the Rodeo Run went down yesterday morning!  i picked up my race packet Friday and brought along a list of 3-year-old b-day party locations to check in the area.  yep, Chiso’s getting a birthday party this year.  we did a small gathering at the house last year for his 2nd and remember i went batty for his 1st  so now it’s time to venture out.  i think. suggestions? email me.

i broke my ‘no oats pre-race’ rule and had big bowl of them topped with bananas, blueberries, and some coconut crystals before we hit the road.

i walked/ran with a friend of mine, Krystal, and Chiso got to play and hangout with her son, Max.  Krystal is in FAB shape, right!? that’s her 9 month old daughter in her arms.  she is such a big fitsporation to me!

so about that zucchini fritter recipe i own ya…. ugh, they are so incredibly tasty.  Sonny took a bite of one and was like, ‘there’s no meat in this?’

nope.

pan fried curry zucchini fritters

the stuff: (source)

  • 3 large zucchini, shredded/grated
  • 3 green onion, chopped
  • 1/2 cup almond meal or flour
  • 1/2 cup light parmesan cheese, shredded
  • 2 eggs, beaten
  • 1 egg white, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp curry powder
  • 1-2 tbsp liquid aminos
  • 1 tsp cracked black pepper

do this:

  1. use the larger holes when grating zucchini and shred them onto a dry cup towel.
  2. use those muscles and squeeze out all the liquid possible.
  3.  add all ingredients to a large mixing bowl and incorporate well.
  4. heat a pan on HIGH coated with nonstick cooking spray (or pour a tsp of olive oil into the pan and spread it around)
  5. place heaping tbsp size scoopfuls of mixture onto hot skillet and press down flat.
  6. convert heat to LOW and cook for approx. 5 minutes on each side until golden brown and done. be patient.

i have the patience of Chiso sometimes when i’m cooking and i often end up with a scramble instead of a perfect patty or cake.  i am sooooo dang proud of how these turned out!  best ones yet and so much savory deliciousness in every bite. please enjoy them as much as we have.  i got some garlic & herb goat cheese from HEB after the race that i have been spreading on them and, well,

i got the chance to feed these gorgeous, fit ladies this past weekend! Kimberly (l) & Nichola are figure competitors and group fitness instructors in addition to their respective full-time careers.  busy women who make fitness a priority.  i.e., my kinda’ women. they took about all the teasing they could stand from my facebook and IG pics and invited themselves over :P . j/k, we finally got our schedules together after trying to plan something for months.  i thoroughly enjoyed cooking for them and the non-stop laughter the entire time. check out tha spread:

of course i made burgers. you know me. i let my apple-chicken burger mix marinate over night to ensure a flavor packed patty. it’s a fam fave. also, homemade guacamole, lettuce tomato,  Sweet n’ Spicy Sweet Potato Fries from my e-book accompanied the burgers.  the toasted buns were sprouted grain from Alvarado Street Bakery.

pineapple! the tropical twist was so refreshing; you’ll love it.  as far as the shrimp marinade, i used Weber All Natural Boston Bay seasoning blend instead of the Mrs. Dash and only 1 tbsp of liquid aminos.  try this asap.

 so super bowl is upon us! and once again my husband waits two weeks before to mention hosting a party. who does that? i know it’s a big event (and annual) but it’s outta sight outta mind to me and i don’t watch ESPN. womp :x

a fitness gift! i am ashamed to say that this is my 3rd ipod Nano :shock: . i do not even deserve this.  but i’m grateful to have it in my life again cause i sure did miss it.  i fried my other two with my own sweat because i used my bra to house it during my workout. both times. i know.  soooooo, tomorrow i’ll be getting a nice little arm band/holder thingy to prevent that from ever happening again.  thanks Hubby. for real.

breakfast and gift exchange at my MIL’s was earlier, then we headed to my side of town to see my folks. this was dinner plate #1 at my moms: cornbread dressing, green bean casserole, turkey breast,  deviled egg, potato salad, candied yams, hummus dip with carrots and celery, cranberry sauce, and a wheat roll. this baby can EAT.

  this is THE coldest weather i have ever run in. ever. 32 dang degrees. the Chevron Houston Marathon in January isn’t even this cold!!!!

