i started saturday morning with a RUN!  yep, i stepped it on up and turned my power walk into a run. after a restful night i felt the urge and had the energy to do more for my workout.  and uhhh, my legs said GO but my boobs said NO.  ouch. so it definitely became more of a jog/walk kinda thing for about an hour or so. nice, early, humid workout nonetheless.

 great support from both sports bras and regular bras is EVERYTHING when it comes to postpartum boobs.  all boobies are different but i am now back up to a D cup (k, double) after getting quite comfy and confident with my B’s post bikini comp last year.  my strongest, most supportive, ‘old faithful’ sports bra is so old actually that i can only find it used on eBay lol. it’s the Asics Athletic Seamless Racerback bra and has served me well, so i’m sticking with the Asics brand from here on out. it’s like a brand new bra after every wash- it tightens back up and provides maximum support.

mama and papa stepped out for a hot date saturday night!  dates are good. dates are refreshing.  dates keep things going, exciting, and refreshing. dates give you something to look forward to.  we are going on 7 years of marriage this year!  i actually had something really cool planned that fell through….but i didn’t reveal it to Sonny yet cause i’m totally gonna try again.  so, we went to dinner anyway to just enjoy some kiddo-free time. and burgers.

repeat offender.  just one of those things Sonny has grown to ‘love’ about me.  even if we’re at a new spot- i always play it safe and order salmon, and then we argue on how to even say salmon correctly.

this was a spring mix salad with radish and tomatoes.  now that i think about it, our waiter didn’t ask me when kind of dressing i even wanted, so no idea there.  i was living life on the edge and didn’t get my dressing on the side this time.

Sonny asked our waiter what the quickest appetizer to make was (kinda hungry, aye?) and he said the flash fried shrimp.

zucchini pepperoni pizza poppers

Bey and J are performing in Houston tonight and guess who’s going!??!?! all of Houston!!!  except us. we’re at home eating zucchini pizzas and staring at each other.

IMG_20140718_174525these healthy, light snacks are bursting with Italian, cheesy goodness and make THE perfect party appetizers by the way! you just need to serve them immediately while they are hot and bubbling. else, the cheese hardens up. but i can eat cheese at any temperature. especially burnt cheese. yummy.

Zucchini Pepperoni Pizza Poppers

the stuff:

  • 2 raw zucchini, coined 1/2 in thick
  • 1/3 cup homemade marinara
  • 1/4 cup turkey pepperoni rounds, chopped
  • no stick cooking spray
  • Italian seasoning
  • 1/2 cup shredded cheese of your choice (vegan, dairy-free, cheddar, monterey  jack, pepperjack, mozzarella, etc.)

do this:

  1. wrap a large flat baking plan with foil and coat with no-stick cooking spray and set your oven broiler to high
  2. heat a large griddle to med-high heat  (i made pancakes for breakfast and the griddle was already out but you can use a very large skillet too) and coat it with no-stick cooking spray
  3. place as many zucchini coins flat on the griddle as possible and cook for 1 minute (you may have to work in batches)
  4. flip the coins over and cook for an additional minute
  5. transfer the cooked coins to the baking sheet lined with foil
  6. dab some marinara sauce on the top of each coin and using the back of a small spoon, spread mixture out

  8.  sprinkle a few shreds of cheese on top of the sauce
  9.  sprinkle some chopped turkey pepperoni on top of the cheese
  10. place entire pan in your oven as close to the broiler flames as you can get and cook for approx. 5 minutes or until the cheese is melty and bubbly
  11. sprinkle with Italian seasoning. done.

s/n: if you have more zucchini to use up, see if you can stretch your ingredients even further as you might have sauce/cheese, etc. left over.

 i upgraded my fry cutter!  this is the Deluxe Fry Cutter from Bed Bath & Beyond and i got it for 13 bucks after using the 5 bucks off coupon that comes in the snail mail flyer.  great, affordable investment.  the only thing i did have to do first is peel the potato, then slice it in half.  the device only opens so wide, so you might have to cut the ends off to make it fit.  other than that, no microwaving needed before cutting!  sign up for their ads directly on their website to get their coupons.

what a big helper! not just in the kitchen with me but with his little brother as well which is a huge answered prayer. many have asked how the transition with the boys has been and i can honestly say smooth.  putting Dego’s dirty diapers in the diaper genie for me is exciting to him. yeah, i’m milking that for as long as he lets me.

WHY didn’t i think of this sooner… Quest Bars help out big time with my sweet toof.  i really i only get them when i go to my gym, so now that i’m going almost regularly the bars are making appearances again. THIS time though, i’m going to GNC and buying an entire box. can’t keep buying them for 3 bucks at a time, pretty stupid and not cost-effective.  20g protein, 17g fiber, 170-180 cals. coconut cashew is one of my fave flavors! .

didn’t get to have my early gym rendezvous this morning so i went power walking this evening.

