bottoms up + big news on the way

starting to really feel like i suck at multitasking. or maybe it’s prioritizing. both. idk :roll: idk, but whenever i am focused on my next move it’s like i can’t focus on anything except THAT thing. what thing? hosting my very own COOKING CLASS!!!! i have finally secured a location to do my thang (workout classes are coming right along with that) and i am crazy excited about it. i can’t help but to be. this is what i do! a much more detailed announcement will be made really soon.  extremely soon.

Chi and i hit the road for my monthly check up.  while there, that yummy, delicious, glucose drink was also waiting for me to chug.  i can’t believe it’s time to test for gestational diabetes already! it’s done somewhere in between weeks 24 and 26.

if i had a dollar for every time i’ve had to look at someone’s confused face and say ‘oh, i’m a blogger’, i’d go buy a pair of shoes with it :lol: . the phlebotomist shot me a ‘why are you snapping pics of that of all things?’ look. when i did this test for my 1st pregnancy i went online to read reviews on how the test would go, and with that came comments about how horrid and disgusting this stuff was. so of course i walked in very hesitant and expecting the absolute worst. verdict: no big deal. seriously. i tuned that bottle upside down and drank it all at once, no breaks. after i told Chiso why he couldn’t have any orange soda lol.

some recent IG eats!  man those zucchini fritters are so dang good. please go make them if you haven’t already. i am out but bought a ton of zucchini at Sprouts a few days ago and will be making more soon.

clockwise:

  • lean ground chicken burger w/ tomatoes & mozzarella almond cheese using zucchini fritters for buns
  • crock pot sirloin stead seasoned with Weber Chicago Streak seasoning and cooked on low for 6 hours w/ roasted asparagus and smashed red potatoes.  i boiled the red potatoes until tender, then added green onion, cilantro, some plain  non-fat yogurt, and organic whipped buttery spread. mozzarella almond cheese melted on top!
  • a gigantic salad from the HEB salad bar
  • zucchini cakes with herb goat cheese, pan seared tilapia, roma tomatoes, and strawberries.

still trying to keep it clean for the most part….even though i want Papa Johns pizza all day every day. no sweets for me…cheese must go on everything.

  baby boy (we have a name but i’ll let Sonny finalize it first) is measuring the size of a banana this week.  i’m feeling him move all the time, day and night, and the flutters have definitely turned into random punches, kicks, and pokes.  my nurse says i am not drinking enough water (no surprise there unfortunately) so i’ve been chugging when i can.  so i have to pee all the time. day and night. i have to pee right after i finish peeing. no kidding. so annoying!!!!!! :evil:

trying my hardest to keep things on the healthy side for the most part. here are some recent eats:

been grilling up lots of chicken. people tell me they get tired of chicken quickly but as long as i switch up the flavors often, it’s like eating it for the first time to me.  i found the Weber Kickn’ Chicken seasoning blend a few days ago at my Walmart and i really like it so far. i don’t even mind the spice, which i’ve never been crazy about!  yummy.  since Sonny is about to be on the competition trail again he’s been eating lots of tilapia, so i usually eat some too with my meals.  i made that homemade bbq chicken pizza using Naan flat bread up there and omg. it was just incredible.   along with all my meals though, plenty of veggies and fresh fruit, everyday. some nights i have a strong craving for SOMETHING…… and nothing i eat will satisfy it. nothing. so i just eat a small chunk of cheese and go to bed.

and then there’s the occasional indulgence i have yet to deny myself.  Boston Market mac n cheese. why? because CHEESE.

staying active:

getting it in 5-6 days  a week lately!  this past week i went 6 days in a row so i didn’t go anywhere near the gym saturday at all.  ok sunday too :lol: . i have never liked taking two days off in a row, but i am rested and ready to attack monday head on.  i haven’t skipped a beat with my super early morning HIIT and weights classes and i’m lifting at least 3 days a week on my own.

these are plain ol’ squats with a weighted barbell. (thanks for your patience, Tamika ;) )! as an instructor, proper form is a big deal to me, and using less weight has really given me a chance to focus on the muscle i’m working and ensure i’m doing it right myself.  sometimes my thoughts are clouded with how heavy the weight is and how many reps i have left to go vs. what i’m actually doing!  now, normally i’d slap 45 lbs on my bar for class (22.5 on each side) but i’ve modified that to 30 lbs total as of late.

remember:

  • knees BEHIND toes at all times

  • sit in your imaginary chair

  • back flat

  • spine, neck, head all in alignment

  • chest lifted

  • squeeze your glutes on the way down AND up

  • put your weight in your heels. can you lift your toes in your shoes at any time?