so because of the dip in temp earlier that week, i switched from the 10k to the 5k y’all. keepin’ it real. i believe i have become one of those people who like cold weather but hate being cold.

happy 4th of July guys! this tower of straight awesomeness was displayed at Sweets in City Centre earlier this week.  isn’t it pretty!? pretty and patriotic indeed. hope you had a blast celebrating.

i celebrated by making and eating cliché red, white, and blue themed food all day. :)

breakfast was a big bowl of cinnamon oat bran topped with juicy blueberries, unsweetened vanilla almond milk, and Walden Farms pancake syrup, and a cup of scrambled egg whites. i have been eating my oat bran this way for the past several weeks cause it’s so addicting! i was up super-duper early this morning cause well,  i didn’t sleep. again.

been dealing with ebook issues all week y’all, my goodness.  the previous post concerning the book (fit foodie lean) will be updated with new info for ya. bear with me.

after my boys woke up later, i made them some banana pancakes topped with fresh berries, sugar-free cool whip, and sprinkles!  we have sprinkles often though, so this was no big deal to Chiso.

holidays always put me in an extra special baking mood, and i went with a light vanilla angel food cake with an american flag fruit design on top.  this is like a cool whip classic dessert that never gets old.  here’s my version though:

light vanilla 👼angel food cake🍰:

the stuff:

  • 🍓1 cup stevia for baking (not the packets)
  • 🍓1/2 cup coconut crystals
  • 🍓1 tsp vanilla
  • 🍓1 cup Bob’s Red Mill 100% whole wheat pastry flour (or any cake flour)
  • 🍓12 egg whites
  • 🍓1/2 tsp cream of tartar
  • 🍓1/4 tsp salt
  • 🍓1tsp lemon juice

do this:

👉mix 3/4 (half) of sugar mixture and flour together, and 👊beat egg whites with mixer until foamy💭.

add cream of tartar and salt and beat until soft peaks🗻form.

add remaining 3/4 cup sugar 2 tbsp at a time until soft peaks form.

👊beat in lemon juice. sift flour/sugar mixture in 1/4 cup at a time folding until incorporated.

spoon the batter into cupcake pans, round pans, bundt pans, square pans, whatever🙆.

adjust cooking times for a 325 degree oven.  bake and cool.

         makes: 12 pieces

1 piece per serving:

angel food cake statsnote:  now, ☝if you don’t follow these steps exactly, you might be having angel food brick🏠for dessert🙎. not that it wont still taste good though! top with sugar-free cool whip and 🍓berries🍓.

so i had cake twice on the 4th- i could NOT pass up this slice of pure heaven from Maureen’s Gourmet Bakery in Sugar Land, TX, Dami’s fave cake place.  i totally see why!  the icing was not too sweet, creamy, fluffy, and the moist vanilla cake was just….perfect.  i mean really.

then we headed to another family graduation event – congrats to the Abadom sisters!!! i do believe this is the most people i’ve met from IG and Facebook in one day, forreals!  i am no celebrity and i certainly don’t feel like one, so when people tell me they are nervous to meet me, i am beyond baffled and humbled.  just know that i will always be the nervous one, no kidding.  i know people always have certain expectations when meeting someone in person after following them online (i know i do!), but i would hope that the two aren’t so drastically different with me!  i do love to express my love and giddiness for fitness and food via social media, but i am still lil’ ol’ shy leah e.  i can’t deny how fun it is meeting new people though, and it is truly helping to flourish my social side!  it was a pleasure and an honor to meet  them all :)

this was my meal 5 from last night- i perfected the whipped sweet potato recipe for the e-book and enjoyed some with a pan seared tilapia fillet cooked in Bragg liquid aminos and Mrs. Dash onion & herb seasoning! that was all over some fresh, steamed asparagus.

i had some grilled pineapple left over, so i made a super quick ‘salsa’ to go on top of the fish.

the stuff:

  • 1 cup grilled pineapple, chopped
  • 2 tbsp red bell pepper, diced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp fresh lime juice

do this:

chop it all up and mix it together! super quick and easy topping for any protein.

last night we attended a home going celebration for a close family member.

if you’re Nigerian, then you can name every single thing on my plate, especially those wonderful, delicious PLANTAINS!!!! my favorite.  if you’re not lol, it’s jollof rice, stewed stock fish and vegetables, spinach, plantains, and there is some super tender goat meat in there somewhere.  i’ll be adding more Nigerian dishes to my repertoire, don’t worry.

