LA road trip – Destiny Christian Center Health Fair

so i got a chance to do my first live cooking demo this past weekend at a health fair held at the Destiny Christian Center in LaPlace, Louisiana :shock: :)

 the day before though, Chiso and i had the pleasure of meeting a fit foodie le supporter in HEB while i was picking up a few last-minute things for our road trip.  i so thought i was being reprimanded for going back to the grape sample bowl too many times, but nope, it was Tiara, a fit mom of two doing some shopping with her mom and just introducing herself!  she asked about getting started with grocery shopping and well, i will cover ALL that and more in my (hopefully) next post. nice meeting you lady.

we hit the road at 3 somethin’ AM, homemade egg white & bacon bowls to-go (2 slices sara lee 45 cals & delightful bread for me, 1 whole wheat tortilla for him) in tow.

by the grace of God we made it right on time,

and started setting up immediately.  i made the Mo-Rockin’ Chicken and Cold Cucumber & Tomato salad w/ Dill from my ebook, and also whipped up some of my oatmeal banana pancakes.

i spoke to the attendees about healthier ingredients (swaps) when cooking at home, shared a starter grocery list, grocery shopping tips, and concluded with a little Q & A.

Food Network ain’t ready for me!!!!!! i ain’t read for them either though :lol: . those cooking show hosts make it look CRAZY easy. cooking & talking (and making sense) in front of people or a camera is no easy task, but it will just take practice, practice, and  mo’ practice for me.

sweet potato pie + Light of Hope Festival

i know Thanksgiving is headed our way, but not that kinda pie yet! we had guilt-free, sweet potato crust pizza for dinner last night from my ebook.

i usually make 3 mini pizzas, but i did a large one for the very first time.

our toppings included: fire roasted all natural pizza sauce, fresh spinach, sliced roma tomatoes, fat-free feta, shredded mozzarella almond cheese,  golden & orange bell peppers, and italian seasoned extra lean ground chicken.

Chiso actually ate a small piece after taking off all the toppings, so i made him a small pie with cheese only. the ‘what will Chiso eat today?’ saga continues. :shock:

calorie count for 1 piece of crust (1 large pizza cut into 8 slices): 67 cals, 0g fat, 14g carbs,  2g sugar,  2g fiber, 3g protein!

game changers

anybody else used to buy those tiny wheatgrass shots from Jamba juice?  i did it more than a handful of times.  seeing this wheatgrass powder at Sprouts Farmers Market reminded me of my frivolous spending days.

i cracked the bag open for the first time yesterday and made some  maple wheatgrass pancakes with it!  turned out good enough to share. so i will.

maple wheatgrass pancakes:

the stuff: 🍩

  • 1/2 cup oat bran 🍩
  • 2-3 heaping tbsp wheat grass powder 🍩
  • 1 tsp maple extract 🍩
  • 1 tsp vanilla 🍩
  • 2 egg whites 🍩
  • 1/2 tsp baking powder 🍩
  • 4 tbsp unsweetened vanilla almond milk (or more if batter is too thick)
  • 1-2 packets stevia 🍩
  • 2 tbsp unsweetened apple sauce

do this:

combine real good and cook up like cakes in your no-stick cooking spray coated, medium heated skillet!  3-4 minutes each side.  top however you like – i chose pecan pieces and Walden Farms zero calorie pancake syrup.

i took a FULL rest day yesterday and did some grocery shopping .  Walmart was planned.  Whole Foods was not.

after sacking 43 lbs of sweet potatoes in Wally World, my eyes caught ahold of a big end cap of these One Step French Fry Cutters.  *jaw drops*  and then i saw the price directly below them: $9.88.  *jaw drops lower*.  i threw the cutter as well as all the skepticism ‘as seen on tv’ products come with in my buggy and kept truckin’.

i’d say it worked pretty well, wouldn’t you!? great investment.  i like to chop my veggies by hand, but you can use this thing to chop up a bunch of other stuff too (garlic, shallots, etc).  here’s an IMPORTANT TIP though: nuke your potatoes for 1.5 minutes or so (really depending on size) AND cut them in half so it will fit in the gadget (think hamburger style, not hot dog).  and be super careful not to  over cook them! it will create a huge mess.  don’t ask me how i know. ugh.

so about Whole Foods… it never fails. i always come out with extra stuff and a biggER bill. i went to get some Bob’s Red Mill Whole Wheat Pastry Flour which i could not even find (nor could the store associate) so i got some from the bulk bins. and on the way out i found these two gems:

vegan, gluten-free, organic Sprinklez by Let’s Do Organic (cause they DO exist apparently), and vegan (dairy-free, gluten-free, egg-free) Chocolate Chip cookie dough by Eat Pastry.  why did i even bring this up in my house :shock:

 i entered a crazy fluffernutter (marshmallow fluff) challenge on IG last night at the last-minute using what i had and made a big fluffernutter pazookie pie!