  • pick a spot on the ceiling and focus your attention there. looking up helps to keep your chest lifted too.

so just.keep.moving.  it has been too uncomfortably cold to walk outside in Houston lately, so i have been using the elliptical, stair master, and treadmill for my cardio, 4-5 times a week.  however when it warms up i can’t wait to get back outside to my neighborhood walks again.  no idea how much weight i’ve gained and i’d like to keep it that way to be honest! i’m thinking once i deliver and start my transformation i’ll let Sonny track all my measurements and numbers in the beginning JUST for documentation/timeline purposes.  weight is just not something i want to stress myself about ever again.

conclusion:

against my wishes, i’m gonna need some maternity clothes this round.  i finally starting showingshowing around 6.5 months with my first pregnancy, so i wore all my regular, breathable clothes til i delivered for the most part. this time… belly is getting on out there and everything is tight already. especially my underwear.

Q: what was the best thing you ate this weekend? that mac n cheese made my DAY.

holy forehead acne

my close friends are like ‘girl SHUT UP about this forehead acne already. please.’ and i will. when it goes away :shock: .   forreal though, it’s the only symptom that is different from my 1st pregnancy. so 2% of me believed a mini fit foodie le was on the way.

 welp, yesterday was the day we got to confirm those (un)educated guesses.  i have been saying i don’t care about the sex… i meant that.  i still don’t care. i just can’t believe i said i would wait until i was in the delivery room to find out….HA. yeah, not doing that. this round anyway!  i commend women/couples who actually go through with it though, seriously.

i was so excited i threw on some heels and we hit the road to meet Sonny.  i asked Chi for the last time that morning,’ so, sister or a brother? ‘  he responded with ‘no thank you mama.  i don’t want a sister.’ aaaaallrightythen.

 i couldn’t help but think, ‘i was just here with Chiso.’ 3 years really did pass by that fast. funny how my entire visit happened just like last time too.  Sonny came to meet me (well us, this time) from work, and i even used the same changing room. on purpose.   i remember having to chug 20 oz or more of water just before the procedure. and i barely made it to the bathroom afterwards. like last time.

it was even the same nurse – i recognized her right away and the way she began: ‘ok please let me find what i need to find first and then we’ll eventually get to the gender, your questions, and then i’ll show you your baby in detail.’ aaaaallrightlythen. #doyourthing.  she reminded me that the procedure usually lasts an hour, but that’s cause sometimes the babies don’t cooperate or face in the best direction.  luckily our little one gave us a clear shot of the goods ;)  . i think it’s hilarious to watch the baby’s mouth opening and closing on the screen- i’m like what the heck are you even saying :lol: !?  it’s also cool to see all the punching and kicking and feel it happening in your belly simultaneously.   just in complete awe of God, again.

sweet slow cooker cornish hens + ‘Chopped’ suey

did anybody else catch the new ep of Chopped tonight!? i’m a huge fan of the show and while i thought one of the competitors, Lauren Von Der Pool ‘s performance was totally disrespectful yet comical, social media pretty much agreed and proceeded to rip her to shreds immediately the show aired :shock: . after watching i just had to google her name (apparently i wasn’t alone) and i’m just blown away yet again at the wrath of social media, my goodness.  it’s 2014 and words still hurt.  they always will.  i wish her much success and sincerely hope she takes away some valuable lessons from her Chopped experience.  anyway, i hope your #sundayfamilyfunday was pleasant!  i whipped out my crock pot this morning before church and threw this together:madewithOver-4

sweet slow cooker cornish hens

the stuff:

  • 3 whole cornish game hens
  • 1/4 cup liquid aminos
  • 1/2 cup light agave nectar
  • 2 tsp cracked black pepper
  • 1/2 cup Coconut Crystals (or coconut sugar)

do this:

  1. set slow cooker to 4hrs & 30 minutes on low
  2. place thawed birds in slow cooker
  3. coat birds in liquid aminos
  4. drizzle birds with light agave nectar
  5. sprinkle birds with cracked black pepper
  6. sprinkle birds with coconut crystals / sugar
  7. turn the birds every hour or so and coat them with the pan drippings to ensure it cooks evenly and is flavored evenly.

i was supposed to cook these guys for new years day but never got around to it.  they were served with turnip greens and a giant baked sweet potato topped with cinnamon and a tiny bit of Earth Balance Organic Whipped Buttery Spread. tip: spray your pot with no-stick cooking spray first; i forgot to do so.

my early am Lifetime classes are back on the schedule after a 2 week holiday break!  i’ll be hitting my new members and veterans with new moves, new music and a bigger bump :lol:

burritos & brothers

i am surprising myself right now because although i did make some blogging goals for 2014, blogging every day was not one of them :lol: .  well, let’s keep this going then! #nopressure

weeeeell as you saw my diet got a little outta control a few weeks ago.   the baby is supposed to be the size of an avocado at 17 weeks, and it’s definitely more me there than baby already!  or, the saying  ‘you show quicker for every pregnancy after your 1st’ has been applied. nevertheless, i have been feeling GREAT these past few days and directing all this new 2nd tri energy into my workouts.  i’m taking it slower than usual and being cautious, but i’m finally getting to the gym without having an emotional meltdown first or having to bribe myself.