you still with me?  today, we met up with a former 6 Pack USA client and Instagram #fitfam member @waltlewjr and chowed down on some Ruggles Green eats! good times, good food & good peeps! I had a mixed greens salad topped with jicama, dried blueberries, and tomatoes and tore up that roasted chicken pizza with Chiso. Sonny had the kobe beef burger with sweet potato fries.  no fish tacos, this time. s/n: why couldn’t Chiso have smiled like that for our family pictures :roll:

a doorstep package is so awesome to wake up to!!!! especially when you’ve been anticipating it’s arrival.  what is it? oooh just my next product review.  and it’s food this time *pistol fingers*

we had a crazy weekend and hit up three 30th birthday parties for our friends.  30 is a huge milestone and we were honored to have been invited to help celebrate with each of them!

hanging on this guy’s arm always makes for a fun night.  i follow @chalenejohnson on IG and she has motivated me tremendously concerning the importance of keeping family in the forefront in the midst of taking care of myself, and i encourage you to do the same!  i don’t take our date nights for granted and really cherish and enjoy my toddler-less time with Sonny. felt like we were back in college with all this partying for a sec, oh boy!

but back to saturday morning- it began with maple almond butter banana burgers for Chiso and i.  fun to make, fun to eat.

we followed up breakfast with a visit to the gym.  i got sweaty on the elliptical with some fat burning cardio, shot some hoops with Chiso, and we got up outta there.

Q: how do i get started with cleaner eating?

A: very popular question as of late, but the answer is simple.  in the grocery store!!  buy and keep the right stuff (wholesome, fresh, natural, no-low processed foods)  in your fridge so you’ll always be prepared to make nutritious, healthy meals.  check out my ‘the right stuff’ section for some of the brands and items i purchase and use daily.

we usually do the family thing on Sundays;  Sonny went to a house party recently and would not stop raving about the incredible slice of pizza he had eaten!  i needed to see what all the hype was about, so we made it  a date.

i was impressed by the super wide range of toppings, and was relieved to see that you could order single slices instead of being forced into buying a whole pizza.  it’s the little things.

i went out this past weekend!!! ok not out out, but it was to a private dinner celebrating my dear friend turning 30.  it was held at Perry’s Steakhouse – one of my faaaaaaave places for a magnificent dining experience!  always great service, and the food…well, look:

i kept it clean and enjoyed the grilled salmon (sauce on the side) and kept the sautéed spinach that accompanied it.  i reeeeeally wanted to sub it for the butternut squash puree, but our waitress quoted me some ungodly price for that small change and i declined.  anyway, i made sure i altered my macros to fit this meal in- it was delectable.  i’m glad i got my sauce on the side cause i put a little on my fork and it tasted like straight flavored butter!!

i’d love to have my competition abs/core back!  i took this pic immediately after my class- 1 hour of  HIIT and some core work at the end.

Q: what’s the best type of cardio? HIIT or steady state?

A: BOTH.  incorporate both types into your weekly routine.  i do HIIT once or twice a week, and steady state either early in the morning, or after my weights session.  switching up the days you do either one will keep your body from plateauing and constantly  burning fat.

i bought a crap load of kale at HEB so i’ve been incorporating it into my dishes these past few days! we have here:

but this recipe right here is my fave so far.  grilled smokehouse maple shrimp and kale tacos!

the shrimp was marinated in liquid aminos and smokehouse maple seasoning.

i posted this on IG the other day- Trader Joe’s cranberry apple butter.  i went in looking to replace my fig butter but happily left with this instead after i didn’t see any.

it tastes just like the traditional canned, jellied, cranberry sauce, but fresher and more tart. i’m cool with it! 20 cals, 4g sugar, 5 carbs for 1 tbsp. i do believe it has the lowest calorie and sugar count of all the butters.  i missed it on Thanksgiving, but i will definitely be eating some with my Christmas dressing this year!

20121202_174444which means after 30 years of this stuff, i have no more use for it.  those stats are outta line for only 1/4 cup serving…i can eat the whole can by myself with my plate.  too high in sugar and has high fructose corn syrup at that. no thank you.