 Easter came and went and so did my window to type this post :o .

we spent our entire Easter weekend with FAMILY. my amazing cousins came over to hang out that saturday and you already know burgers were on the menu with toppings galore.  i had such a fun time just talking, eating, and laughing my face off with them about any and everything.  we hadn’t all gotten together since Thanksgiving of last year which is so unlike our fam.

there it is.  the platter that made us late for church.  i envisioned cooking this up in my mind all morning while laying in bed…even had a couple of dreams about it while drifting in and out of sleep.  what i should have done was just GET UP cause when i went down to the kitchen we had absolutely no bread :/ .  so i jumped in the car (headscarf, glasses, pj’s – yeah, i took it there) just to get a loaf of bread. i know.  at least i didn’t see anybody i knew. that’s always next.

we went to see some of my younger cousins perform in an Easter play at my aunt’s church, then headed to dinner at her home which is always a treat. always.

33 weeks + Double Chocolate Skinny-Fat Brownies

 in the beginning of the 2nd tri i remember sometimes forgetting i was even preggo.  didn’t feel anything on the inside most days and definitely wasn’t showing on the outside yet.  yeah, those days are OVER.  i actually feel great and my energy didn’t deplete like i expected at 33 weeks now, but as my little nugget grows, obviously the discomfort does too.

you know that hasn’t stopped me from moving though!  outside of teaching my Lifetime classes, i look forward to Zumba and Kickboxing for my cardio because they are just so FUN to take.   some days all i want to do is move, nothing serious.  i’ve been constantly reaching for healthy fat to nourish the baby and i and i’m slightly addicted to Dark Chocolate Dreams by Peanut Butter & Co on my early morning pre-workout snacks as you can see!

other healthy fat sources:

  • avocado! homemade guacamole (2 avocados, 1 roma tomato, sea salt, juice of 1/2 a lemon, 2 tbsp minced cilantro – BLEND)
  • raw or roasted, unsalted almonds, pistachios, and cashews
  • olive & coconut oil
  • lite & full-fat coconut milk
  • natural peanut butter, nut butters in general
  • flaxseed
  • mackerel & salmon

today was my last ultrasound scan until we meet baby Odego.  my OB just wants to make sure he is measuring correctly and will compare his progress to the last scan.

Sonny always asks me why i cuff my bump. i don’t know!!!! it’s just something we do. my hand just goes there automatically. especially in pictures.

 remember, your postpartum ‘transformation’ starts the MOMENT you get preggo, not after you deliver your baby! smart food choices and physical activity from start to finish is what makes the difference in your recovery time.

for my Sunday Dinners cooking class last evening, we made Fit N’ Crispy Chicken Parm and Thai Coconut Curry Chicken (recipe coming up next post!) – two flavorful, fun, things you can do with those plain ol’ chicken boobs.

i sent my students home happy and packed up all the leftovers for them to kill later.  which left me with, well, nothin’!! it’s all about you guys though.  sooo, i made a big pan of parm for mysel….err, my family today and my Italian fix has once again been satisfied.

they also went home with a sample of these guys: Double Chocolate Skinny-Fat Brownies! why? cause i used skinny / healthy ingredients (no processed sugar, whole wheat flour, no butter) but it still tastes like a brownie should.  i had my fingers crossed that they would be a hit and they were!  which means i’ll be whipping some up for a ‘Skinny’ themed private 30th birthday event next month.  YES, i do those too!  email me for all the details at le@fitfoodiele.com.

Double Chocolate Skinny-Fat Brownies

the stuff:(source)

  • 2/3 cup pure maple syrup or honey
  • 1/3 cup unsweetened cocoa powder + 2 tsbp
  • 3 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 cup semisweet or dark chocolate chunks, chips, or mini morsels
  • 1/2 cup white whole-wheat flour (i used King Arthur)
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1 large egg, beaten and at room temp
  • 1/4 – 1/2  cup pecan pieces (optional;  can add to batter or save for topping)

do this:

  1. preheat oven to 350 degrees F and coat an 8 in square pan with no-stick cooking spray.
  2. mix the maple syrup and cocoa powder together really good (you’ll be stirring for a minute, just keep going).
  3. combine all dry ingredients in a separate bowl.
  4. in another bowl, add the applesauce, oil, egg, and vanilla.  work in the maple syrup / cocoa mixture.
  5. add the wet mixture into the flour and stir until well combined.
  6. pour into your pan and let bake for about 25 minutes or until an inserted toothpick comes out clean.

TIPS:

*remember, there are chocolate chunks in the batter so don’t mistake the melted chocolate on the toothpick for uncooked batter like i did.