my brother’s vaca time is winding on down way too fast. his fridge is pretty empty since he’s leaving again soon so i stopped by Sprouts Farmer’s Market after my morning workout to pick up the makings for some gigantic breakfast burritos:

  • La Tortilla Factory 80 calorie, low carb, whole wheat tortillas
  • 99% lean ground turkey breast
  • eggs
  • green bell pepper
  • yellow bell pepper
  • red bell pepper
  • yellow onion
  • cilantro
  • Boars Head cheddar cheese (i could have done waaaay better with this selection —-> part skim mozzarella, reduced/low-fat, almond/rice cheese, etc., but i gave into to my craving and got the real thang)
  • pineapple salsa
  • avocado (that i forgot to get)

as much as i want strawberries these days i can’t bring myself to pay that price, nope.  they are outta season, but blackberries are in and have been super cheap and affordable.  buy on sale only and save that money.

if you buy ground turkey instead of beef in an effort to save fat and calories, you MUST read the label to be sure you’re doing just that.

turkey breast is lean, but if you aren’t careful, you may grab a package that contains both breast and dark meat, which isn’t lean.  i usually come across and purchase these two varieties: 99% & 97% lean.  the leaner the meat, the higher the price. that’s just the way it is yall.  i keep my lean protein serving to 3g of fat or less. if you choose the wrong package, you might have come out better nutrition-wise picking the beef! read your labels.

later, my 1st pedi of 2014 happened. MAN i needed this. hadn’t had one since we went to Miami in September and after a couple of 5ks, let’s just say the nail tech made it snow with all my dead skin. :shocked: . and bless his heart, no more scratching up Sonny’s feet in the bed for a while.

speaking of snow, i hope we get some since it will be in the dang 20′s in Houston on Monday, whoa. bundle up!

my mom is a pre-K teacher and still on her holiday break, so she and my aunt (her sis-in-law) came over to hang out, sleepover, and keep Chiso company with us. which means, i get ta’ COOKIN’!  whipping up healthy, tasty food for my family gives me life (add that to the phrases we should stop using in 2014 :roll: ) but it best describes how i feel while i’m doing my thing in my kitchen.  now can i do all this again tomorrow?  you bet! playing hostess is FUN. what we chowed down on today:

and i found those sprouted grain buns at Sprouts Farmer’s Market recently.  i was looking for the Ezekiel ones but these were cheaper and by Alvarado Street Bakery.  heard a lot about them and was not disappointed.

no lettuce or avocado in the house, womp. but i did have condiments, tomatoes, and plenty of pickles. stuff your burgers with your fave toppings and toast your buns (makes a big difference in taste and texture).  everyone enjoyed their burger except for you-know-who.

i’ve been playing around with a squash casserole type recipe for the past few days and finally just went for it today since i was all up in the kitchen anyway. turned out better than i imagined, whoa.

cheesy spinach & squash au gratin

the stuff:

  • 2 large zucchini, raw, coined & halved (see pic above)
  • 2 large yellow squash, raw, coined & halved
  • 3 garlic cloves, minced
  • 1 small yellow onion, chopped
  • 1 tsp cracked black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp parsley
  • 1/2 cup unsweetened vanilla almond milk
  • 2 eggs
  • Earth Balance Organic Whipped Buttery Spread
  • 2 tbsp liquid aminos
  • 1 cup frozen, thawed spinach
  • 1/2 cup cheddar style rice cheese
  • 1/2 cup skim mozzarella (you may use mozzarella almond cheese as well)
  • 1/8 cup light parmesan cheese

breadcrumbs:

  • 3 slices Sara Lee 45 Calories & Delightful bread, toasted until crispy
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 cup light parmesan cheese

do this:

  1. spray your casserole dish with no-stick cooking spray and pre-heat your oven to 350 degrees.
  2. make breadcrumbs by combining listed ingredients in your food processor and pulsing until you achieve a breadcrumb-like consistency.
  3. in a large skillet over medium heat, saute the garlic, onion, zucchini, and squash together for 4-5 minutes or until translucent.
  4. add spinach, garlic powder, onion powder, liquid aminos, parsley, and cracked black pepper to pan; mix.
  5. cover pan and let cook down for 10 more minutes before shutting off the heat and pouring your squash mixture into your prepared casserole dish. set aside.
  6. in a separate bowl, whisk eggs.
  7. to the egg mixture, add 1/8 cup of parmesan cheese, 1/4 cup of breadcrumb mixture, 1/2 cup of cheese, and the 1/2 cup of unsweetened vanilla almond milk.
  8. if your squash mixture has completely cooled by now, go ahead and add the egg mixture to it in the casserole dish and mix WELL. if it’s still warm, temper the eggs by adding a little bit of squash mixture to the egg mixture (in that order, please!)  at a time to prevent making scrambled eggs.  the cold almond milk should help cool the squash mixture down faster too. once all combined, set aside.
  9. add the last 1/2 cup of cheese to  1/4 cup of the breadcrumb mixture and sprinkle it on top of your casserole evenly.
  10. bake for 40-45 minutes or until the casserole no longer jiggles when you shake the dish.
  11. let it cool then dive in.

