oatmeal chocolate chip birthday cakes!!! – bday post

this year, my birthday fell on a monday. YIPPEEEEE :?

so Sonny started celebrating early (like i had hoped).  immediately after church service, we went to get our rings cleaned.

i promise we’re only in our thirties. lol.  Chiso saw us placing our hands strategically on the display case for this pic and wanted part of the action.

over time, i have come to the realization that i’m a hint thrower.  what a lucky guy Sonny is.  rarely does one go over his head though, i gotta give it to him.  i forwarded him a Ruggles Green brunch email i received a few weeks earlier, you know, randomly.  high-five, Sonny.  high-five.

so that was our next stop.  only the Heights location serves breakfast / brunch in Houston, and i had been eager to check it out for months.  i chose the delish crab & avocado omelette and Sonny played it safe with the breakfast plate (sausage, pancakes, eggs, potatoes).  Chiso handled up on his turkey sausage, scrambled eggs, and pancakes too.  we love us some eggs.

the next day, my actual birthday, Sonny got up and rushed off to work like normal, so i hit the gym early, like normal.

but not before making this gorgeous stack of oatmeal pancakes! with the start of my cooking classes, blogging took a small backseat. obvi. but i believe i have a routine going now with my schedule. *crosses fingers, toes, and eyes*.  here’s that recipe:

Oatmeal Chocolate Chip Pancakes 

the stuff: (source)

  • 3/4 cup whole wheat pastry flour
  • 1/4 cup dry rolled oats
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 3/4 cup unsweetened vanilla almond milk (add more if needed- you be the thickness judge)
  • 2 packets granulated stevia
  • 1 tbsp agave nectar or honey (optional)
  • dash of sea salt
  • 1 tbsp melted coconut oil
  • handful of dark chocolate chips

do this:

  1. mix all ingredients except chocolate chips together in a large mixing bowl.
  2. if ya need more almond milk at this point, add it a tbsp at a time.
  3. heat your griddle or cast iron / no-stick skillet to medium heat and coat with no-stick cooking spray.
  4. spoon the cakes onto your cooking device as large or as small as you’d like them.  when bubbles start to form on top, check the bottom of the cake to see how brown it is first before flipping.
  5. you’re looking for a golden brown color (bout 2-4 minutes).
  6. eat’em up. sprinkles are optional but mandatory if it’s your birthday.

or, you can do blueberries instead of chocolate chips!

i took a Barbell Strength class and worked my back a little more on my own in addition to some steady-state cardio on the elliptical. suddenly, i got a ‘lunch?’ text from Sonny, so i said ‘screw this!’ and sped home to get cleaned up.

   Sonny shocked our palettes and drove us to an Indian inspired restaurant in Upper Kirby called Ponidicheri.  he didn’t know it was ‘meatless monday’ though lol. tasty  nonetheless and i appreciate the experience.

20140407_134832_1i got the Saag Paneer Omelette, Barley Salad, a piece of gluten-free, millet Roti, and one of their fresh, housemade juices, the Hari.

 Sonny got an omelette too.  They didn’t really have a kids menu, but the guy taking orders suggested this concoction.  can you guess which two Chiso ate? yep, the fries and the Elephant Cookie.

i got a birthday nap back at home (YAAAAAY for daytime sleep) and we went back out for dinner that evening.  i was actually still full from lunch but went anyway just cause it was my bday and already on the agenda.

my cups runneth over :shock: ! literally and figuratively.  we concluded the evening with Italian food and Neapolitan gelato from Sapore Ristorante, right in our own backyard.  which was awesome cause i had to be up at 4:15am  to teach my class the next day.

i feel like i’m at the age where i forget what i’m even turning and that my birthday is even coming up.  thankful to God for another year though, no doubt, and for Sonny’s impeccable planning skills year after year.

having a little fun with healthy breakfasts these days!  it’s whatever works and gets Chiso’s plate clean, and these have proven to do just that. he thinks it’s hilarious (telling a funny story along with it helps too) and i enjoy creating them. just some ideas for your picky eater(s) fueled by Pinterest.

this morning we had whole wheat pancakes and i’d love to share this easy recipe with ya as promised.

easy whole wheat pancakes

the stuff:

  • 1/2 cup whole wheat pastry flour
  • 1/4 cup unsweetened vanilla almond milk + 2 tbsp
  • 1 packet stevia
  • 1 tbsp unsweetened applesauce
  • 1 whole egg
  • 1 tsp vanilla extract
  • 1 tsp melted coconut oil
  • 1 tsp baking powder

do this:

  1. heat your griddle or pan to med heat and coat it with no-stick cooking spray.
  2. mix all ingredients well in a large mixing bowl.
  3. drop 2 tbsp worth of batter onto your griddle and cook 2-3 minutes on each side (flip when you see bubbles form)
  4. top however you’d like and eat warm!

makes 15 (or more) silver dollar sized pancakes. for 1:

pan fried curry zucchini fritters + yeeeee-haw! Rodeo Run 5k

the Rodeo Run went down yesterday morning!  i picked up my race packet Friday and brought along a list of 3-year-old b-day party locations to check in the area.  yep, Chiso’s getting a birthday party this year.  we did a small gathering at the house last year for his 2nd and remember i went batty for his 1st  so now it’s time to venture out.  i think. suggestions? email me.

so about that zucchini fritter recipe i own ya…. ugh, they are so incredibly tasty.  Sonny took a bite of one and was like, ‘there’s no meat in this?’

nope.

pan fried curry zucchini fritters

the stuff: (source)

  • 3 large zucchini, shredded/grated
  • 3 green onion, chopped
  • 1/2 cup almond meal or flour
  • 1/2 cup light parmesan cheese, shredded
  • 2 eggs, beaten
  • 1 egg white, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp curry powder
  • 1-2 tbsp liquid aminos
  • 1 tsp cracked black pepper

do this:

  1. use the larger holes when grating zucchini and shred them onto a dry cup towel.
  2. use those muscles and squeeze out all the liquid possible.
  3.  add all ingredients to a large mixing bowl and incorporate well.
  4. heat a pan on HIGH coated with nonstick cooking spray (or pour a tsp of olive oil into the pan and spread it around)
  5. place heaping tbsp size scoopfuls of mixture onto hot skillet and press down flat.
  6. convert heat to LOW and cook for approx. 5 minutes on each side until golden brown and done. be patient.

holy forehead acne

my close friends are like ‘girl SHUT UP about this forehead acne already. please.’ and i will. when it goes away :shock: .   forreal though, it’s the only symptom that is different from my 1st pregnancy. so 2% of me believed a mini fit foodie le was on the way.

i was so excited i threw on some heels and we hit the road to meet Sonny.  i asked Chi for the last time that morning,’ so, sister or a brother? ‘  he responded with ‘no thank you mama.  i don’t want a sister.’ aaaaallrightythen.

 i couldn’t help but think, ‘i was just here with Chiso.’ 3 years really did pass by that fast. funny how my entire visit happened just like last time too.  Sonny came to meet me (well us, this time) from work, and i even used the same changing room. on purpose.   i remember having to chug 20 oz or more of water just before the procedure. and i barely made it to the bathroom afterwards. like last time.

it was even the same nurse – i recognized her right away and the way she began: ‘ok please let me find what i need to find first and then we’ll eventually get to the gender, your questions, and then i’ll show you your baby in detail.’ aaaaallrightlythen. #doyourthing.  she reminded me that the procedure usually lasts an hour, but that’s cause sometimes the babies don’t cooperate or face in the best direction.  luckily our little one gave us a clear shot of the goods ;)  . i think it’s hilarious to watch the baby’s mouth opening and closing on the screen- i’m like what the heck are you even saying :lol: !?  it’s also cool to see all the punching and kicking and feel it happening in your belly simultaneously.   just in complete awe of God, again.

burritos & brothers

i am surprising myself right now because although i did make some blogging goals for 2014, blogging every day was not one of them :lol: .  well, let’s keep this going then! #nopressure

weeeeell as you saw my diet got a little outta control a few weeks ago.   the baby is supposed to be the size of an avocado at 17 weeks, and it’s definitely more me there than baby already!  or, the saying  ‘you show quicker for every pregnancy after your 1st’ has been applied. nevertheless, i have been feeling GREAT these past few days and directing all this new 2nd tri energy into my workouts.  i’m taking it slower than usual and being cautious, but i’m finally getting to the gym without having an emotional meltdown first or having to bribe myself.

my brother’s vaca time is winding on down way too fast. his fridge is pretty empty since he’s leaving again soon so i stopped by Sprouts Farmer’s Market after my morning workout to pick up the makings for some gigantic breakfast burritos:

  • La Tortilla Factory 80 calorie, low carb, whole wheat tortillas
  • 99% lean ground turkey breast
  • eggs
  • green bell pepper
  • yellow bell pepper
  • red bell pepper
  • yellow onion
  • cilantro
  • Boars Head cheddar cheese (i could have done waaaay better with this selection —-> part skim mozzarella, reduced/low-fat, almond/rice cheese, etc., but i gave into to my craving and got the real thang)
  • pineapple salsa
  • avocado (that i forgot to get)

as much as i want strawberries these days i can’t bring myself to pay that price, nope.  they are outta season, but blackberries are in and have been super cheap and affordable.  buy on sale only and save that money.

if you buy ground turkey instead of beef in an effort to save fat and calories, you MUST read the label to be sure you’re doing just that.

turkey breast is lean, but if you aren’t careful, you may grab a package that contains both breast and dark meat, which isn’t lean.  i usually come across and purchase these two varieties: 99% & 97% lean.  the leaner the meat, the higher the price. that’s just the way it is yall.  i keep my lean protein serving to 3g of fat or less. if you choose the wrong package, you might have come out better nutrition-wise picking the beef! read your labels.

later, my 1st pedi of 2014 happened. MAN i needed this. hadn’t had one since we went to Miami in September and after a couple of 5ks, let’s just say the nail tech made it snow with all my dead skin. :shocked: . and bless his heart, no more scratching up Sonny’s feet in the bed for a while.

speaking of snow, i hope we get some since it will be in the dang 20′s in Houston on Monday, whoa. bundle up!

words no one wants to hear at 3am: ‘mama, i pooped in my underwear.’ :shock:

after getting Chiso all cleaned up and finally back to sleep, i woke up feeling like we had partied the night away HARD!!

nevertheless, i got up, had a small breakfast of whole wheat toast, 1 tbsp of natural, honey roasted peanut butter with a side of prenatal vitamin, water, and hit the road, ipod nano in tow.

this is Sonny’s last day to sleep in for a while so i let my camera man get his rest.  i would have taken Chiso in the jogging stroller but he had a rough night too so i let them be until the next race (deets below).

it was a modest turnout again this year with NO rain this time and warmer weather.

the weather was chilly, but as always, as your body starts to heat up you don’t feel the cold anymore.  halfway through the race i peeled off a layer of clothes cause i was burning UP.

17 weeks preggo today yall! things are different with this pregnancy though.  i was extremely cautious when i was carrying Chiso in 2011 and i wouldn’t run more than a couple steps before stopping altogether early on.  i became a power walking pro and didn’t run for months actually.  in fact the last time i ran, Chiso was born 24 hours later.  this much needed 2nd trimester energy carried me all the way through this morning’s race- no discomfort at all!  i didn’t come close to last year’s PR of 24 mins, but i ran most of the way and finished around 33. then i packed up my goodies and headed back home. to bed.

speaking of last year, whoa! this pic was taken 1 year ago today and i still remember Sonny griping behind the camera about me going out into the cold and rain just to run 3 miles when i hadn’t fully recovered from dental surgery.  i didn’t tell my parents i had participated until after it was over. my dad let me have it anyway. i remember being super lean but comparing this pic to my current body is such an eye opener.  i was pretty much engulfed in fitness at that point. i remember setting my dental appointment to have all four of my wisdom teeth removed and just couldn’t fathom not working out for a few days and having to live life through a straw. no kidding. i was going hard 6-7 days a week in the gym and still operating in full bikini competition mode nutrition-wise (my first show was 3 months prior) and sitting down to rest and recover was just the biggest thorn in my side. in the back of my mind though, i also knew i wanted 2013 to be the year we expand our family for the second time.  as much as i loved my body on the outside,  things were the exact opposite on the inside. i’ll follow this up with its own blog post, don’t worry!

back to the race- it was awesome to see so many team members and gym members running along the route!  so many families, kiddos, strollers, and doggies running at that. i love teaching for Lifetime Fitness because they are extremely community and family centered.