*let the pan cool a little then place it in the fridge for about 20 minutes before serving. i just popped a piece in the microwave for 10-15 secs before eating.

*when cutting, run hot water on your knife for a few secs first to make clean cut squares each time.

bottoms up + big news on the way

starting to really feel like i suck at multitasking. or maybe it’s prioritizing. both. idk :roll: idk, but whenever i am focused on my next move it’s like i can’t focus on anything except THAT thing. what thing? hosting my very own COOKING CLASS!!!! i have finally secured a location to do my thang (workout classes are coming right along with that) and i am crazy excited about it. i can’t help but to be. this is what i do! a much more detailed announcement will be made really soon.  extremely soon.

Chi and i hit the road for my monthly check up.  while there, that yummy, delicious, glucose drink was also waiting for me to chug.  i can’t believe it’s time to test for gestational diabetes already! it’s done somewhere in between weeks 24 and 26.

if i had a dollar for every time i’ve had to look at someone’s confused face and say ‘oh, i’m a blogger’, i’d go buy a pair of shoes with it :lol: . the phlebotomist shot me a ‘why are you snapping pics of that of all things?’ look. when i did this test for my 1st pregnancy i went online to read reviews on how the test would go, and with that came comments about how horrid and disgusting this stuff was. so of course i walked in very hesitant and expecting the absolute worst. verdict: no big deal. seriously. i tuned that bottle upside down and drank it all at once, no breaks. after i told Chiso why he couldn’t have any orange soda lol.

some recent IG eats!  man those zucchini fritters are so dang good. please go make them if you haven’t already. i am out but bought a ton of zucchini at Sprouts a few days ago and will be making more soon.

clockwise:

  • lean ground chicken burger w/ tomatoes & mozzarella almond cheese using zucchini fritters for buns
  • crock pot sirloin stead seasoned with Weber Chicago Streak seasoning and cooked on low for 6 hours w/ roasted asparagus and smashed red potatoes.  i boiled the red potatoes until tender, then added green onion, cilantro, some plain  non-fat yogurt, and organic whipped buttery spread. mozzarella almond cheese melted on top!
  • a gigantic salad from the HEB salad bar
  • zucchini cakes with herb goat cheese, pan seared tilapia, roma tomatoes, and strawberries.

still trying to keep it clean for the most part….even though i want Papa Johns pizza all day every day. no sweets for me…cheese must go on everything.

  baby boy (we have a name but i’ll let Sonny finalize it first) is measuring the size of a banana this week.  i’m feeling him move all the time, day and night, and the flutters have definitely turned into random punches, kicks, and pokes.  my nurse says i am not drinking enough water (no surprise there unfortunately) so i’ve been chugging when i can.  so i have to pee all the time. day and night. i have to pee right after i finish peeing. no kidding. so annoying!!!!!! :evil:

trying my hardest to keep things on the healthy side for the most part. here are some recent eats:

been grilling up lots of chicken. people tell me they get tired of chicken quickly but as long as i switch up the flavors often, it’s like eating it for the first time to me.  i found the Weber Kickn’ Chicken seasoning blend a few days ago at my Walmart and i really like it so far. i don’t even mind the spice, which i’ve never been crazy about!  yummy.  since Sonny is about to be on the competition trail again he’s been eating lots of tilapia, so i usually eat some too with my meals.  i made that homemade bbq chicken pizza using Naan flat bread up there and omg. it was just incredible.   along with all my meals though, plenty of veggies and fresh fruit, everyday. some nights i have a strong craving for SOMETHING…… and nothing i eat will satisfy it. nothing. so i just eat a small chunk of cheese and go to bed.

and then there’s the occasional indulgence i have yet to deny myself.  Boston Market mac n cheese. why? because CHEESE.

staying active:

getting it in 5-6 days  a week lately!  this past week i went 6 days in a row so i didn’t go anywhere near the gym saturday at all.  ok sunday too :lol: . i have never liked taking two days off in a row, but i am rested and ready to attack monday head on.  i haven’t skipped a beat with my super early morning HIIT and weights classes and i’m lifting at least 3 days a week on my own.

these are plain ol’ squats with a weighted barbell. (thanks for your patience, Tamika ;) )! as an instructor, proper form is a big deal to me, and using less weight has really given me a chance to focus on the muscle i’m working and ensure i’m doing it right myself.  sometimes my thoughts are clouded with how heavy the weight is and how many reps i have left to go vs. what i’m actually doing!  now, normally i’d slap 45 lbs on my bar for class (22.5 on each side) but i’ve modified that to 30 lbs total as of late.

remember:

  • knees BEHIND toes at all times

  • sit in your imaginary chair

  • back flat

  • spine, neck, head all in alignment

  • chest lifted

  • squeeze your glutes on the way down AND up

  • put your weight in your heels. can you lift your toes in your shoes at any time?