i divided my dish into 8 nice size servings and here are the stats for 1 serving: 162 cals, 6g fat, 14g carbs, 15g protein, 4 g sugar.

lastly, for dinner, i heated up some leftover chicken & veggie stir fry and mixed it with some marinara sauce to revive the flavors. very yummy!  i also baked two pans of swai for tonight and for Sonny’s lunches tomorrow.  i don’t add ANY salt to the swai cause it doesn’t need it at all like tilapia.

  i topped these with onion powder, garlic powder, and salt free Southwest seasoning from Mc Cormick (found at Walmart and HEB) and cooked them for 30 minutes in a 350 degree oven. that’s it!  roasted brussels sprouts on the side.

a fitness gift! i am ashamed to say that this is my 3rd ipod Nano :shock: . i do not even deserve this.  but i’m grateful to have it in my life again cause i sure did miss it.  i fried my other two with my own sweat because i used my bra to house it during my workout. both times. i know.  soooooo, tomorrow i’ll be getting a nice little arm band/holder thingy to prevent that from ever happening again.  thanks Hubby. for real.

breakfast and gift exchange at my MIL’s was earlier, then we headed to my side of town to see my folks. this was dinner plate #1 at my moms: cornbread dressing, green bean casserole, turkey breast,  deviled egg, potato salad, candied yams, hummus dip with carrots and celery, cranberry sauce, and a wheat roll. this baby can EAT.

OB check up + why try swai

happy hump day and  happy 7 days til Christmas!? whoa.

had another check up 1st thing this morning and all is well in this tummy of mine, thank God.  baby’s heartbeat is a strong 150 and by the next visit we’ll be able to determine its sex.  i don’t wanna know though!!! i would love to be surprised in the delivery room, but Mr. Egwuatu says he would like to know as soon as we can find out.  so if he knows i must know too, jeez. my OB just popped out her 4th and final kiddo a few months ago and after i told her my symptoms are super similar from my first pregnancy, she said that didn’t mean a thing.  i feel like it’s another boy though and the chinese gender predictor agrees :lol:

i had a pregnancy-brain moment and ruined 36 perfectly good eggs by leaving them in my truck for 2 days.  the cartons were on the floor of the passenger seat, still in the grocery bag and everything. ugh. sooo, we made a pit stop at Whole Foods (yes i had an alterior motive) to get some more and see what they had cooking for lunch.  i let my ‘cravings’ (post coming soon) get the best of me again and got a few scoops of their vegetable fried rice and mac n cheese.  to my surprise, the stats for both were available on www.myfitnesspal.com, and i didn’t even do too bad!  just when i think a food item won’t be there after performing a search, it pops right up. LOVE THAT SITE.

 ok, this was the real reason for the WF trip. confession:  i completely forgot i was pregnant on Thanksgiving eve while i was up cooking and pretty much licked an entire bowl of leftover raw brownie batter. CLEAN. who does that? apparently pregnancy brain is real, my goodness. i did freak out afterwards but calmed down…. eventually.  i asked Sonny to bring me some of this addicting vegan cookie dough so that if i ate some raw it would totally be ok.  dairy / egg- free and tastes like the Nestle Toll House recipe batter i grew up eating. it’s incredible. incredibly dangerous. 2 tubs later…….

ok let’s talk about healthy stuff!  swai fish was the same price as tilapia fillets at Walmart this week so i chose them to give our taste buds something different.  here’s how they stack up:

i made a Swai Po’ Boy sammich with it cause the texture and taste is like that of catfish to me.  tilapia is definitely flakier though.

i coated the fillets in my homemade whole wheat breadcrumbs mixture (no parmesan cheese and swapped the Italian seasoning for salt-free Caribbean Jerk), and pan-fried them in 2 tsp of coconut oil for 5-7 minutes on each side.

i threw the fillet on a ciabatta loaf over shredded lettuce, tomatoes, pickles, and topped it with some homemade sriracha ‘mayo’!

for the mayo, it’s:

  • 2 heaping tbsp of greek yogurt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 tsp sriracha
  •  few shakes of seasoned pepper (by Mc Cormick)
  • squeeze of fresh lemon juice (optional)

mix!