Lululemon 2-in-run tank review + full body @home workout

my post-workout breakfast looks sad but it was filling and really good!  i made an egg white whole wheat english muffin sammich (there’s some mozzarella almond cheese hiding in there somewhere) with bananas and blackberries.  strawberry prices have been down right outrageous since they’re out of season, but blackberries are super cheap in the stores these days.

speaking of tanks, i’m testing another top for Lululemon! it’s their 2-in-run tank. i wore it for the first time at home (you’ll see in the vids below) and well, i love everything about it. especially:

i finally started the online defensive driving course (gag) task i’ve been putting off since i got the ticket back in july.  i thought that horrible procrastination habit was supposed to fade out as you got older, i mean really.  during one of my countless mini breaks i went and made some of the best homemade muffins i’ve had….ever. look!

the stuff:

  • 6 tbsp coconut oil, melted
  • 1/2 cup coconut crystals
  • 1 cup 2% greek yogurt
  • 3 small RIPE bananas
  • 1 large egg, beaten
  • 2 tsp vanilla
  • 2 cups whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chunks
  • 1/2 cup pecan pieces

do this:

  1. preheat oven to 350 degrees
  2. mix the wet ingredients with the wet, and the dry with the dry.
  3. combine all together in a large mixing bowl
  4. fold in chocolate chunks and pecans last
  5. spray muffin pan with no-stick cooking spray
  6. bake for 20 minutes or until golden brown

 well good morning!

i workout for all those reasons and more, but i should have included eating lots of food!!! that’s #1.

since i workout super early in the AM most days, i have been enjoying Houston’s Fall weather to the fullest.  Fall not only means chili and cornbread, it means warm, hearty, filling, yummy, COMFORT food in general to me!  a big bowl of super creamy mac n cheese is hands down my fave (to eat in a bowl anyway, pizza is the other) and FITzee Food’s Chicken Cordon Bleu Bake was all that (hearty, filling, yummy, creamy, cheesy) and more.

fresh chicken breast, black forest ham, swiss cheese and mushrooms baked together in a creamy wine sauce with a touch of sage and topped with Panko bread crumbs. HEAVEN on a bowl plate.

it was shipped to me as a perfect, rectangular, loaf, but i had a little accident transporting it to my plate. again.  hey it all went to the same place. again.

deliciously low carb, cheesy, and packed with protein!  a great choice.

couple things though:

  • when dining out, go for the broth based (tomato, chicken, beef, vegetable, clear, see-through) soups vs. the creamy ones because they are usually made with milk or heavy cream.
  • the leanest cuts of beef include:
    • eye of round roast or steak
    • sirloin tip side steak
    • top round roast and steak
    • bottom round roast and steak
    • top sirloin steak
  • a cup of any fruit usually is anywhere from 50-100 cals, but the sugar count is what you should keep your eye on.
  • air/stove popped over microwaved popcorn any day

FITzee Food’s Banana Flax Pancakes with Agave were quite the highlight of my morning!  sure they are sweetened with agave, but my pancakes need syrup.  it’s a packaged deal.

dumped drizzled some zero calorie Walden Farms pancake syrup as well as some pumpkin flax granola  (from the bulk bins of Sprouts Farmer’s Market) on top, making these, well, over-the-top!  full muscles = happy muscles.

it’s no longer weird feeling this way once you know the culprit!  this was prolly one of the most puzzling and straight annoying bumps along my ever-evolving fitness journey. identifying trigger foods (foods that trigger reactions in a person e.g. gluten sensitivity = celiac disease) can be helpful in relieving certain ailments, eliminating excess weight, or preventing IBS (tummy issues e.g., uncomfortable, painful, gas, bloating, fluffiness, etc).  how do you pinpoint them? conduct a little experiment on yourself.  remember, health and fitness is all about trial and error.  find out what your body benefits best from and stick with it☝. first,

  • keep a food dairy
  •  track what you eat
  • track when you eat 
  • take note of how you feel afterwards

after a few weeks (yep, this takes time but the process is always worth it) you should be able to see a pattern. once you have identified a possible trigger food, eliminate it from your diet for two weeks straight.  was there a change? mentally? physically? add that particular food back in and pay close attention to your reaction, if any. once these foods are identified, they can either be avoided easily, completely, or at the very least, finally give you some dang answers!!!  my trigger foods are dairy,  broccoli, and Kashi.  i haven’t cut them out completely, but i know when not to eat them, that’s for darn sure.  no two piece swimsuits or form-fitting clothing for me for a few days!  hope this helps someone else as much as it has helped me.  learning your body is a process, fit friends. and fyi, i had some chicken pizza from Ruggles Green with a bunch of crème fraiche, mozzarella and fontina cheeses on it a few hours before the right pic. it was so worth it lol.