  • pick a spot on the ceiling and focus your attention there. looking up helps to keep your chest lifted too.

so just.keep.moving.  it has been too uncomfortably cold to walk outside in Houston lately, so i have been using the elliptical, stair master, and treadmill for my cardio, 4-5 times a week.  however when it warms up i can’t wait to get back outside to my neighborhood walks again.  no idea how much weight i’ve gained and i’d like to keep it that way to be honest! i’m thinking once i deliver and start my transformation i’ll let Sonny track all my measurements and numbers in the beginning JUST for documentation/timeline purposes.  weight is just not something i want to stress myself about ever again.

conclusion:

against my wishes, i’m gonna need some maternity clothes this round.  i finally starting showingshowing around 6.5 months with my first pregnancy, so i wore all my regular, breathable clothes til i delivered for the most part. this time… belly is getting on out there and everything is tight already. especially my underwear.

Q: what was the best thing you ate this weekend? that mac n cheese made my DAY.

holy forehead acne

my close friends are like ‘girl SHUT UP about this forehead acne already. please.’ and i will. when it goes away :shock: .   forreal though, it’s the only symptom that is different from my 1st pregnancy. so 2% of me believed a mini fit foodie le was on the way.

 welp, yesterday was the day we got to confirm those (un)educated guesses.  i have been saying i don’t care about the sex… i meant that.  i still don’t care. i just can’t believe i said i would wait until i was in the delivery room to find out….HA. yeah, not doing that. this round anyway!  i commend women/couples who actually go through with it though, seriously.

i wake up wanting real cheese, eggs, and toast. every morning. most days this is dinner too.  so after a filling breakfast and some 19 week selfies,

i was so excited i threw on some heels and we hit the road to meet Sonny.  i asked Chi for the last time that morning,’ so, sister or a brother? ‘  he responded with ‘no thank you mama.  i don’t want a sister.’ aaaaallrightythen.

 i couldn’t help but think, ‘i was just here with Chiso.’ 3 years really did pass by that fast. funny how my entire visit happened just like last time too.  Sonny came to meet me (well us, this time) from work, and i even used the same changing room. on purpose.   i remember having to chug 20 oz or more of water just before the procedure. and i barely made it to the bathroom afterwards. like last time.

it was even the same nurse – i recognized her right away and the way she began: ‘ok please let me find what i need to find first and then we’ll eventually get to the gender, your questions, and then i’ll show you your baby in detail.’ aaaaallrightlythen. #doyourthing.  she reminded me that the procedure usually lasts an hour, but that’s cause sometimes the babies don’t cooperate or face in the best direction.  luckily our little one gave us a clear shot of the goods ;)  . i think it’s hilarious to watch the baby’s mouth opening and closing on the screen- i’m like what the heck are you even saying :lol: !?  it’s also cool to see all the punching and kicking and feel it happening in your belly simultaneously.   just in complete awe of God, again.

sweet slow cooker cornish hens + ‘Chopped’ suey

did anybody else catch the new ep of Chopped tonight!? i’m a huge fan of the show and while i thought one of the competitors, Lauren Von Der Pool ‘s performance was totally disrespectful yet comical, social media pretty much agreed and proceeded to rip her to shreds immediately the show aired :shock: . after watching i just had to google her name (apparently i wasn’t alone) and i’m just blown away yet again at the wrath of social media, my goodness.  it’s 2014 and words still hurt.  they always will.  i wish her much success and sincerely hope she takes away some valuable lessons from her Chopped experience.  anyway, i hope your #sundayfamilyfunday was pleasant!  i whipped out my crock pot this morning before church and threw this together:madewithOver-4

sweet slow cooker cornish hens

the stuff:

  • 3 whole cornish game hens
  • 1/4 cup liquid aminos
  • 1/2 cup light agave nectar
  • 2 tsp cracked black pepper
  • 1/2 cup Coconut Crystals (or coconut sugar)

do this:

  1. set slow cooker to 4hrs & 30 minutes on low
  2. place thawed birds in slow cooker
  3. coat birds in liquid aminos
  4. drizzle birds with light agave nectar
  5. sprinkle birds with cracked black pepper
  6. sprinkle birds with coconut crystals / sugar
  7. turn the birds every hour or so and coat them with the pan drippings to ensure it cooks evenly and is flavored evenly.

i was supposed to cook these guys for new years day but never got around to it.  they were served with turnip greens and a giant baked sweet potato topped with cinnamon and a tiny bit of Earth Balance Organic Whipped Buttery Spread. tip: spray your pot with no-stick cooking spray first; i forgot to do so.

my early am Lifetime classes are back on the schedule after a 2 week holiday break!  i’ll be hitting my new members and veterans with new moves, new music and a bigger bump :lol:
