H-town’s very first 24 hour donut cafe

 a former colleague of mine and fellow UH Cougar, Ose Ohen, opened up Glazed last week!  we headed to stuff our faces immediately after church as planned.

transparency is a wonderful thing.  i appreciate and enjoy being able to watch my food being prepared and just the entire process in general.  maybe that’s why i’m such a big fan of Unwrapped on Food Network.  seeing how things i’ve been eating for YEARS are made is just really interesting and cool.  anyway, kitchen windows build trust.  it can also change the way an employee works if you know what i mean, lol.

 they had 3 flavors ready to go for the soft opening: lemon poppy, glazed, and maple bacon (with a turkey bacon version as well).

i know. and it tasted as incredible as it looked.  perfect balance of sweet/salty/doughy/chewy/fluffy. WHAT a donut. i am crazy excited about this gigantic list of flavors they’ll be selling in the near future and i’m not even a donut person!

 well you knew this was happening later.  sweaty stair master intervals and some core work completed my sunday.  5 weeks postpartum and i still work my kegal muscles (when i think about it randomly at home) to strengthen my pelvic floor again.  it’s a process, ladies!  be patient, work them daily if you can, and make sure you do them on an empty bladder.

 as i got meal prep going for the next few days, i channeled my inner Fish City Grill with these tacos for dinner.  if you’ve been there and ordered them they should look pretty familiar to ya ;) .  i used La Tortilla Factory 70 calorie tortillas as usual (which i saw at HEB recently!!!!) and filled them with baked swai fish, bagged cabbage and Annie’s all natural Lite Goddess dressing.  this is super similar to the Crunchy Ginger Rotisserie Chicken Wrap from a few days ago.  then i grilled them up on our griddle for a few minutes until they browned.   heating the tortilla first makes a huge difference vs a cold, flimsy tortilla.  try it!  someone from Instagram suggested i taste that flavor of Annie’s next and i’m glad i did.

Q: kolaches or donuts?

i’m a cheese lover so that’s an easy one.

crunchy ginger rotisseri chicken wrap + stay fuller longer

having the same thing i had for breakfast yesterday while there are a few La Tortilla Factory Tortillas left in this house. they go so fast cause we all like them! Chiso eats them as pb & j rollups, Sonny makes tacos, and quesadillas are my fave. the exact kind i get are only at the Sprouts Farmers Market closest to where i live.

 since i always make them for lunch or dinner,  i tried a breakfast quesadilla this time with egg whites, red bell pepper, green onion, low fat turkey sausage, and 2% pepper jack cheese.  i cooked it on the griddle for 4-5 min on each side and threw in some tomatoes, bluebs, and homemade guacamole. excellent!

 my day gets going after some good fuel, and this thing makes it so much easier to get stuff done around the house when baby boy is fussy or i just don’t want to put him down.  i received this Baby Bjorn as a gift while preggo with Chiso and i love it for home use and outings.  Dego is a thumb sucker and puts his whole hand over his face while he does it! so funny.

so with breastfeeding and getting back to my random, sweaty workouts as of this week, i am double HOONGRY. this is ridiculous.  i just want to eat the entire fridge and pantry when i get home.  coincidently i got an email from Spark People titled ‘Tips to Stay Full Longer’ and i could not click the link fast enough.  these are some awesome tips to follow and i’ve already been doing some of them such as:

  • eat protein and fiber rich foods every 3-4 hours with healthy snacks in between (like fresh fruit and mixed nuts)
  • fill up on the non-starchy veggies and fibrous foods (leafy greens, cucumbers, red bell peppers, spinach, zucchini, sugar snap peas) with every meal
  • reach for natural fruit first to lessen/knock out those sugar cravings. remember, white sugar only makes you crave it MORE! it’s a dangerous cycle.
  • drink a full glass or bottle of water before every meal
  • take your time and eat!!! when i’m super hungry i rush and stuff myself (which is why eating every couple of hours is still the best option for me). it takes about 20 minutes for your tummy to tell your brain you are even full, but by that time it’s too late and you’re on your way to a food coma. take your time to chew and swallow every bite.

today was my first day back on the stair master since i was like 6 or 7 months preggo!  my heart rate always shot up and being up so high with my belly made Sonny uncomfy so i just stopped using it. i didn’t miss it. lol. hurts so good though!  i did some intervals for about 30 minutes for my cardio and headed to a core class.  how about i modified everythang. my postpartum core is way stronger now than in my first pregnancy, but i still have a crap ton of work to do. but first….. :D

afterwards, i picked up some of nature’s candy from Sprouts.  i love their 3 for 5 bucks sale! i got 2 strawberries and one pint of bluebs. and those sweet, crunchy nectaries of course.

i also picked up another one of Annie’s all natural dressings– Gingerly.  winner!

i wanted to use it right away, so for dinner, i threw some shredded rotisserie chicken, raw red bell pepper, bagged cabbage mix, cilantro, green onion, and crushed almonds into a bowl, poured in the dressing, and coated the chicken mixture in it.

i grabbed a La Tortilla Factory tortilla, rolled the chicken mixture up really tight and made a Crunchy Ginger Rotisserie Chicken Wrap that had so much flavor!  please try this, guys!