man the weekend went by freakishly fast! yesterday morning i missed my saturday morning workout for the second straight saturday, uuuuugh. but with good reason!  i attended my first AKA chapter retreat with my Sorors and had a seriously fun time.

i found myself looking back on some of my older posts recently and they were so dang long i lost interest myself :shock: . so i’m gonna try somethin’ a little different in an effort to get more posts out during the week. cool? cool.

i have so many dang recipes on Instagram (fitfoodiele)  i need to add to the fit recipes section it’s not even funny.  so here’s  the homemade strawberry chia jam by request and as promised!

homemade strawberry chia jam

the stuff:

  • 1 cup diced strawberries
  • 1 tbsp chia seeds
  • 2 packets stevia

do this:

add your chopped strawberries to a small sauce pan on medium heat; add stevia and mash together with your fork.  as SOON as it starts to simmer, turn the heat off and add the chia seeds; incorporate real good.  you can also do this in the microwave.  just nuke the strawberries for 30 seconds, stir in the stevia,  nuke for 30 more seconds, take out, and add the chia seeds and mash it all up with a fork.  if you have an emulsion blender, use it!  if not, do i like i did and throw it all in your bullet, food processor, or blender and give it a few quick whirls until smooth.  put it in the fridge so the chia seeds can do their thing and thicken.

it’s me. so if i’m going to be a nationally known blogger, i might need to blog then, huh. hi. my head is spinning with a full to-do list all day every day and i can’t even begin to tell you how much i miss blogging consistently!  even though i haven’t blogged consistently since i started :lol: anyway, i have given my all to these ebooks for the past few months and i am sick of them!! i’m waiting on one last mandatory piece to this puzzle before i put these bad boys on out there. i do thank you sincerely for being so patient with me.  if you’ve been with me for a while, you know how me and the balance thing goes…  i’m still growing, learning, and getting better.  i’m not even gonna attempt to try to play catch up with yall this time smh, but hopefully you’ve been following me on Instagram and keeping up with me there!

what’s new?  the Fit Foodie Finisher silicone bands are finally IN. i am super pleased at the way they turned out!  they serve as a token of appreciation for each person that commits to run with me, and hopefully they serve as a reminder to keep up the running habit.

the Esprit De She 5k went down this past Thursday night juuuust before the rain storm moved on in. it was super humid at 6pm but that’s Houston for ya.   it was a great turn out despite the weather and it being their very first year!  this brings the Fit Foodie Finisher’s total to 40k for 2013 so far. AWESOMENESS.

during my last visit to Walmart, i went extract crazy on accident-  i just kept seeing different flavors i wanted to try!  i got coconut, strawberry, lemon, butter, almond, vanilla, maple, and raspberry. after i got home, someone posted an IG pic of peanut butter extract. i would have gotten that too had i seen it.  anyway i’ve been trying them in my recipes:

i tried the strawberry extract in yesterday’s bowl of oats.  i cooked them in water, unsweetened vanilla almond milk, vanilla extract, strawberry extract, cinnamon, and stevia, then topped them with fresh strawberries.  Chiso ate that UP!

next, i tried some of the maple extract in those cakes up there. this recipe is featured in my ebook!  maple banana oatbran pancakes…and check their stats:

this was my meal 5 from last night- i perfected the whipped sweet potato recipe for the e-book and enjoyed some with a pan seared tilapia fillet cooked in Bragg liquid aminos and Mrs. Dash onion & herb seasoning! that was all over some fresh, steamed asparagus.

i had some grilled pineapple left over, so i made a super quick ‘salsa’ to go on top of the fish.

the stuff:

  • 1 cup grilled pineapple, chopped
  • 2 tbsp red bell pepper, diced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp fresh lime juice

do this:

chop it all up and mix it together! super quick and easy topping for any protein.

last night we attended a home going celebration for a close family member.

if you’re Nigerian, then you can name every single thing on my plate, especially those wonderful, delicious PLANTAINS!!!! my favorite.  if you’re not lol, it’s jollof rice, stewed stock fish and vegetables, spinach, plantains, and there is some super tender goat meat in there somewhere.  i’ll be adding more Nigerian dishes to my repertoire, don’t worry.

you still with me?  today, we met up with a former 6 Pack USA client and Instagram #fitfam member @waltlewjr and chowed down on some Ruggles Green eats! good times, good food & good peeps! I had a mixed greens salad topped with jicama, dried blueberries, and tomatoes and tore up that roasted chicken pizza with Chiso. Sonny had the kobe beef burger with sweet potato fries.  no fish tacos, this time. s/n: why couldn’t Chiso have smiled like that for our family pictures :roll:

the last time i ate RG’s roasted chicken pizza was in 2010 when i was preggo and i ate the entire thing, solo!!! i mean, we.
