which can be damaged during certain treatments. Lying around only brings on depression and a feeling of helplessness and hopelessness. Exercise gets a person up and moving and feeling alive. Attitude means a lot during cancer treatment and helps predict who will survive and who will succumb. Exercise and fitness elevates mood, which encourages a more positive outlook on life, possibilities and treatment.

Fitness promotes health in those fighting cancerby keeping weight at an optimum level, reducing the possibility of developing either diabetes or high blood pressure, and by helping to maintain the strength and flexibility of bones and joints.

Some cancers cause weight loss and loss of muscle mass. Exercise helps keep muscles strong and flexible. This, in turn, means the cancer patient can be more active and self-reliant. The more those with cancer can do for themselves the better they feel about themselves and the more self-confident they will feel.

Of course, any fitness program needs to be geared to the abilities and health situation of each individual. Those newly diagnosed and those in remission may be able to follow more difficult regimens than someone who is weak from the disease and treatment. Exercise should be tailored to strengthen weaknesses, allowing the body a better chance to fight the cancer. So, talk to your doctor and get started on a program today!

immediately after this morning’s class! a good friend of mine told me she was coming to see me and she showed up as promised :) i know how tough a 5:30am appointment can be to make, and i was so happy to see her again.  i expressed my gratitude by kicking her butt, lol!  1 hour of total body conditioning later, we were outta there for the day.

a little later, i took Chiso to an Easter Egg Hunt that was being held at Discovery Green downtown.  they always have something going on there for all ages, love it!  we made it exactly 3 minutes before it started, but mommy forgot to put money in the meter so we had to speed walk all the way back to the truck. the meter maid  actually met us there and had the ticket in hand and everything that fast!!!! he let me make it this time though, thank God. #whew

they let the 0 – 2 kiddos go first, so we made it back in time for Chiso to grab a few eggs. i cherish spending time with my little Stank Tank.

on to tha fooooood!  i got some sliced rotisserie chicken from the HEB deli earlier this week, so i chopped it up and topped my spring mix salad with it for meal 3.  it also had strawberries, carrots, avocado, tomatoes, pecans, fat-free feta, cracked black pepper, and a couple drizzles of Walden Farms raspberry vinaigrette.

then we walked to the mailbox later that evening and lookie there!  perfect timing for the cover of one of my fave mags! what a coincidence.  at least i think that’s what happened. i don’t remember anymore cause this post has been a draft since the end of January :lol: sounds about right though.

basil boobie bells

the stuff:

  • 4 large bell peppers
  • 2 large chicken breasts (or ground turkey, ground chicken)
  • 1 cup cooked brown rice (or quinoa, or couscous)
  • 2 garlic cloves
  • 2 tbsp mrs. dash southwest chipotle seasoning
  • 2 tbsp fresh parsley
  • 2 tbsp fresh cilantro
  • 2 tbsp fresh basil
  • 1/2 tsp oregano
  • 1 roma tomato, chopped
  • 1/2 tsp pepper
  • 1/2  cup low sodium oregano, garlic tomato sauce
  • 1 – 2 tbsp liquid aminos
  • 1/2 cup goat cheese (or shredded parmesan, or fat-free feta)
  • no stick cooking spray

do this:

1. preheat your oven to 375 degrees. cut the tops off of your peppers, remove the seeds, and if need be, cut the bottoms to ensure they sit flat in your pan.

2. spray both your baking pan and a medium heated skillet with no-stick cooking spray.

3.  add the chopped garlic and onion to the hot skillet, and saute until translucent (2-3 minutes)

4. add raw, chopped chicken, liquid aminos, herbs, and spices; cook through until there is no more pink (5-7 minutes)

5. add the cooked rice, tomato sauce, chopped tomato and goat cheese, then turn off the heat and mix well.

6.  situate your peppers into your baking pan, and distribute the mixture evenly between all four peppers.

7. bake for 40-50 minutes or until tender.

8. top with more fresh basil, let them cool, then eat ‘em up.

6 Pack USA @ HBU’s Be Fit for Life Health Expo!


what a DAY!  we spent over half of our saturday at our very first event, the Be Fit For Life Health Expo hosted by Student Apprentice on the campus of Houston Baptist University.

it was an outstanding turnout- kids from ages 12-17 showed up and soaked in a ton of health and fitness info at each booth.

i must start this post out by giving a HUUUUUGE congrats to everyone that participated in the Chevron Houston Half and Full Marathon races this morning!!!! my Facebook feed is blowing the heck up right now with pics of friends i had no idea were even running this year! the weather wasn’t the greatest, but i am so thrilled to see people sticking to their goals, breaking PR’s and just being such HEALTHY examples.  AWESOME job, all runners!

 it’s got 2 egg whites and 2 oz of lean grilled chicken breast previously dipped in some calorie-free, carb-free, fat-free, Walden Farms pancake syrup and sandwiched between a Thomas light, multigrain english muffin. who needs a high-priced drive-through breakfast sandwich when you can make these right at home? my family doesn’t.

before heading out to church this morning, i had another one and added some dijon mustard for some tang.  some cheese will make it even better! stats: 225 cals, 3g fat, 26.6 carbs, 8g fiber, and a WHOPPING 30g of protein! YUP!

so today was the launch of 24 Hour Fitness’s new Total Body Conditioning format (HIIT) and i had so much fun sweating it out with the members!   please, allow me to give just one more shout out to my amazing husband for his support. IMG_20130113_130339

weights? yes. cardio? not a big fan.  nevertheless, he was in my front row doing his thing and making crazy faces at me as usual.

this is my 5th year teaching and i always, and i mean always, get butterflies in my tummy right before class.  i don’t think that feeling will ever leave me.  soon as i put that mic on…

so salmon is STILL on sale at HEB this week *big cheese*.  the price did go up a dollar, but it’s still a couple dollars lower than regular price. i couldn’t pass it up.  soooo, here are more healthy, fresh salmon meal ideas:

salmon is amazing when paired with fresh dill, but i didn’t have any.  i used another toasted Thomas english muffin, broke apart some of the baked salmon and put it on one side, and i slathered the other half of the muffin with a homemade no-fat cream cheese & green onion spread.  i smell a salmon, dill, chive,  cream cheese dip coming soon, don’t you!? no pun intended.

fresh blackberries are on sale too!  i made a spring mix salad for lunch one day last week and threw a few on top for one of my meal 5′s.  grilled squash, roasted new potatoes and a hunk of garlic and herb salmon went right along with it.  i roast or grill my food A LOT- you create so much flavor!  steamed is my least fave…

yesterday, my fam got together at my grandma’s house for a huge pot luck style brunch. what did i volunteer to make? banana pancakes, duuuuuh!

grocery finds

i know variety is important, but my breakfast just ain’t right without my oats (either in a bowl with toppings or in my pancakes).  i NEED them. i’m still finding new ways to eat them every single day.

 i made saturday morning’s bowl of oats with Silk unsweetened vanilla almond milk, a few drops of vanilla creme stevia, lots of cinnamon, half a banana, some chocolate pb2, and some unsweetened coconut flakes.

and my daily egg omelette of course topped with fresh cilantro and pineapple salsa.

  i did about 30 min of fat burning cardio on the elliptical + an upperbody weight workout and high tailed it outta there. we had a few birthday parties to attend as well as grocery shopping to get done, the usual!

 i’m doing a fitness challenge via IG (Instagram) right now (@fight_for_healthy).  my goal is to add more definition to my body overall, especially in my abs.  also, i plan to eat as clean as possible for the month of october.  but these birthday parties though… :shock:  expecting big changes next month just in time for the Thanksgiving holidays. oh boy.

for meal 2, i cracked open some canned salmon (fresh is too high right now @ HEB)  and put some on a 3-seed La Tortilla Factory soft wrap along with some fresh cilantro, rice cheese, avocado, tomato, smokehouse maple seasoning, spicy mustard, and some fig butter. i  microwaved it til the cheese melted and devoured it. two of them.

in the car on the way to the party, i had meal 3 which was a salmon sandwich on raisin Ezekiel bread with the same toppings.

after running around chasing this boy the whole darn time, let’s just say i’m so grateful to be in good shape!  trouble finding workout motivation?  keep your babies (or future babies) in mind.  thank me later.  i see why those child leash thingies were invented!!!

i see to it that Chiso eats nutritious, healthy stuff all day long, so of course he (we) can partake in party food every now and then.  didn’t i just say i was in the middle of an october fitness challenge lol? come on,  it’s not a party without cake.  i split a piece with my boo and we had a blast partying with family.  and it was the non-dairy whipped topping, not the super, duper sweet sugary kind ;)  just go with it.

 after the par-tay, i guilted Sonny into going grocery shopping with us since the HEB i frequent was nearby.

in addition to my normal goodies, i got some other cool items i’m so excited about trying!!

quark. i learned about quark through a few Aussie IGers.  i had been looking for this stuff for weeks- not all HEB’s sell it and few people even know what it is.  it’s comparable to greek yogurt as far as taste.  nutritional stats? not so much.  not a lotta protein per serving, but very low cal, fat, carbs, and an awesome 0 grams of sugar.  ever notice just how much sugar your greek yogurt contains?  yep, even the plain varieties.

not too shabby.  non-fat ricotta cheese is another alternative to add to your fresh fruit instead of cottage cheese or yogurt.

next,

one of my guilt-free treats.  i make a two scoop sundae with vanilla maple flavored Artic Zero (150 cals per PINT)  with some soy whip. and sprinkles.  recently, Artic Zero underwent some scrutiny for incorrect nutritional stats and ingredients on their labels.  they ended up adding milk to their ingredient list (for some reason it still doesn’t bloat me like real ice cream though) which upset a good amount of their consumers.  seriously… even if the stats were off a bit, come on.  can you eat a freakin entire pint of ANY of the other brands for less than 150 cals, total?  it’s not that biga deal my goodness. :roll:  i’m still a fan and will continue to be! i also drizzle some healthy chocolate sauce (will share recipe soon) on top and it’s an incredible, low cal, carb, guilt-free, bowl of yumminess.

i can dig it!   a little expensive for the size of the bottle though.

i taste tested it solo, and it tastes exactly like reg. ketchup. no funny after taste or any of that.  but it wasn’t enough.

so i baked some Ore-ida fast food fries. it passed.

ok…i had to share this as i’ve been asked a few times what my cheat snacks are…and this is one.  sweet and salty chex mix.  it’s even good in a bowl of almond milk!!!!  we passed by a big shelf of it and as i talked myself into not even looking in that direction, Sonny picked up the biggest bag they had and threw it in our buggy.  and i let him.   

ok focus!!! back to the good stuff that’s good for you and to you.  we got plenty of fresh fruits and veggies as they are at the top of my list, every time.  strawberries, blackberries, bananas, grapefruit, apples, roma tomatoes, zucchini, sweet potatoes, red potatoes, and avocados this trip.

ooooh Ezekiel… i love your bread and now i must try your cereal.  with my silk unsweetened vanilla almond milk of course. match made in heaven.

and the award for the cutest bag of popcorn ever goes to Angie’s.  it definitely got my attention! sure i’m a stove popcorn popping advocate, but as healthy and fun as this bag looked, i just had to try this kettlecorn.

even vegan.  impressive.

what else can you do with an old nike box? use it to hold all your snacks. ghetto? prolly. effective. ya.  i like to keep things out where i can see them.

le’s leg day circuit

man my heart rate was already up as i walked into the gym today!  i got into my fat burning zone right away as i warmed up on the elliptical for about 10 minutes before hitting the weights.

to get the blood flowing in my legs, i did:

leg extensions / leg curls superset -  4 sets of 12-15 reps using med-heavy weight.

next, 4 sets of 12-15 reps of seated leg press with heavy weight.

1st heavy set w/ feet shoulder width apart,

2nd heavier set with feet shoulder width apart

3rd heaviest set with feet shoulder width apart

4th burnout set with light weight (kept going until it buuuuuuuuuuurned) with my feet shaped in a v (heels together).

now for the fun stuff!!!

 i went into my gym’s empty group fitness room (take advantage if your gym allows it and there’s no class going on) and did the following 3 times each: (burned over 500 cals after all this!)

using 25 lb. dumbbells,

and a step bench w/ 5 risers on each side,

*i mentioned on IG that you can add more risers if you’d like, but i’m super clumsy and went with 5 today.  it was still a nice height, trust me.*

do the following straight through w/ no breaks.

  • 1. 20 squats holding the dumbbells in each hand and squeezing your glutes the entire time.
  • 2. walking lunges going forward (i used the length of the room, bout 30 ft i guess!?! i’m horrible with estimations), then backwards ( no, don’t turn around, stay facing forward but just lunge backwards. do your best to push yourself up back up to standing and maintain that balance.)
  • 3. 20 deadlifts (feet shoulder width apart (1st set) narrow stance (2nd set) wide stance (3rd set))
  • 4. 20 box jumps onto your bench. drop the dumbbells first please!  be careful and land softly by putting all your weight into your heels.  drop your glutes as low as possible and get into that squat before you jump back down.

 after a round of that, my heart rate was easily over 170 according to my watch!  i walked in two big circles around the room and let my hr drop to around 130 before i started again.

lastly, i finished up legs with 3 sets of 20 reps of jumping lunges.  make sure you drop that back knee down- no slacking.

i said i’d do abs at home (i always say that lol) cause i had to hit the grocery store before i could even get home.  making progress, but i need some separation in my upper abs since i have NONE.  that’s my goal for this week.

 1hr of fat burning cardio on the elliptical later, leg day was over.