 for dessert i skipped the fruit and had some Arctic Zero with mini chocolate chips, fat-free Redi Whip, and sprinkles lol. have a fun friday night and a great weekend!

 i add a tbsp of Hershey’s sugar-free chocolate syrup to mine, stir until creamy, and add a few toppings first. hits the sweet spot.

wienervention – the cleanest hot dog i’ve ever eaten

another early gym date accomplished this morning and officially 1 month postpartum! i expect to get a lot done today.

i had my usual preworkout snack, some hot, magical coffee, and headed out for an hour of treadmill intervals. i alternated btw:

5 incline @ 4 mph – 5 minutes

15 incline @ 3 mph – 5 minutes 

walking IS boring but there are ways you can rev it up.  i always swing my arms vigorously, walk heel-to-toe with a wide stride, and i never hold the side rails either. that’s cheatiiiiing ;)

while we were headed home from the hospital last month with our brand new baby boy, something beat us there- my Wienervention Kit from Applegate!!!

however, the Houston heat was too much and i just wanted to lay down somewhere and stuff my face in the AC.  i’d like to give a gigantic high-five and thank you to one of my favorite natural and organic brands, Applegate, for the goods. i knew the kit was on the way, but it slipped my mind after giving birth and all.  my mom and aunt were at our house tidying up and waiting to help out with our new family member, so unbeknownst to Sonny & i, they went ahead and cracked the kit open and prepared a welcome home lunch for us! perfect timing, right?

i actually used to avoid hot dog wieners for this very reason…  i’ve always thought of them as the wack parts of meat that didn’t make the cut all blended up together with fat and other UFOs.  i would only have them every blue moon, like july 4th or memorial day at somebody’s BBQ. at home? not so much.  also, reading ‘mechanically separated turkey, chicken, or beef’ in the ingredients list is not very appetizing. thank God we have many healthier options to choose from these days; these Applegate wieners are in a league of their own! a wienerventioW was overdue.

weekend recappy cap – yoga & burgers

i got my vinyasa yoga on saturday after my weight lifting sesh, haaaay! actually sticking to my yoga resolution and i plan to keep it up. i got dizzy and lost my balance several times but the tin woman will not give up.  the class was actually called Hot Vinyasa Yoga but because the room is used for all different types of classes all day long (and one had just ended before we started), the instructor could only turn the heat up as soon as the class began. so it was more like warm vinyasa yoga :lol: . besides, i set up my mat up close to the door to avoid overheating which is a preggo no-no.

i restocked some of my dried herbs at Sprouts Farmer’s Market on my last grocery trip a couple of days ago and i wanted to share my staples.  i got all that for less than 5 bucks and it will last me a good while. buying these specific herbs in the bottles are just too expensive for the deal you can get in bulk yall. do the math!

house guests often = burger time in my world.  i know i have 49 trillion patty recipes already but what can i say.. sammiches are my thing!  for these healthy turkey burgs i used the Alvarado Street Bakery sprouted grain buns (from Sprouts), mashed avocado, alfalfa sprouts, vine ripe tomatoes, Bordon 2% colby jack cheese, spicy brown mustard.

for the patty:

  • 1 lb extra lean ground turkey breast

  • 1 tbsp Weber all-natural Gourmet Burger seasoning

  • 1 whole egg (or two egg whites)

  • 1 tsp sriracha

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tsp parsley

  • 1 tsp cracked black pepper

SO MUCH FLAVOR IN THERE!!

*combine it all up in your mixing bowl, let it marinate for about 20 minutes first. mold into patties then cook them up in your no-stick cooking spray coated skillet for 3-4 minutes on each side (depending on the size of the patty).*

my hubby is finally home again from Brooklyn after reppin’ H-town in the nationwide Red Bull Midnight Run basketball tournament! über proud of him and just happy to have him back.

part II: core exercises for preggo patties and newbies

CYMERA_20140110_162501         well i didn’t think produce coupons existed, but HEB made that dream a reality! 3 dollars off 8 or more in produce. nice.  i couldn’t wait until this weekend to go grocery shopping because our pantry and fridge was crazy bare, so i went last night and got it done.  i checked online for some coupons before leaving and i’m glad i did.

we also stopped by Walmart where i spotted these all natural Weber seasonings.  gluten-free, low sodium, and 100% sea salt used.  i caught wind of them via Instagram and chose the Gourmet Burger and Boston Bay seasonings first.  everyone is raving about the Kickin’ Chicken so i’ll be trying that one next. these big 5.75 oz bottles cost just as much as the Mc Cormick and Mrs. Dash 2.5 oz bottles! what a bargain.

 this evening’s pre-workout meal before taking a Barbell Strength class at the gym: a big bowl of sautéed kale, avocado, green onion, and some Sweet & Spicy Tangerine Shrimp from last night’s taco dinner.  i’m still perfecting the shrimp recipe and will post it here soon,  you know it.

for floor oblique twists: sit up straight, chest up, and lean back 45 degrees before executing. complete the opposite the side the same way.

12 R & 12 L;  3 X 24

standing ab exercises:

for standing oblique crunches: pull your elbow down to your knee and squeeze your glute when your knee is at its highest point.

slow tempo for 8, fast tempo for 16  then repeat 2 more times straight.  switch sides and do the same thing.

the side bends keep my lower back loose, limber, and flexible.  if you’re preggo, don’t worry about using super heavy dumbbells here at all.  10’s work great. stand up straight, chest lifted, and don’t slouch or round your back!

fit n’ crispy chicken parm

Italian food. its been on my mind lately.

i really wanted something heavy like a big pan of cheesy lasagna but this nipped that craving right in the bud.  it’s lean, it’s fit, it’s crispy, it’s savory, and it’s good.

making your own bread crumbs is super simple and recommended.  i used some toasted Sara Lee 45 Calories & Delightful bread for mine.

perfect. no frying needed! i had planned to sear the chicken on both sides in my cast iron skillet (before putting them into the oven to finish) cause i wanted that crispy, crunchy exterior, but omitting that step still produced the same results. SCORE.

i used Classico all natural, fire roasted tomato & garlic sauce,

and topped the breasts with a heaping tbsp of sauce, a few spinach leaves, and a big slice of mozzarella almond cheese.

i know chicken parm is usually paired with some variety of pasta, but i had a big, unbaked spaghetti squash sitting on my counter i needed to use.

tender, Italian juiciness.  recipe time :)

fit n’ crispy chicken parm

the stuff: breadcrumbs

  • 4 slices Sara Lee 45 Calories & Delightful wheat bread, toasted (can use gluten-free bread)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup light parmesan cheese (optional for a dairy-free dish)

the stuff: chicken

  • 4 large boneless & skinless chicken breasts (pounded and flattened)
  • 1/2 jar of all natural Classico Fire Roasted Tomato & Garlic sauce
  • 1-2 tbsp Earth Balance Organic Whipped Buttery Spread
  • 3 oz Lisanatti Mozzarella Almond Cheese
  • 1 cup fresh spinach leaves
  • 1/2 tsp cracked black pepper
  • 1 tbsp Bragg Liquid Aminos

do this: breadcrumbs

  1. toast slices of bread until crispy, not burnt but no longer soft and chewy.
  2. break them up into pieces by hand and toss them into your food processor.
  3. add the onion powder, garlic powder, parmesan cheese, and Italian seasonings.
  4. blend until you achieve a breadcrumb-like consistency and set to the side.

do this: chicken – preheat oven to 400 degrees now!

  1. pound and flatten thawed chicken breasts (under a towel, in plastic wrap, in a plastic bag, etc) with your mallet until about 1/2 in thick.
  2. place them into a large bowl and pour the liquid aminos and melted whipped butter spread over the top, coating evenly.
  3. spread out the breadcrumb mixture onto a large, flat plate.
  4. spray your baking pan with no stick cooking spray and set it on your work station.
  5. take each chicken breast and dip/press them into the breadcrumb mixture coating both sides evenly.
  6. place them neatly into your pan, flat.  if they are touching it’s ok but don’t overcrowd your pan.
  7. sprinkle cracked black pepper onto the breasts.
  8. place pan(s) into the oven and cook for 20 minutes on one side; flip, and cook for an additional 10 minutes.
  9. remove chicken from oven (make sure they are done in the center) and remove the breasts from the pan.
  10. pour tomato sauce into your pan, covering the bottom completely.
  11. place chicken breasts back into pan on top of sauce.
  12. top them each with 1-2 tbsp more of sauce, a few leaves of spinach, as well your cheese (you can shred it too, your call.)
  13. place back in the oven for an additional 10 minutes or until your cheese is all bubbly and melty!

this filling, savory meal is the Baked Penne with Sausage and Kale from FITzee Foods.  the kale part immediately sparked my taste buds!  whole wheat penne pasta, chicken italian sausage, and fresh kale all baked together with a dairy-free cream sauce, mushrooms, onions, sun-dried tomatoes, and fresh herbs. i’m lovin’ it.

my sis-in-law told me about it months ago and after the last adult joke i could stand from Sponge Bob i decided to look it up in our cable directory.

3 words. WHAT A BLESSING.  Chiso has fallen head over heels in love with, well, every single show.  his absolute fave is Caillou.   Caillou games have mysteriously appeared on the iPad and neither Sonny nor myself put them there.  and then there’s Tree Fu Tom:

so even if we don’t head to the park, he can still move and shake indoors! that makes me one happy fit mom. but not happy enough to clean out that file cabinet.

Chiso sings,  interacts,  learns, & plays SO much more so than when the TV was on Nickelodeon or  Disney.  the Sprout channel caters to his crowd (24 hour pre-school channel) and i have really seen a different side of him these past few weeks.

they have a fantastic, interactive website too! games, videos, and next on our agenda is printing out some of the blank coloring sheets provided of some of his favorite characters (soon as we get some more ink.) i am fond of several of the shows myself; especially The Goodnight Show :lol:.   i really like that they keep some of the classic shows like Sesame Street in rotation too. ooooh the memories. i am just too happy about this and wanted to share.
